Bread Baking last night

I made two loaves of white bread last night after being very inspired to bake after reading through all the great posts here. Many years ago I made bread a lot the old fashioned way with hand kneading. I used to have a great recipe book from Farm Journal. Anyway I now have a kitchenaid mixer but I never used the dough hook before. I simply used the recipe from the kitchenaid book for white bread and was amazed at how easy it is with the dough hook! Here are pictures of the bread. The house smelled so wonderful too!

Wonderful. Isn't it great to know that there are no preservatives in what you made? You might find that you enjoy it so much that you never buy bread again! Having a KA with a dough hook is helpful, especially if you don't have a bread machine.

Great to see someone else using a plastic cutting board for bread... I thought I was the only one! I know a wooden one takes a better picture, but I'm not about to buy another cutting board just for bread!

I was raised on white bread (from the store) so I to tend to prefer it. However there is a great honey wheat recipe that you might want to try as well. Very easy and great flavor. You can also make this in your mixer, even though the recipe is for a bread machine. And, you can make it in a loaf pan instead of as rolls. I do it all the time and I'm giving a loaf of this bread to everyone I know for Christmas. I've already given one to a friend/neighbor and it was very well received.

Here you go: Home Cookin Chapter: Recipes From Thibeault's Table Italian Bread ============= This recipe is also perfect for both Focaccia and Pizza. Sometimes I make a Biga the night before using 1 1/2 cups of the flour used in this recipe with one cup of water and 1/2 teaspoon yeast. If you don't have time to make the biga then this the recipe works just fine as follows. This is a very wet dough and needs to be mixed in a machine for a long time before you can finish kneading by hand. I use a Magic Mill Machine. If you are using something like a kitchenaide you have to watch it carefully as it climbs up the beater or hook. 8 Cups Bread flour 1 Tablespoon Yeast 1 1/2 Tablespoons Salt about 4 cups of water 2 Tablespoons olive oil. (optional) . Mix flour yeast water and oil( Optional) (not salt) together for a minute and leave for 20 minutes for the water to be partially absorbed. Add salt and mix for about 30 minutes until the dough comes together enough to be worked by hand. Continue kneading until smooth. Place in an large oiled bowl and rub olive oil on top, cover and let rise until more than doubled. Pour out on to surface and divide into the number of loafs you require. Do not punch out the air. Shape into loafs, sprinkle tops with flour and leave to rise on a flour/cornmeal dusted surface. Heat tile/stones in oven to 500 degrees while bread is rising. Slide loafs on to hot stone and spray with cold water, three times, three minutes apart. Lower heat to 450Â° and bake for about 30 minutes. (I can do two loafs at a time in the oven on a large stone). focaccia To make focaccia use some of the dough and place in a oil rubbed pan (I use a rectangle shaped cake pan) Cover with plastic wrap and let rise. Using you fingers indent the focaccia and drizzle with olive oil. Sprinkle with whatever toppings you prefer. Salt, Rosemary, Sauted or thinly sliced onions, black olives, etc.... focaccia can be baked directly on heated pizza stone as well. I also use this recipe to make a number of large pizzas. .

Yes, I certainly understand your motivation. If it didn't work for me, I would not be writing, as I am. I am a very inexperienced baker. Are you using SAF yeast? I ask because, I don't know yeast from a television, but, an experienced, respected, inspirational baker on the kitchens forum has recently discovered that red star yeast does not always work and SAF always does. So to give me every chance of success, I got SAF yeast. I love the smell, too. I keep th e yeast in the freezer. I am so inexperienced that I researched where to keep the yeast. This baker also only uses bottled spring water. I still use tap water. The authors say kosher salt. So I use kosher salt. And I bought King Arthur flour, because bakers whom I respect use KA flour. Just trying to increase my odds of success in this goofy adventure. Linnea, these are only my thoughts. I have been lucky with abin5. Happy and excited. If you think your flour may be the culprit in not achieving what you want, then think of solutions---change brands, further research the flour brand/water ratio. Good luck.

Whooooo Rahhhhh....I almost did it. Received Flour Water Salt Yeast book in the mail last Tuesday. Boy was that a read!!! Read and read, located all my supplies which I had most of except for a big bread tub. Didn't have time to order one, I wanted to make bread now. Stopped at hardware store on Friday, bought a white 2 1/2 gal paint bucket...it worked well. So this morning was to be bread making "Saturday White Bread" by Ken Forkish rules. I am pleased with results for the first time. I am the poster who wanted big holes in my bread. I got one large loaf with a couple smaller baguette style. I butter and then toasted slices for suppper. So good. I made notes and next time I will come closer but my first results I can live with. I know one thing I do not like Mr Forkish's dark dark crust.....I am more fond of lighter golden color....will make that adjustment later on..... shirl

I've found that many vegetable-based quick breads just come out moist. And a little sticky. I've also found that anything out of the oven takes a lot longer to cool than the recipes say (if and when they do say). I put some kind of side-opened cover/tent over my baked things overnight to allow them to cool completely before they go into any bag or refrigerator. Warm goodies release moisture, which condenses and then drips and ends up on top of the baked goodies. Joe

I love my dough hook, my KA is an older model and can only handle one loaf at a time, but it is still a time saver. VF is right, I now bake bread every other day :) Thanks for the recipe VF ... I will try it.

Good work! I love using my KA to make bread. I bake bread just about every weekend. I have The Farm Journal Homemade Bread cookbook. It's a great reference. I haven't made a bad loaf of bread from that book yet.

I baked honey wheat the other night, had Drake in the sling and he fell asleep as I was kneading the dough. Zane kept wandering in, wondering when "his bread" was going to be finished. LOL

Bread baking IS addictive. Even though I'm already itching to make a couple more loaves, I'll wait until Christmas baking with my SIL. :)

Your bread looks delish. And I use plastic cutting boards as well. :)

Now that is what I call a perfect loaf of bread for grilled cheese sandwiches which are my favs!

I love my KA mixer no matter what I making!!!

Thanks for all the positive and helpfull comments! I LOVE my plastic cutting boards. I have a set of three in graduated sizes and I use them for everything. I rolled out the bread dough to form the loaves on the smooth side of the largest cutting board. Plus I can just put them in the dishwasher too which I love.

Thanks for the honey wheat recipe. I will be trying some different recipes now. I wish I still had my Farm Journal bread book!!! It had the greatest recipes!!!
