Beef Soup bones- a few questions

Yesterday, I bought three packages - 6 lbs. - of fresh "beef dog bones". But not for my dogs!

I made stock last night with that wild assortment of who knows where it came from parts. Kinda grossed me out but I persevered and today after skimming the fat and reducing some more, it tastes good.

I used Chases recipe for beef stock. I only cooked it 4 hours because I started late. Memo to self- start early in the day next time.

Does it matter if I don't know what type of bones and beef went into the pot? They were not big huge chunky bones.

Could I have simmered it for 10 hours - all night- with everything still in the pot? I don't mind leaving the stove on low all night either.

The recipes I have looked at say 8 hours if the bones are big.

The doggies did each get a bone after roasting, btw. They ate it outside supervised.
