I too think you need another veggie and not a "saucy" one...how about a dish of roasted things like roma tomatoes, zucchini onions and peppers.... Or a bowl of mixed greens and a couple of kinds of dressing.
BUT...with all those kids, In my house they would not be eating much besides chips cheese and grapes....which I guess is not all bad.
But I always include a big dish of little smokey mini hot dogs in some kind of a ketchup based sauce...and I find that the adults are big consumers of that kid food as well!

You have four vegetarians coming so I would think about adding a vegetarian entree for those who might prefer something to the quiche (which sounds delicious and will definitely be sampled by the non vegetarians.) I heartily suggest the barefoot contessa's mushroom lasagne. Very easy to make and receives raves everytime I serve it.

I think you need another veggie too. I have a carrot casserole recipe that Terrapots posted which was well received my my "brood". Butternut squash, cut in cubes and roasted is always a good choice

Yorkshire Pudding for a group this large will be tricky. It's a last minute kinda thing to bake although the batter can be prepared ahead. It's the volume that would bother me. That's a lot of Yorkshire to have ready at once. If you do it I would not do the individual ones I would make a pan...several pans of it.

I agree, I think you need another vegetable, maybe corn pudding? Since you're having butternut squash soup, I'd probably not roast squash, but I'd roast asparagus or brussels sprouts or even make creamed peas (with or without new potatoes)

Yorkshire pudding for that many? Diane, you are a brave woman. As Chase mentioned, I'd not try to do individual ones, I'd do a big pan instead.

I think a tomato gratin would be good or even just a simple green salad. Some people - not foodies- always seem to like that. But definitely tomatoes. Maybe a grape tomato, fresh mozzarella ball dish.

Unfortunately-- mushrooms & carrots are out-- only 2 or 3 of us would eat them-- & the Chicken Riggies has pasta so don't want another pasta--
Asparagus is a good idea , tho it's in the quiche -- normally I've always done the creamed peas & onions ( & pierogies) but again only 1 or 2 like them so saving for DH & my Christmas Day meal.
Maybe corn pudding would go over well. Got a good recipe Annie?

And Sharon-- how do I do Yorkies in a big pan?
LindaC-- the Grandkids ( except 1 & he'll eat deviled eggs ) will all eat the beef , quiche & Riggies but maybe the little hots is a good idea ,as is a greens salad's .

Diane, sounds like another great family gathering! I remember when I first tried the yorkshire puddings for the frist time thanks to this forum. It was Ann, CindyNY, and Sharon that shared their recipes and tips. Cindy posted a pick of a big one in a 9 x 13 inch pan....I'm guessing you would just add enough drippings from the steak to coat the pan very well..1/8 of an inch??,,,heat it up in the oven and then add the batter....I remember it rising up along the sides of the pan and being somewhat less on the bottom....just like it should for the most part if you made individual ones. I would do this method for a big group....even it they have to wait for a second pan of them depending upon how many ovens you have.

This salad is a T&T if you want to add another salad to your choices..

Sue, this is one of my favorite green bean salads. I've also been experimenting with pasta and black bean salads. Really liked the BB salad I made the other night. Plan on adding diced avocado next time.
GREEN BEAN, PECAN, AND FETA SALAD
2 pounds fresh green beans, trimmed
1 small purple onion, thinly sliced
2-3 ounces crumbled feta cheese
1 cup coarsely chopped pecans or walnuts, toasted
6 tablespoons extra virgin olive oil
2 tablespoons rice vinegar
1 tablespoon chopped fresh dill
1/2 teaspoon minced garlic
coarse salt and fresh ground pepper to taste
CUT green beans into thirds, and arrange in a steamer basket over boiling water. Cover and steam 5-8 minutes or until crisp-tender. Immediately plunge into cold water to stop the cooking process; drain and pat dry.
TOSS together green beans, onion, cheese, and pecans in a large bowl. Cover and chill 1 hour.
WHISK together olive oil and next 5 ingredients; cover and chill 1 hour.
POUR vinaigrette over green bean mixture, and chill 1 hour; toss just before serving.

David is exactly right here is a link showing you what it looks like. Actually Yorkshire Pudding is traditionally made in a pan not in muffin tins. That's how my Mom and Nana always made it and it's how my SIL makes it.

I only ever make a single batch and always make individual but here is Ann T's large batch pan recipe, following small batch recipe.

Yorkshire Pudding - Ann T

3 large eggs
1/2 teaspoon kosher salt
1 cup all-purpose flour
1 cup cool milk
1/8 cup fat, reserved from roast

Put the eggs in a large bowl and beat with electric beater for 1 minute.
Add salt. Alternating the flour and the milk, add to the eggs. Beat only until all ingredients are well combined. Cover tightly and refrigerate.
Pour reserved fat into the hot deglazed pan and place in the 450 oven. Let heat for 3 to 4 minutes. Pour cold batter directly into pan. Cook for 15 minutes.

Yorkshire Pudding for large size roast

9 large eggs
1 tablespoon kosher salt
3 cups all purpose flour
3 cups milk
1/4 cup fat

Make same way and pour into larger heated roasting pan.

I usually make the smaller recipe and sometimes make the Yorkshires in a muffin tin. I can get 12 large Yorkshires from the small recipe.
