BBQ Brisket

I friend of mine, who is an excellent cook , shared this recipe with me. She describes it as " absolutely fabulous".

Given the ingredients it's unlikely I'll ever make it but thought I would share.

Not sure I'm big on the Chevre Cream or the Guacamole but......the brisket sounds delish! FYI Bonnie Stern is a celebrated Toronto chef, never made a recipe of hers that wasn't good.

Barbecued Brisket with Guacamole and Chevre Crema (Bonnie Stern)

5 lbs. beef brisket, trimmed of excess fat

3 large onions, sliced

1 head garlic, peeled in cloves

Rub:

1 tbsp salt

1 tbsp ground pepper

1 tbsp paprika

1 tsp cumin

ý tsp cayenne

BBQ Sauce:

1 c ketchup

1 c commercial chili sauce

4 chipotle chilies, minced with juices

2 tbsp Dijon

2 tbsp brown sugar

2 tbsp red wine vinegar

1.5 c beer

Chevre Crema:

1 c whipping cream

4 oz. chevre - broken up

1 clove garlic, crushed

1 tbsp freshly grated horseradish

Guacamole:

1 clove garlic, minced

1 tsp salt

1 small Serrano or jalapeno, minced

1 plum tomato, seeded & diced

2 tbsp lime juice

1 ripe avocado

ü c chopped fresh cilantro

Pat brisket dry. Combine spices for rub and rub into all sides of brisket. Place onions and garlic in the bottom of a roasting pan and allow to marinate about one hour.

Blend together ingredients for BBQ sauce. Pour over brisket. Cover and cook in a slow oven (325F) for 4-5 hours - or until brisket is very tender. Chill. Slice into 1cm think slices and arrange in a baking dish with the sauce under and over the slices (for reheating)

For the cream: heat cream gently with the cheese, garlic and horseradish. Strain and season with S/P

For the Guacamole: combine garlic, salt, pepper, tomatoes and lime juice. Mash in avocado and cilantro.

To serve: reheat the brisket (covered) at 350F for approximately 45 minutes. Serve on a bed of polenta with some of the brisket sauce and onions on top. Drizzle with crema and spoon some guacamole on the side.
