Mixing cookie dough in advance

I make several kinds of cookies for Christmas Eve. I mix and refrigerate the dough and bake all a day or two before. How long in advance do you think is okay to make the dough and refrigerate not freeze.

I just read a FAQ at Land O'Lakes (butter) on this subject, and I agreed with them. I'm a food safety "freak".

"Most cookie dough can be refrigerated or frozen. Place dough in airtight containers. Store in the refrigerator up to 2 days, or freeze up to 3 months. Thaw the dough in the refrigerator until it's just soft enough to use.

To have future batches of cookies ready in minutes, drop dough on cookie sheet and freeze until firm. Remove dough from cookie sheets and place in resealable, plastic freezer bags. To bake, place frozen mounds of cookie dough on cookie sheet and follow recipe directions. Baking time may need to be increased. "

BTW, if you have anyone inclined to eat raw (unbaked) cookie dough containing eggs, be sure to use powdered eggs, Egg Beaters, or other pasteurized egg products to prevent egg-related bacteria.

Personally, I'll make the cookie dough and form the dough balls and freeze them as I have time, then bake later when needed.

Well, I'm not much of a baker but once in a while I bake cookies for DH. I've never frozen my dough or even considered it. I just get the whole thing done at once. I work during the week so the only time I'd even consider baking is on the weekend. DH is out of town this week so I was thinking about making the cookies today and freezing until he gets home next Friday. Now that I've read this I think I'll make the dough, freeze it, and bake them on Friday after he gets back.

I think he will enjoy the smell of cookies baking plus he likes dough! I don't read or post here all that often - just certain times of year when I have more time and am doing more cooking outside of my normal stuff. I always get a lot of great insight from you pros.

No and they will be easier to cut to size and shape if you roll them up into plastic wrap. You can even freeze them but will need to let them warm up enough to slice.

If you want to use butter for those old recipes calling for shortening, use half and half, as my mother did. The dough will still be sticky, but not nearly as bad. Here is my mother's and maybe my grandmother's recipe for cut out sugar cookies. Combine: 3/4 c. soft shortening- part butter 1 c. sugar 2 eggs 1/2 t. vanilla Sift together: 2 1/2 c. flour 1 t. baking powder 1 small t. salt Mix all together and chill at least 1 hour, or over night. Roll 1/8" thick. Cut out with floured cutter. Place on ungreased sheet. 375Ã¯Â¿Â½. 6-8 min. Not many in a single batch. Tami

Help! Cookie dough too soft...

This dough was like the soft dough you get with the famous Chocolate Crinkle cookies...only softer yet. There was no way they would have held up to baking. I'm quite certain all the ingredients were in their proper proportions as I had everything premeasured and premixed where called for, eggs to room temp, etc. because the recipe requires a few steps and is a little involved. I was especially careful to make sure the chocolate mixture was cooled down to room temp before adding the egg mixture because I've gotten in a hurry with similar doughs and the warm chocolate causes issues. The only other thing could be that I doubled this recipe from the start so maybe that is what caused the overly soft dough. Some recipes just don't multiply well. We'll see how things turn out tomorrow.

This is the recipe I like....they really are crisp if you don't under bake them...the extra sugar helps. And they seem to mellow upon storing for a week or so. And I don't prick them Sugar cookies: 1 cup of butter 2 cups of sugar Cream together and add 2 eggs beaten with 2 T milk and 1 teaspoon vanilla ( I like a bit more vanilla) Mix with the butter and sugar Add 3 cups flour mixed with 1/2 tsp salt....and as much as 1/2 cup more flour until it's stiff enough to roll out Make flat patties, wrap and refrigerate for an hour or longer.... Dust board with flour and roll and cut..I roll tham about 1/8 inch thick...sometimes thinner... Bake 375 for 8 to 10 minutes....I use parchment on the cookie sheets....if you don't have parchment....lightly grease the sheets. The absence of baking powder keeps them from rising and keeps the cookies true to the shape of the cutter.....and makes them crisp.

I also make the dough in advance and freeze it, then just thaw and bake when I want it. I used to bake the cookies and freeze them, but no matter how many people tell me they freeze and thaw "beautifully", they still weren't like fresh baked.

Now I bake them as I need them and they are fresh every time, plus they don't get broken up in the freezer.

Thank you. Guess I will figure some time Christmas week. I do not have any freezer space, I do know a few days in the refrigerator my dough has been fine. I am just so busy with DH and daughter Dr appointments I was hoping to hear more days would be okay.
