Selecting plumber: new home build-What to look for in bids

Hello,

I'm entering the bid stage of building a new home. I'm wondering what would you look for in deciphering the details I'll be receiving when I get bids back from my plumbers. What would you look for in determining better materials or practices. This is not a "operations" question (how many service trucks do you have, what is your after hours emergency call service, how long have you been in business), it is a more technical, what to look for to select a better from a well designed system.

Home will be 6000 sq ft. Prefer PEX over copper. (Some may saw copper is better than PEX... lets not get in that debate... rather is there a better or a worse type of PEX?) Am planning on hydronic radiant floor heat if that matters. (More of an HVAC issue, but could have overlaps here.) Master suite is only thing on 2nd floor and will have it's own utility services. Utility room for remaining house is in basement.
