Favorite Christmas Breakfast Recipes?

I'm wanting to make a special Christmas Breakfast for our family instead of the usual instant oatmeal, cereal or toast. It will just be for DH, our 2 yr. old and myself. Any suggestions?

Given it just the two and 1/2 of you I wouldn't bother with any of the breakfast type casseroles that are so popular...too much food. You also want a kid friendly choice.

Depends what you like and what you feel up to.

If it was me I would do French Toast served with real maple syrup and strawberries, with a really good breakfast sausage on the side.

Another wonderful choice would be Eggs Benedict, you could serve the babe just the poached egg on toast.

Our Christmas breakfast never changes; scrambled eggs with cheese, pea meal bacon, sausages, home fries, sliced tomatoes and toasted English Muffins.

A couple of more to add to the mix here. Thanks for the shrimp and grits recipe...we also love the sausage egg casserole. We mix up with various stuff...ham, bacon, or a combo of all of it. Always a hit with my group. SIMPLER TIMES FRENCH TOAST Chef & Innkeeper Cindy Belford Simpler Times Inn 8 c. sweet French bread in 1" cubes 5 eggs 1 c. sugar 1 tsp. nutmeg 3 c. milk or Half & Half 3 c. fresh or frozen blueberries 1 c. chopped pecans 1/4 c. butter or margarine 1/2 c. brown sugar Put bread in large bowl. Whip eggs, sugar and nutmeg until light in color and thick. Add milk, stir and pour over bread. Cover and place in fridge overnight. In the morning, mix 1 c. blueberries into bread and put in greased pan; sprinkle balance of blueberries on top, then pecans. In pan, melt butter and brown sugar until bubbly. Pour mixture over blueberries and pecans. Bake at 325 degrees for one hour or until puffed. Serve hot with syrup. Simpler Times Inn Grand Lake O'the Cherokees I love this crust and use it for other recipes too. This is a favourite recipe from my daughter in Canada who has made herself popular in her neighbourhood with this quiche. SALMON QUICHE WITH WALNUT CRUMB CRUST (Sharoncb) *********************************************** Preheat oven to 375 degrees F Pastry: Easy - doesn't require rolling, just press down with fingers and back of a spoon into a 24 cm (9.5 inch) pyrex flan dish or pie plate. 1 - 1/2 cups flour 1/2 teaspoon salt 1 cup cheddar cheese (grated) 1/2 cup butter 1/2 cup walnuts finely chopped Mix these ingredients in a bowl, cutting in butter with two knives until crumbly then press into a pie dish, including up the sides. Bake in pre-heated oven for five minutes. Then remove from oven. Meanwhile mix the following ingredients in a bowl: Filling: 3 eggs beat till frothy 3/4 cup sour cream 1 cup mozzarella cheese (grated) 1/2 onion, chopped 1 can salmon (7 3/4 ounces) - I prefer fresh piece salmon that has been baked - 'smoked salmon' is really good too. 1/4 cup mayonnaise Pour these ingredients into the pie crust - bake in oven approximately 45 minutes or until knife inserted in centre comes out clean. The top is usually a nice golden brown colour. If you don't have salmon on hand, tinned tuna works well too in this recipe. SharonCb David

I use matzah meal, I've never made them with flour. I use the food processor these days. I seem to lose too much of my knuckle when I grate them by hand. I make a ton and then freeze them and bake them, but their the best right from the frying pan! Potato Latkes 6 medium Idaho potatoes 2 medium yellow onions 2 large eggs 1/4 cup matzoh meal, or 3 tablespoons all-purpose, unbleached flour 1 teaspoon salt 1/4 teaspoon pepper Chicken fat, or vegetable oil, for frying Applesauce Sour cream Peel potatoes and place in cold water. Using a box grater, grate potatoes and onions into large bowl. Transfer potato-and-onion mixture to a colander set over a bowl, and squeeze out excess moisture. Return mixture to bowl. In separate bowl, combine eggs, matzo meal or flour, and salt and pepper, to taste. Combine all ingredients, adding more matzo meal if mixture is too wet. In large skillet, heat 1/2-inch oil (or chicken fat) over medium-high heat. Drop tablespoon or serving spoon-size portions of mixture into hot oil, and press down with spoon to flatten. Fry until brown and crispy on edges; turn until golden brown on each side, cooking 3 minutes per side. Remove to paper towels to drain. Serve with applesauce or sour cream.

OMG, they all sound delicious! MizzGG, don't you love The Kitchn site? I find so many great recipes there. I've been searching for something along the lines of a breakfast casserole myself, as it would come in handy during the busy upcoming holidays. But, since we've pretty much eliminated potatoes, breads, white and brown rice, and too much cheese (in one dish, I mean), I'm having a problem finding one that is healthful (yes, that word again- lol) and delicious, too. I've been experimenting with a baked casserole using cooked farro, almond milk, eggs and some fresh grated Parmesan cheese in it. I've added chopped kale or spinach to it and green onions. So far, we like it, but I'm still working on the final product before adding it to my website. You all are inspiring me here. I'm thinking that I'll try adding a layer of sautéed mushrooms and turkey bacon next. Maybe substituting Greek yogurt cream cheese for the Parmesan cheese. My best friend is a retired home-ec teacher, and I sometimes run my recipe ideas past her for advise on the quantities, etc. She just read over every recipe on our recipe website for me, just in case. No corrections, thank goodness!

I was married for 15 years before my daughter was born. Once I became a mother, I tried to be a "super mom" and do everything I thought a mom should do. That included baking cookies. Odd because I didn't raise her eating a lot of sweets, and she wasn't (and still isn't) big on eating sugar. But, I liked homemade cookies and like everything else I do (all or nothing), I took to it in a BIG way. I had never liked store bought cookies particularly, and when baking, if the recipe called for margarine, instead of butter, then I wouldn't even try the recipe because I felt like their standards didn't measure up to mine. Cookie snob. ;) I baked cookies and if they were really good, I added them to my permanent recipe files. I used to make cookie platters for my friends and neighbors at Christmas. Since I live in a super humid climate, and didn't have central heat, which might have helped take the humidity out of the house....always lived in very old houses...candy recipes could be difficult. But divinity seemed like it belonged at Christmas, but when I made it, it was more apt to be like marshmallow whip. This recipe is a meringue type cookie, but a little bit like divinity. (I said "a little bit"). I got it in one of those Better Homes and Gardens Christmas Cookie magazines that come out this time of year. Somehow or another, I lost the recipe, and I couldn't remember which magazine it was in, and over the years, some of the magazines had been tossed when I cleaned house. I searched for it on line for a long time, and decided I'd finally have to go on line and try to find the magazine, and buy it, but not knowing what year, I still couldn't be sure. One day I searched for it, and it came up! I am sure this is much to do about very little to most people, but I was really happy to find it again. Black Walnut Drops (I find black walnuts at Kroger.) 2 egg whites 2/3 c. sugar 1 c. finely chopped black walnuts 2 tbsp. flour In a small mixer bowl beat egg whites until soft peaks form. Gradually add sugar, beating until stiff. Toss the black walnuts with flour; fold into egg whites. Drop the meringue by rounded teaspoons onto prepared cookie sheet. Bake 10 to 12 minutes at 325 degrees until edges start to brown.

Christmas Breakfast? I thought it was supposed to be all the chocolate contained in the Christmas stockings!

Actually, while growing up we always had fresh cinnamon rolls, omelettes and bacon. It was a big deal because we got something sweet, which was unusual, we got omelettes instead of plain eggs, too time consuming for most mornings when farm chores were waiting, but the bacon was standard breakfast fare. We usually had hot chocolate too, it was a breakfast I just loved.

When the girls were still home we still always had the cinnamon rolls, now it's Ashley and I and we usually have the dessert that's left over from the big family Christmas Eve dinner. (grin) With coffee for Ashley, tea for me.

I've never had any particular traditional breakfast for Christmas - it varies. It seems to me that 2 year olds still eat pretty much anything, they haven't gotten too picky yet :)
This is easy and festive and good, I'd serve it with bacon.

APPLE PUFFED PANCAKE

6 eggs
1-1/2 cups milk
1 cup flour
3 tablespoons granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/4 lb. butter
2 apples, peeled, cored and thinly sliced
3 tablespoons brown sugar

Preheat oven to 425 degrees.

In blender (or large bowl) mix eggs, milk, flour, granulated sugar, vanilla, salt and cinnamon until blended. (If using a mixer, batter will remain slightly lumpy.) Melt butter in a 12 inch quiche dish or a 13 x 9 glass dish in the oven. Add the apple slices to the dish and return to the oven until the butter sizzles. Do not let brown. Remove the dish from the oven and immediately pour the batter over the apples. Sprinkle with brown sugar. Bake in the middle of the oven 20 minutes or until puffed and brown. Serve immediately.

6-8 servings.

Homemade cinnamon rolls here and fresh fruit (sometimes).
After stockings, before gifts. The kids always hated having to stop and eat!
