Homemade Cinnamon Rolls.
A pretty traditional dinner of Ham, Jello salad, deviled eggs, potatoes sweet and/or white), veggies and relish tray.

Sometimes it's turkey and this year I may make Prime Rib on Christmas Day since we'll have the Ham on Christmas Eve.

Mostly it's the company..........

My experience doesn't match msazadi's. I know vegetarians who are foodies. One is in my kitchen at the moment making cornbread. Two nights ago he made ravioli with a citrus sauce. For Thanksgiving, the meat eaters amongst us went to my DIL's sisters house for turkey lunch. In the evening we hosted a vegetarian Thanksgiving meal. My DS invited an fellow grad student and her room mate (both Indian and vegetarian). We wanted to make something they would like without doing Indian food. This Tunisian Chickpea Soup from Olive Trees and Honey went over well. Spicy enough to be familiar to them without attempting to be Indian. 1/4 c olive oil 1 large onion, chopped 3 carrots, chopped 1 small (~10 oz) celery root, peeled and chopped or 2 stalks celery chopped 2-4 cloves garlic minced ~ 10 c water 1 lb (2 1/3 c) dried soaked chick peas 2 bay leaves 1 tbsp cumin seeds or 1 1/2 tsp ground cumin 1 to 2 tbsp harissa or 1 tsp cayenne 1 tsp salt or 2 tsp kosher salt ground black pepper 1/2 c chopped fresh cilantro, mint or parsley 2 to 3 tbsp fresh lemon juice or 1 c plain yogurt 3 to 4 c french bread cubes or pita bread (optional) (I didn't) 3 to 4 c French bread cubes or pita bread In large pot, heat oil over medium heat. Add onion, carrot, celery, garlic and saute until softened, ~ 10 min Add water, chick peas and bay leaves. Boil, cover and reduce heat and simmer until tender, ~ 1 1/2 hours Toast cumin seeds (if using) in a dry skillet until lightly browned - shake or stir - don't burn them. Grind. Add cumin, harissa or cayenne, salt and pepper to soup. Cover and simmer 15 min. Discard bay leaves. Coarsely mash the chick pease a bit with a wood spoon, potato masher or stick blender. Can be stored in fridge and reheated for serving. Add the cilantro and lemon juice and heat through before serving. If desired, add 1/2 cup bread pieces to each bowl and ladle soup over. Drizzle with olive oil. (We were having falafal and pita bread after plus I made cranberry walnut whole wheat bread so we didn't do bread in the soup bowls. I didn't drizzle the oil and it was fine.) Moroccan variation in case you have non-spicy types - omit cumin and harissa. After mashing the chick peas, add 2 lb stemmed chopped spinach or chard or frozen spinach thawed and squeezed dry and the lemon juice, cover and simmer 2 to 4 min. Home made pita and falafel were great but not low effort. About half the falafel recipes used soaked and ground chick peas. The other half used soaked, cooked and mashed chick peas. I did a half batch each way - the ones using soaked and ground but not pre-cooked chick peas came out much better - very good flavor and texture. Sephardic Leek and Cheese Casserole also from Olive Trees and Honey - a very good book if you want to expand your vegetarian repertoire - is good and pretty easy. It reheats well so you could make it ahead. Too late for Jessy I'm afraid. 1/4 c olive oil 3 lb leeks ( 1 1/2 lb if you do the zucchini varient), white and light green parts only cut into thin lengthwise slices and washed 1 large onion chopped (optional - I've always used it) 1 c water 2 cups (~1 lb) grated zucchini 2 tsp salt or 4 tsp kosher salt 1 cup (5 oz) crumbled feta or 1 c (8 oz) farmer or pot or 1 c grated kefalotyri or Parmesan cheese or a combination (I've always done the feta) 1 c shreded kashkaval, Goueda, Muenster or Cheddar (did this the first time and thought it didn't add much - other times I've done just the feta) 5 large eggs, lightly beaten 2 tbsp olive oil ground black pepper to taste or 1/2 tsp cayenne 1/4 c chopped fresh dill or 1/2 tsp grated nutmeg (optional) Preheat oven to 350 degrees F and oil a 9 " square or 8 by 11 inch baking dish or two 9-inch pie plates. In a large sauce pan (she must have really large sauce pans - I use a small soup pot), heat oil over medium heat. Saute leeks and onion until softened. Add water, zucchini if using, 1 1/2 tsp salt or 3 tsp kosher salt, cover and simmer until leeks are tender (about 15 min). Drain Combine cheeses, eggs, remaining salt, pepper and dill or nutmeg. Add leek mixture. Put in baking dish. Bake until set and golden brown, about 50 minutes. Variant - you can leave out the cheese msazadi and cook 2 lb peeled, diced russet potatoes with the leeks. Kind of mash it after the draining step. I usually still put in the feta or you can put in 1/2 c Parmesan cheese. Really fancy and a good side dish for the meat eaters would be a nice Biryani. I have made one with cashews and pistachios in the top layer of rice but it was more work. There are some simpler ones on line.

Mabel, for the carrots, I reduce 1/2 cup of spiced rum and 1/2 cup of water to about 1/4 cup and add it to taste to 1/2 cup of browned butter and drizzle over previously cooked carrots with a sprinkle of lime zest. They reheat great in the microwave. DURGIN-PARK BAKED HAM 1 (5 to 6 pound) smoked ham 3/4 cup fresh orange juice 1/2 cup dry sherry 1 cup honey Whole cloves 1 cup packed dark brown sugar 2 Tbs. dry mustard Trim the skin from the ham, leaving a thin, even layer of fat. With a skewer, poke the ham all over at 2-inch intervals. Place the ham in a large resealable plastic bag, and place in a large shallow pan. Combine the orange juice, sherry, and honey; pour over the ham and seal the bag securely. Marinate in the refrigerator for three days, turning the ham every 12 hours. Preheat the oven to 325 degrees. Remove the ham from the bag, reserving the marinade. In a shallow roasting pan, with the ham fat side up, score the fat in a diamond design and stud with cloves. Insert a meat thermometer, making sure it does not touch bone. Pour all but a tablespoon of the marinade over the ham. Bake for 1 1/2 hours or until the meat thermometer registers 130 degrees. In a small bowl, combine the brown sugar, mustard and the tablespoon of the reserved marinade and brush the exposed portion of the ham. Cover with a tent of aluminum foil and bake for an additional 15 minutes or until meat thermometer registers 140. Remove from the oven and allow the meat to stand for 10 minutes; then thinly slice and serve. 10 to 12 servings.

Our traditional Christmas Breakfast began when the kids were smaller. I tried for a few years to make something special for breakfast--something that could be done and finished by the time we needed to head out to the Grandparent's houses for family celebrations. They didn't care--they wanted to open toys, and then they wanted to play with toys, and they'd snacked on the candy in their stockings when they were mousing around before we woke up, so heck, they weren't even hungry. So one year I made some Chex Mix and put it out for breakfast. It was a hit, and now that they're older teenagers, it's still our traditional Christmas breakfast. The recipe is on any box of Chex. I like to add Cheeze-Its. :-) Cj

I was married for 15 years before my daughter was born. Once I became a mother, I tried to be a "super mom" and do everything I thought a mom should do. That included baking cookies. Odd because I didn't raise her eating a lot of sweets, and she wasn't (and still isn't) big on eating sugar. But, I liked homemade cookies and like everything else I do (all or nothing), I took to it in a BIG way. I had never liked store bought cookies particularly, and when baking, if the recipe called for margarine, instead of butter, then I wouldn't even try the recipe because I felt like their standards didn't measure up to mine. Cookie snob. ;) I baked cookies and if they were really good, I added them to my permanent recipe files. I used to make cookie platters for my friends and neighbors at Christmas. Since I live in a super humid climate, and didn't have central heat, which might have helped take the humidity out of the house....always lived in very old houses...candy recipes could be difficult. But divinity seemed like it belonged at Christmas, but when I made it, it was more apt to be like marshmallow whip. This recipe is a meringue type cookie, but a little bit like divinity. (I said "a little bit"). I got it in one of those Better Homes and Gardens Christmas Cookie magazines that come out this time of year. Somehow or another, I lost the recipe, and I couldn't remember which magazine it was in, and over the years, some of the magazines had been tossed when I cleaned house. I searched for it on line for a long time, and decided I'd finally have to go on line and try to find the magazine, and buy it, but not knowing what year, I still couldn't be sure. One day I searched for it, and it came up! I am sure this is much to do about very little to most people, but I was really happy to find it again. Black Walnut Drops (I find black walnuts at Kroger.) 2 egg whites 2/3 c. sugar 1 c. finely chopped black walnuts 2 tbsp. flour In a small mixer bowl beat egg whites until soft peaks form. Gradually add sugar, beating until stiff. Toss the black walnuts with flour; fold into egg whites. Drop the meringue by rounded teaspoons onto prepared cookie sheet. Bake 10 to 12 minutes at 325 degrees until edges start to brown.

Same Christmas dinner every year: Baked Glazed Ham, Brandied Candied Yam Casserole, Mashed Potatoes, Corn, Broccoli, Dad's Baked Beans (I just posted this recipe for Linda under Your Favorite Crockpot Recipes), and Waldorf Jello Salad and Hoska. I started making this for Christmas dinner 17 years ago. Before that this menu was the New Years Day dinner menu. Back then we did fried fish, Kasha casserole, assorted veggies, mashed potatoes, and Hoska for Christmas dinner at my Aunt's house.

Our Christmas breakfast is probably very unusual but I've had it for as long as I can remember. It's actually the holiday meal I look forward to the most!

It actually starts with Christmas Eve dinner, which is Norwegian meatballs (made by my grandmother, none of us have ever made them as well as she did) and lefse and side dishes. Christmas breakfast then is always warmed-up leftover meatballs on toast (with lots of gravy), leftover mashed potatoes for those that wish, lefse, and orange juice. Strange, huh?

And for those that are wondering, Norwegian meatballs are very similar to Swedish meatballs, but don't let anyone of Norwegian descent hear you say so!

Um, I have to clarify. My grandmother no longer makes our meatballs, as she passed away long ago. I meant to say that growing up it was my grandmother's cooking on Christmas Eve and that since then, none of the family has been able to make the meatballs as well. Of course, it may be that our taste buds are clouded by our memories.

Breakfast -- cranberry scones and coffee (light breakfast due to upcoming big dinner)

Dinner -- turkey w/pan dressing, rice, gravy, sweet potato casserole, Honey Baked Ham, green beans, salad, rolls, and lots and lots of assorted pies.

Christmas morning- overnight sausage breakfast casserole, hashbrowns- the shredded kind, bacon, english muffins with homemade jam- this year it will be my freezer jam thanks to peeps here, oj and coffee, lots of coffee.
Christmas dinner is still not decided it is one meal that is changeable year to year( unlike Thanksgiving, which is carved in stone)
Christmas Eves past at the request of DS when he was about 4 - was always a delly tray with all the fixins eaten picnic style in front of the fire. Maybe fondue this year as DD is 19 and DS is 24 and maybe time for a little change.

We usually have Creme Brulee French Toast for breakfast (among other things), I make it the night before so all I have to do is pop it in the oven. My husband will make eggs and bacon or sausage. And lots and lots of coffee:)
For Christmas dinner it's just us and the kids (we have all our reletives over on Christmas Eve). After church we veg out. I make prime rib, mashed potatoes, spinach and string beans. It's funny to see, we are all in sweats eating such a formal meal, but it's so nice and relaxing.

It's just food, food, food all day! For breakfast, we always have an egg and sausage casserole, a jazzed up hashbrown casserole, ham biscuits and garlic cheese grits (with jalapenos -- Yum!) Fruit will be something very simple like cantaloupe wedges or fresh pineapple. I may or may not get around to making muffins or French toast fingers since sweets aren't a high priority with my crew, particularly early in the day.

As some leave to go to 'the other' family's house, and others wander in for the first time, we sort of gradually segue into the brunch phase. I'll add their favorite Cajun crab spread with toasted garlic rounds and a dip or two to the buffet. Once the biscuits are gone, we'll bake some rolls for the ham. I make a super-spicy mustard sauce that my children adore and an herb-flavored mayonnaise so everybody can put together mini-sandwiches. There's always some sort of seafood -- usually poached shrimp with cocktail sauce since it's so easy to do ahead -- and a couple of salads (broccoli and pasta are the faves). Oh, and Bloody Marys to help the cook forget how bad her feet are hurting at this point...

By the time everybody who had to leave has returned and we've all worked up a little bit of an appetite again, it's usually 7:30 or so. Our dinner menu varies a little, but this year we'll have Boston Clam Chowder as a starter. (Gift from a dear friend who feels sooo sorry for her poor, deprived Southern pal who didn't grow up eating this. lol) Spinach salad with poppy seed dressing. Beef tenderloin, if I can afford it. If many extras are going to turn up, it will be prime rib instead. A green vegetable TBD, and a potato gratin. Dessert will be Italian cheesecake with a strawberry/Grand Marnier topping -- not that anybody will have room for it, but you have to have one, right?

Christmas breakfast = Christmas cookies. When we're at my MIL's house, she makes eggs. My family always just did cookies and maybe toast or something.

My favorite Christmas dinner is prime rib and scalloped potatoes with goat cheese. Salad and asparagus go well with it, as well as some crusty bread.

Christmas is my sister's birthday and we always have a big brunch to celebrate her. Eggs, bacon, sausage with milk gravy, biscuits, hash brown casserole, grits, and cinnamon rolls with green/red sprinkles on top. When my grandfather was alive we also had country ham. Maybe we'll do that again this year.

Dinner is usually low key since we have to travel to her party. I'm thinking having the turkey, dressing, etc. Mom didn't have at Thanksgiving. She'd just had major back surgery (had to go where she was taken) and went to my sister's inlaws who only had ham.
