When is my starter ready?

I'm a novice baker, and after having some success with active dry yeast I decided to try a sourdough starter. I mixed a cup of flour and a cup of water and about a day later it is frothy and actively bubbling. There is about 10-15% flour on the bottom, 10-15% water (hooch?) and the rest is froth. Can i use this now or must the starter be aged?

Also I'm wondering if this strange potion could make me sick if I use it incorrectly. I assume if it smells, looks and acts like yeast then it is OK.

Thanks.
