snowflake cookies

I am on a roll with gingerbread. Since these were for us, and not a gingerbread house, I splurged and used only Penzey spices. Oh my, what a difference! Thank you again Arabellamiller! (I feel like Elaine from Seinfeld... is my family Penzey worthy?)

I'm ready to bake snowflake cutouts today. Your cookies look great! Of course your family is Penzey worthy...if not your family then who...

My neighbor gave me a set of snowflake cookie cutters, (I think she got them from William Sonoma -- sorry about the spelling I think I'm a bit off). Anyway, a snowflake cookie name card would be cute. I have also seen at the craft stores, snowflake wax shapes, to be set into Gel candles. You could make a few of the candles and have them drawn as door prizes. This year I purchased from Linen and Things a white and silver snowflake table cloth. I also sent one to my sister (mine was 120 and cost $29, but the one I sent for her was smaller and about $19). Michaels had some lovely glass snowflakes, about 8 in a pack for $6. (I have these hanging from the doorknobs of my kitchen cabinets) I also have snowflake dishes, cups and serving pieces. I have seen (last year I think) snowflake paperware. But, I would consider the table clothes, or get white plastic and a metalic paint pen and draw the snowflakes on them, in a variety of sizes. Small rosebowls filled with opalescent marbles, white, blue and maybe silver, with votives lit to reflect through the marbles. If you can find the snowflake ornaments, one could be placed on each place setting and would also reflect the light.

I grew up where Amanda did, and I didn't see snow until I was 11. It was warmer than usual when I was a child, and we also were having a very long drought. We did sing "Frosty the Snowman" and decorate snowman cookies, however. When we finally did have snow, it was only one or two inches, and my sister and I scraped the entire front yard clean to make a two foot high snowman, which was anything but white because of all the leaves that were in it. My grandmother had a landscape painting in her den that was a scene of a river flowing through a snowy landscape. It was painted around 1927, I think, and was rather dark, with a dark sky and dark rocks at the river. The river was also dark, but there were lots of patches of white snow. As a child, I though the patches of snow were ghosts and had no idea that it was a landscape painting, and it always scared me to see it. I think I was 12 before I figured out what it really was. She had another dark painting from the same period of a vase with tulips in it, and I thought it was a bear wearing a hat - the vase was the bear's head and the tulip blossoms were the hat. That one scared me also. Lars

That's just about the prettiest cookie I've ever seen! Bet it tastes as good as it looks, too. Meringues are "iffy" to make here because of the humidity, but I may have to try them on a dry day.

You may also find it called 'sanding' sugar. A tip--if you have a good neighborhood bakery, try taking a small container in, and ask them if you can buy a little of theirs. If you're a good customer, they probably won't charge you, but if they do? It's going to be a LOT cheaper than buying a little designer bottle of the stuff in the supermarket or specialty store.

What recipe did you use?

Sherry recommended Penzy's Vietnamese Cinnamon and I am half way through the large jar I bought in September!

Lovely cookies, Jo!

Michelle, I think Penzey's Vietnamese cinnamon is the best, too! I haven't found any of their spices that aren't good and I have almost everything they have....lol

I'd like your recipe, too. Alice had a gingerbread cookie bake-off with another girl at school. She took a recipe from BettyCrocker.com. We didn't have allspice so she used a bit more of everything else. We were also low on molasses so she made up the difference with honey. She wasn't pleased with the results which weren't very sweet. I thought they were fine and would benefit from a generous slathering of cream cheese frosting. I think she just didn't know she doesn't like gingerbread cookies. I think the recipe could have been better. She didn't consult me regarding recipe selection.

Snowy the dog thought Alice made a lovely batch of ginger biscuits!

The other girl won the bake-off based on her generous slathering of vanilla frosting! Alice used royal icing to decorate. Her cookies were tastier but the the kids liked the frosting.

Here is the recipe, with a caveat: Penzey's is so much stronger than the average spice, so you may want to cut the ginger and cinnamon amounts if using them.

This is from Debbie Fields' Cookbook

3 1/4 cups flour
1/2 tsp baking soda
2 tsp. ginger
1/4 tsp. salt
1 tsp. cinnamon
1/4 tsp. cloves
1 cup salted butter (if you use unsalted, add a bit more salt to the recipe)
3/4 cup dark brown sugar
1/2 cup dark molasses
1 large egg.

Mix dry ingredients together. Cream sugar and butter. Add egg. Mix well. Add dry ingredients. Mix. Chill for an hour. roll out and cut. (I use parchment paper).
Bake at 325 for 9-11 min.

The royal icing I used is from Wilton Meringue powder. I think it is 1 lb box, sifted with 3 tablespoons powder and 6 tablespoons warm water. Mix on high for about 5 minutes.

If I only have fresh ginger and not ground, can I use that? I'm not sure if I'd want more or less ginger...I'd be grating it on a very fine grater...
Thanks!!

Ignorant Question Warning -- Isn't royal icing just for decoration and not for eating? ... so so embarrassed, but want to make these so I had to ask....

It is my understanding that by using the meringue powder, you eliminate the potential for salmonella caused by raw egg whites.

I just wanted to say thank you for posting that recipe! I had a great time making little stars, little men and taller men with hats!! No one was iced but that might have to do with all the icing we ate a few days ago on our tea cookies!
Thanks for sharing!
