Food Processor to mix cookie dough???

I'm going to be making a sugar-cookie-type "Sand Tart," and Oatmeal Raisin cookies. Can I make the doughs in my food processor, as opposed to using the Kitchen Aid mixer? Will the results be just as good?

Thanks for any advice you can offer.

I would just use a wooden spoon and a bowl. It takes longer, but I wouldn't use a food processor. That's more for chopping and pureeing food, than it is for mixing it.

Just don't over process.
And add the nuts and/or oatmeal by hand at the end.

I do spend a lot of time in the kitchen baking pies and although I have used my FP often to cut in the fat, I never add the water in the FP. Tried it and didn't like it. I prefer to finish the pastry dough by feel. And more often then not when I want to make a pastry dough I just cut the fat in using the old fashion pastry cutter. Quicker than getting out the big FP. Gardenlad. I make all my own breads and four cups of flour nets me two nice size loaves. Most of the breads I make the French or Italian artisan types, and last year I got into making sour dough as well. Since my FP will handle 6 to 7 cups of flour easily I usually end up with 3 large loaves. Check out Julia Child's simple French Bread recipe in her "The Way to Cook" book. The recipe calls for 3 1/2 cups of flour and will make three 18 inch baguettes or two fat long loaves. Or a couple of large rounds. Since my stone is only 16 inches wide I make slightly smaller baguettes and a third loaf or two larger loaves. I do agree with you though that the dough blade has limited use and unless you do use your FP to make bread dough then you could do without it. Ann

I did a lot of reading about mixers this summer, spending waaaay too many hours on the 'net :) Frankly, IMHO, the bottom line is all brands do a good job with cakes, icing, cookie dough, & whipping & creaming. Read the reviews online, visit the forums & it's the same story: most people love their mixer brand; a few people who bought the brand got a lemon & will tell you different. It's when you start kneading multiple batches of stiff bread doughs that a few brands stand out. The Cuisinart has a timer & a fold feature that sounds nice. A caveat I read about is that the bowl is tall & narrow, so when you fill it to its professed capacity, the batter is over the top of the beater.

Thanks to LindaC's & AnnT's recommendations I bought a food processor for making dough and used it successfully for a couple of years before getting a bread machine. I basically did what Linda outlined. Flour, yeast, etc. in the bowl and adding liquid slowly through the feed tube. Once it sort of came together (after about 15 pulses), I'd let it rest for about 10 minutes so the liquid could get fully absorbed. Then I'd finish off with another 15 pulses while checking the texture. If needed, I'd add more flour or liquid. Then plop the dough into a container for rising. I always used my metal blade and never used recipes with more than 3-1/2 to 4 cups of flour total. I think the FP is a great help when making a smaller amount of bread. I also use it for cutting in butter for scones & biscuits, but, like AnnT, I add the liquid by hand. I found a pretty good book in my local library about using a FP to prepare breads. It has good general techniques. Maybe you could find it too. The title is "The best bread ever: great homemade bread using your food processor" by Charles Van Over; Broadway Books, Publication date:1997.

I just read a FAQ at Land O'Lakes (butter) on this subject, and I agreed with them. I'm a food safety "freak". "Most cookie dough can be refrigerated or frozen. Place dough in airtight containers. Store in the refrigerator up to 2 days, or freeze up to 3 months. Thaw the dough in the refrigerator until it's just soft enough to use. To have future batches of cookies ready in minutes, drop dough on cookie sheet and freeze until firm. Remove dough from cookie sheets and place in resealable, plastic freezer bags. To bake, place frozen mounds of cookie dough on cookie sheet and follow recipe directions. Baking time may need to be increased. " BTW, if you have anyone inclined to eat raw (unbaked) cookie dough containing eggs, be sure to use powdered eggs, Egg Beaters, or other pasteurized egg products to prevent egg-related bacteria. Personally, I'll make the cookie dough and form the dough balls and freeze them as I have time, then bake later when needed. -Grainlady

Most butter cookies are best if mixed by hand. Using an electric mixer is even pushing it. You don't want to overdevelop the gluten in cookies. I've occasionally mixed them in the FP when I've been in a real hurry, but the texture of the finished product really isn't as good as if you mix by hand.

Just soften your butter for 10-15 seconds (depending upon your wattage) in your microwave, and you'll have no problem making cookie dough with just a bowl and spoon--and the clean-up doesn't get any easier than that.

I don't like making cookie dough in the food processor.

If it is a pastry type cookie, I will cut the butter/shortening with the dry ingredients - but then I will move to a bowl and mix in the wet ingredients by hand.

I do like using my Kitchen Aid - I "pulse" the beater so that the dough isn't over worked. Just a few rotations, scrape the bowl and beater down and a couple more rotations - and so on until the dough comes together.

With sugar cookies - I cream the butter and eggs, add about half the flour and leavening and mix well (but don't over work) - then I gently "pulse" in the rest of the flour.... And since I roll them out - I make sure I don't add any additional flour. I chill the dough, then roll out on a lightly floured board.

You can make cookie dough in your food processor with no problem.

What you need it the mixing attachment that does not usually come with the starter set of accessories. You have to buy it separately. It depends on the brand of your machine. Some do not have this attachment available and only offer blades, slicers and graters.

A food processor does every little thing to suit your needs, from chopping, ... It has plenty of power to even mix cookie dough and it can do it real fast.
