Anyone hosting the Feast of Seven Fishes???

I keep counting down the days to get my "Feed Bag On" cant wait!

Never even heard of the Feast of Seven Fishes until a Bobby Flay Throwdown last weekend. I drooled over the TV for the whole hour! LOL

Of course, although we never really called it that. I have my big Holiday dinner this coming weekend, so once I am over that I will turn my full attention to the menu for Christmas Eve.

I want to try some new stuff and have been collecting ideas. Everyone wants the old favorites but I think we need to make some new favorites.

Definitely on the menu is Martha's lobster in phyllo recipe that Alexa posted, as is fried calamari, Mom's amazing baked clams, and Mom's Italian Shrimp Salad.

Some contenders for 1st, 2nd, and Main course are: Scallops in bacon, Shrimp or Lobster bisque, Coquille St Jacques, Shrimp corquettes, Grilled Shrimp Ceasar (LCBO site), linguini and clam sauce (Dad's is great).

Would love to see what others are doing. Going to check out Bobby Flay's menu now!!

Michelle, I had thought about taking pictures but I guess all of that frying wiped my brain smooth. ALso, after seeing that cookingrvc had dinner in nice, civilized courses while ours was more of a fish free for all I realized that our christmas eve dinner probably wouldn't photograph very well :-). Plus the picking that goes on while things are being cooked and who ends up getting smacked with a wooden spoon for trying to sneak a piece of something while it's cooling off. We had (all thrown down on the table at the same time): Baccala, wrapped in dough & fried Alici (anchovies) wrapped in dough & fried fried smelts (dredged in seasoned flour & quick fried) fried calamari (same prep as smelts) Baked baccala & potatoes Baked, stuffed calamari (filled with the same stuffing we use for peppers but not sealed so the bodies shot across the pan away from the stuffing..next year I'm sewing them shut!) fried shrimp (flour, eggs and panko) angel hair with marinara sauce salad (our nod to a green vegetable) Stuffed clams (my SIL's contribution) And I just now realized now that I forgot to make the fried flounder! But nobody even missed it (including me) or asked for it. I'd better let my mom know that it's still in the fridge. The real trick was getting everything to the table hot but I was able to keep some things warm in the oven & saved the shrimp, smelts & calamari for last since they cook so fast. Dessert was a bunch of assorted cookies, hazelnut cream puffs with dulce de leche filling (oh my GOD these are good) and pandoro, cut into layers like a Christmas tree & topped with a candle so that we could sing happy birthday to baby Jesus. No torrone. I had brought a box to my mom about a month ago but apparantly it got eaten. Funny how that happens! Nina

Great news, Iris! Speaking of frits, I shared in another thread that I took some cuttings from my neighbor's P. Incense vine and am rooting them in water. They're all doing very well and sprouting lots of new growth -- all the leaves on the right side of the pic (even though I don't see any roots forming -- do I just jam the ends into potting media?!): As I was shooting this, I noticed tiny nibble holes in the older leaves to the right. Hmmm...I know those weren't there a few days ago. This guy's certainly enjoying an indoor feast! :)

No, Elmer, the only oysters I will eat are fried on a poboy with the other half fried shrimp. No fish sorbets no matter who is buying. I like them fried. Ate plenty of them when we lived in New Orleans. I could not choke down a raw oyster unless there was a knife at my throat. I feel the same way about milk. I can't touch it or smell it. it makes me gag. But, do love cheeses and cultured foods. Other than uncultured dairy and raw oysters, there is very little that I reject outright. I have my dislikes just as anyone else does. I enjoy all manner of foods from all over the world and love, love, love fusion cooking. I am not one of those people who doesn't like this and doesn't like that. You know those people, the ones who don't eat beans, or don't eat onions, or won't touch bread, or don't eat any vegetable unless it is raw. or balk at any thing that is seasoned with any other than salt or pepper. I am not that person. That is not me. Not too fond of anything rendered into foam. If food is beautiful that is a good place to start with enjoying it. But some of these things are revolting looking or just ridiculous. We used to have a butcher in a small town where we lived and for some reason he had beef heart. We really grew to appreciate chili made with beef heart. I do know a thing or two about foods, many different ones. I do draw a line at eating fish eyeballs. My DIL who is from another part of the world loves to eat the whole fish with the eyeballs. Lamb cheeks, stewed ears, tongues, yes. Eyeballs? NO. I'll pass. Please don't serve it on a plate dressed with kitty spittle or something that looks like the grass that the dog barfed up. I don't care how good it might actually taste. Why do that to it?

Ya know, nothing is a substitute for reading the toxicity warnings on any pesticide product, whether it's "natural" or whatever. How long you stay out of a "fogged" area depends on what the area is "fogged" with. "Fogging" just refers to the method of application. Pyrethrin sprays 2-4 hrs. some others as little as 30 min. In mosquito infested areas, new mosquitoes will quickly repopulate. Sprays only effective in very short term and not much use if not part of an overall mosquito control program. But if you live in an area like I do, where the mosquito is the secondary state bird, you have to adapt. Total control is a pipe dream, move to a less infested part of the country. I lived in PA for half my life, was rarely bothered, particularly in urban areas. Here, hordes, can barely make it from car to front door during hatch outs. It comes in waves. We don't expect to entertain after M hour during M times outdoors. We have a screened in porch for that. We've lived in an infested area for decades and rarely get bit. We work around them. When I backpack into the worst areas, I use DEET for exposed areas. It's toxic but if you're not slathering it on all over your body daily for you entire life, your risk is much less. As for the dragonfly shortage, I dunno but these insect sprays, if applied improperly so they get into the water, are very toxic to water life, and the stuff doesn't break down in water like it does on land. Dragonflies not the most sensitive creatures to water quality, but not the least either. About midway. Even they have a point of no return. Like I said before, Mom nature can help you but only if you respect her, otherwise you're in for a heck of a battle.

Sue I have a wonderful Coquille recipe if you are interested. Also I posted a link to some lobster recipes on yopur post asking for lobster or shrimp ideas. That site hs lots of great recipes.

Yes, Sharon it does have some nice recipes. I was using it for inspiration and also that's where the grilled shrimp Ceasar with crostini came from. I love that site.

I would love your recipe for Coquille. I made it once and it was great (maybe it was your recipe) so please go ahead and post it.

One of my problems is that we have some dishes that I absolutely can't jettison because they're in honor of my beloved Mother. So I have to pick carefully and make sure I can substitute shrimp for lobster and vice versa so as to make completely different types of dishes that may share the same key ingredient like shrimp.

We do all shellfish so it's always a challenge.

This is one of my all time favourite recipes but I rarely make it because Clive doesn't "do" scallops. I've made it with shrimp and with lobster but I like it best with scallops.

Coquilles St Jacques (Originally From The Woman's Day Encyclopedia of Cooking )

1 1/4 Lb scallops
butter (or margarine)
6 shallots (or green onions), chopped
Bouquet Garni (dried parsley,celery leaves,thyme, bay leaf)
1 1/2 c dry white wine
salt
12 mushrooms,finely chopped
1/3 c water or chicken broth
juice of 1 lemon
Fresh groud pepper
3 T Flour
4 egg yolks
1 c cream
grated parmesan
fine dry bread crumbs

Wash scallops and dry with paper towel. Place in a saute pan with 2TBSP butter, the shallots and the Bouguet Garrni. Barely cover with white wine. Season with a little salt and bring to a boil. Turn down and simmer about 4 minutes or until the scallops are barely tender.

Drain and save broth for sauce. When the scallops are cool enough tohandle cut in small pieces or in slices.

Saute mushrooms in 2 TBSP butter for 2 or 3 minutes. Add broth or water,lemon juice, salt and pepper. Simmer until mushrooms are tender. Drain and reserve liquid.

Combine the reserved liquids from the scallops and the mushrooms and heat. Melt 3 TBSP of butter in a sauce pan, blend in the flour, add the liquid, heat and stir until thickened and smooth. Cook for 2 or 3 minutes.

Add the scallops, heat through.

Beat the egg yolks and mix with the cream. Add this to the sauce and cook gently, do not boil. Add mushrooms and season to taste. Spoon into individual ramekins or shells, sprinkle with cheese and bread crumbs.

Glaze under the broiler for just minute or two.

NOTE: Can be made several hours in advance and then spooned into the dishes and placed under the broiler just before serving but let it come to room temp first.

Oh Pat, that did give me an idea for mussels. I was never a big fan of them but am sort of turning the corner since trying them again recently.

My dad is a great cook and he once made mussels that were the only ones in my many years that I liked - it had bacon and white wine and garlic...and...ok that does it, mussels will be on the menu.

Sharon, that looks mighty good. I'm like Clive and don't care for scallops all that much - I think its a 'texture' thing, but I remember they were fantastic in this dish.

Good to know I can substitute.

Sue mussels are great prepared just like clams casino....I also make clams casino and extra sauce and serve over linguini...we too call it Italian Christmas eve but these days thats seems (7 Fishes) the popular name for it I have to look at Bobby Flays...I didnt see that show!

Oh mussels.....If it weren't snowing so hard I would go to the fish counter and see if they have any....
Live them just steamed in a little wine and lots of garlic and butter!
