Bake Day.....Bread Pics

Moe was feeling deprived because I haven't been baking bread lately.

Started a Biga last night and added it to another 8 cups of flour for a double batch. Baked four baguettes and the rest of the dough is in the fridge for a longer fermentation.

A late lunch - Bread, five year old cheddar, olives and roasted garlic.

Might use the remaining dough later this week for a pizza and another couple of baguettes.

Sorry, Moe would miss me. LOL! Deanna, that is just a picture in a Mexican cookbook. Makes a nice background. Rusty, I shaped the loaves like described in this pictorial. After the bread is slid on to the hot stone, I toss a few ice cubes on to the oven floor and I spray the loaves with water to or three times 3 to 4 minutes apart. I don't know what kind of space you're working with but storage is at a premium in my kitchen. I spent a lot of time thinking about how I work when I cook when planning my kitchen. Aside from not having room for a specific baking area there's a lot of cross over with spices & things that aren't used solely for baking so I like everything living in one cabinet. Agree about the doors over the spices. It's better for the spices & things can get messy and/or crammed. It may not always look picture perfect. Plus keeping those jars clean is going to drive you nuts, not to mention the potential for dust etc to settle in the baking cups. My upper cabs are 11" deep and I have risers in the spice cabs that look like little steps. Basically I can see 4 rows of spices on one shelf, the only concession is that I write the names of the spices on the sides of the caps since I can't always see the labels. If you don't have room for a pull out trash in your baking area you can always do what I do I use a "garbage bowl" while you work. Trash gets tossed into the bowl then carried over to the garbage when all is done. I've found this to be really handy! Things like eggshells & butter wrappers just get tossed into the open bowl as opposed to having to open a door or pull out. Here's a picture of my kitchen before it was finished (notice the dixie cup pendants) but it gives you a good idea of what I'm working with. The upper cab to the right of the stove is where the spices, oils & flavorings live. On the counter directly underneath I keep a few canisters & my stand mixer (I keep it underneath a fabric cover to keep dust out). The base cabinet beneath them is all drawers & they hold cooking utensils, measuring spoons, rolling pins, parchment, etc. The actual prep work is done on the peninsula (underneath the dixie cups). This way I have room to spread out. This is my work area for everything. I still have counter space to either side of the stove (which I didn't have before) and plenty of room to spread out. See those open shelves up top? I wanted them in order to display some Fiesta and also as a callback to my mother's kitchen which had open shelves like that on either side of the window. I love having them but they are DUST MAGNETS! All of the dust that can't get into the cabinets to settle on the spice jars must settle there. Good luck with this. In my experience, eggs don't usually freeze very well, although I make and freeze breakfast "sandwiches" for Ashley made of a cooked (fried or scrambled) egg, bacon and cheese on an english muffin and she heats them in the microwave and says they're fine. I'd just make a batch and put one in the freezer. In a few days, take it out and microwave it. That way you'll know, and you won't "sacrifice" a whole batch if it doesn't work well. Annie

I've never had it either, but that looks great! My birthday is today too. It just so happens that my number is just the opposite of 15, ugh 51 today. Happy Birthday to your grandson Glenda, hope he has a wonderful, memorable day.

Aww....I baked a couple of baguettes today too....ate one with a salad, had company.... and froze the other.....sorry no pics!
Looking forward to toast for breakfast from the baguette end.
I make hazel nut apricot bread.....and rye with lemon and anise seed, and malted wheat.....but a simple baguette is pretty well marvellous! And Ann's are truly a picture!

Ann, that bread looks incredible. I haven't had roasted garlic in such a long time- I keep putting it off. But after seeing that pic my cravings have kicked into overdrive and I have to have it now.

Jasdip, yes, I mentioned above that I used the biga in this batch. Actually I start almost all the bread I bake with a biga.

I have four more shaped baguettes rising. One is filled with roasted garlic and cheddar, one topped with olives and two plain.

Holey (and crispy) great bread!

They look just as good as the ones I had tasted in France.

Your bread is gorgeous. I always used to use Julia's recipoe, and then stopped for some reason. Mine never had that wonderful holey texture like you are showing. Is that a function of the Biga? How do you integrate that into her recipe? Do you consider the yeast and flour in the Biga as part of the total recipe? TYIA.

Steve, the biga does make a difference. Also, an extra day or two in the fridge will give you the holey texture too.

I use that recipe more as a guide. Other than scooping up eight cups of flour, and adding the biga (another 1 1/2 cups of flour), I don't measure the other ingredients. Unless you call the palm of your hand measuring, which is what I use for both the salt and the yeast. I use about half the yeast called for in a double batch of this bread and I just add water until I get the texture I want. I prefer a more hydrated or wet dough. This also contributes more holes.

Also try not to flatten the dough too much when you are shaping your loaves or you will lose that holey texture you are looking for.

I used up the rest of the dough today. More baguettes including one filled with roasted garlic and cheddar.
