Whoot!!!! Santa brought me a Thermapen!

Merry Christmas to all this morning!! LOL, this is sort of a follow up to the previous thread about "What kitchen toys are you hoping Santa will bring this year?"

(not the exact title but it was something like that)

After the massive remodel we just did, no way did I expect Santa to splurge on a Thermapen, but sure enough, he did and I kissed him soundly for it. Got a boot and a nice little case for it, too. Now, to go take the temperature of the Pernil roasting in the oven...and see if the fridge is at the proper temp, and what the temp of the hot water coming out of the tap is...any other ideas? heee hee!!

You'll love it! I use mine every day and it even works to check the air temperature in the room when we disagree about whether or not it is warm enough.
r I also have a probe thermometer and an infrared thermometer from Thermoworks - they all work well.

I love mine, I use it all the time and even to see if my microwaved plate of leftovers is warm inside! Very handy! It does take longer than 3 seconds to register though. But it is the only thermometer(food) that I've ever used that actually works.

I really like that doo-hicky blade thingy that I can scrape dough up off of a surface, or use to divide a lump of dough in two. I've started using it more frequently as I bake. I just can't remember what it's called. For a higher price bracket, a nice mortar and pestle would be a good gift. One that's large enough to do a lot with. I have a small one that I grind spices with occasionally, and I use it when I make my own salad dressing, or pesto, but mine is too small to make a good batch of pesto. I know that food processors make that a fairly easy job, but they're a hassle to clean, and I love using the pestle. Today I was crushing cumin seed for some lentil soup. It smelled so good, with the scent wafting up from the mortar to my nose. Of course, a modern young woman may look at you cross-eyed if you gave her something like that, but I'd love it. Weren't there some people here talking about some kind of dough whisk they really loved? Sally

Mtn: Oh, gosh, that is embarrassing. It looks like I read your post, got the idea, and then forgot WHERE I got the idea. Ooh, boy, creeping senescence... I am not concerned that slate used as a floor tile would not be food safe. I suppose your concern is not the slate, but a chemical sealer? My understanding is that slate is usually not pre-sealed. Moreover, I really doubt that they pre-seal the stuff at this price point; it certainly did not seem sealed, as water did not bead on it and it soaked the oil right up. And sealer, which is meant to bind chemically tightly to stone, seems unlikely to be transferred to cheese anyway. I did run it through the dishwasher before gluing on the backing foam. Yes, the square shape of the cheeseboard looks a little off. I had been sort of intending to cut mine to something like 7.5" x 12" (golden mean), but I didn't feel like filling the water tray of the wet saw. So, instead, I googled for images of slate cheeseboards, and saw enough square ones to decide to just go with it. The other "flaw" is that the edges are square. Most of the cheeseboards you see commercially have more rustic edges. I figured I would just whack the edges of my tile with a margin trowel or tack hammer, and spall the edges nicely. Well, it wasn't happening; I was just making small chips in the edge, rather than causing any of the lamellae to delaminate. I then decided that square edges were acceptable in a cheeseboard :-)

Bacon. My brother brought home the bacon... er, he sent off some frozen foodie bacon my way, prepped with different smoking techniques. Earlier for my birthday (the beginning of the previous month) he'd sent me smoked game birds. So, I took two of the quail, wrapped them in bacon, baked in oven as per the quail directions, then removed the foil and broiled for 3-4 minutes to crispy it all up. Yummy. Kitchen tools this year? None but that's okay. I bought myself a sous vide last spring, and once I get my pantry built, I'm probably going for an Instant Pot. Or, maybe that Ninja Foodie, which also incorporates an air fryer. But I'm still peeved at my (expensive) Ninja coffee maker that died after six months of standard usage. I love the sous vide, although I have yet to test certain things in it. It actually makes chicken breast taste good since you don't have to overcook major portions of it to make sure the deep interior is not undercooked. I haven't used it for making steaks for company as everyone seems to like steaks cooked to drastically different done-ness (and I only have one sous vide, not three). I simply opt out of sharing steaks with others! PS: I'd love 129 F!

You'll be able to roast poultry perfectly. I use mine all the time for roasting birds and beef roasts. Last week I had a chunk of beef filet (what fancier cooks than I would make into a chateaubriand), and used it to make 'boeuf a la ficelle'(sounds fancy, but it's just beef filet poached in stock). Unfortunately, I didn't take it out of the freezer in time for it to thoroughly thaw; nevertheless, I was able to poach it to nice medium rare in the center by checking the center every so often. Have fun with it!

LOL Chase!!

Upon googling, I see that a Thermapen has a probe which is inserted. If that's the case, how do you measure air temp and other intangibles?

I was testing my BLSL chicken breasts tonite and was wishing I had my Step-fathers little gadget that tells the temp of anything by aiming it at the target. He has tested "me", the a/c in his car, the temp of an exterior wall, etc etc.

To measure air temperature, I sit my Thermapen out on a table/chest in the room where I'm curious to see what the temp is. It seems to be accurate.

I wanted an infrared thermometer for Christmas to go with my Thermapen. Guess I was on Santa's "naughty" list...and not in a good way.

Jas, I do exactly what bbstx does, just open out the Thermapen and put it on a horizontal surface, or just hold it with the probe in the air until the temperature stabilizes. My experience is that it seems accurate too. If I hold it close to our thermostat the readings will be same on both.

In regard to the IR thermometer, I use mine fairly often, to see how much my baking stone has heated up in the oven or how how hot a cast iron pan is for searing. But it reads the surface temperature so it is not as useful as a probe thermometer to tell you if the interior of your food is cooked to the degree you want it to be.
