I can't think of anything that would use a whole quart at once....but remember sour cream stays good well beyond thesell by date.
I use sour cream in dip, in cake frosting, on a baked potato and salad dressing.
I have a recipe for a coffee cake that uses sour cream and of course beef stroganoff.
I also make a sour cream pickled herring thing....I buy the supermarket stuff, slice fresh onions, mix about a teaspoon of sugar with a 1/2 cup of sour cream and mix in about 2 teaspoons of the liquid from the herring.
Then pick out the herring, leaving all the limp on ion and pickling spice bits and add to the sour cream...

LOL I do the same thing, but I keep the onions and spices and toss out the herring! LOLOLOLOLOLOLOLOLOL

Ann T's Cream Cheese Danish takes a cup, I'd start with that, maybe for Christmas gifts. They freeze really well.

Cream Cheese Danish Coffee Cake

1 c sour cream
1/2 c sugar
1/2 c butter
1 t. salt
2 packages dry yeast (4 1/2 t.)
1/2 c warm water
2 eggs beaten
4 c all purpose flour
Over low heat in a small saucepan, heat butter, sour cream , sugar and salt until warm and sugar is dissolved. Cool to room temperature.
In large mixing bowl, dissolve yeast in warm water. Mix sour cream mixture with yeast and add beaten eggs and flour. Will be a very soft dough. Put in fridge overnite to rise. ( May be done same day. Put in fridge for about 2 to 4 hours, and then proceed. )
Turn dough out onto a well-floured surface and knead 6 or 7 times. Divide dough into 4 equal pieces and roll each piece out to 12 X 8 inches. Spread 1/4 of filling on to each piece and roll jellyroll style from long side. Pinch seams and ends to seal. Place seam side down on buttered baking sheet and cut X's in top. (About 6 X's) (Danish should be slightly flatten, and about 3 1/2 to 4 inches wide and about 12 inches long.
Cover and let rise until about double in size - approximately 1 hour Bake at 375 for 20 to 25 minutes or until golden. Let cool on wire racks,
Filling
2 packages 8 oz. cream cheese
3/4 c sugar
1 egg beaten
1 t. vanilla extract
1/8 t. salt
Filling: To make filling beat together cream cheese with sugar, add egg and vanilla extract and salt.
Glaze
2 1/2 c confectioners sugar
1/4 c milk
1 t. vanilla extract
toasted sliced almonds.
Combine the first 3 ingredients for glaze and drizzle over loaves with toasted almonds.

I often use sour cream in biscuit and cornbread instead of buttermilk...I haven't tried this Homemade Ranch Dressing, but it sounds wonderful...thought I'd share with you....courtesy of Pioneer Woman's web site ...she has lots of good things there!

Pioneer WomanÂs Homemade Ranch Dressing
1 to 2 cloves garlic
1/8 to 1/4 teaspoon kosher salt (use less table salt)
1 cup mayonnaise (HellmanÂs or Best Foods preferred)
1/2 cup sour cream
1/4 to 1/2 cup buttermilk or regular milk, to taste
1/4 cup chopped flat leaf parsley
1 to 2 tablespoons chopped fresh chives
1 to 2 teaspoons chopped fresh dill, more if desired
Optional ingredients:
white vinegar
worcestershire sauce
cayenne pepper
paprika
fresh oregano
black pepper
tabasco

Directions: With a fork, make a paste with garlic and salt. Mix all other ingredients, adding optional ingredients as you wish, tasting frequently and adjusting seasonings as needed. Chill for a couple of hours before serving, thin with milk or buttermilk if desired.

Marilyn's Party Potatoes

6 medium potatoes (or frozen hash browns)
2 cups sour cream
½# grated Velveeta or any cheddar cheese
salt and pepper to taste
3 tablespoons milk
1 teaspoon snipped chives
1 teaspoon Worcestershire sauce
1 cup coarse bread crumbs
2 tablespoons melted butter

Boil potatoes in salted water with skin on until tender; cool slightly, peel and cool completely. Grate potatoes coarse. Butter a casserole dish and mix potatoes with sour cream, cheese, salt, pepper, milk, chives and Worcestershire. Sprinkle breadcrumbs over top of potatoes, drizzle with butter (or mix 1 cup corn flake crumbs with 2 tablespoons melted butter); bake 1 hour at 350°

I'll admit to using the frozen hashbrowns (thawed) instead of shredding boiled potatoes...turns out great for me and my group. Also, I have only used cheddar cheese in this recipe so far.

I did the same thing but with cream cheese - LOL! I have 6 bars!

My MIL used to make Sour Cream Softies at Christmas. They are cakey and not too sweet. Great with tea in the afternoon. I can't find her recipe but I found this online that is from Family Circle 30 years ago. Looks the same.

Sour Cream Softies

Ingredients
3 cups sifted all-purpose flour
1 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup butter or margarine
1 1/2 cups sugar
1 cup sour cream (8 ounce carton)
cinnamon sugar
2 eggs
1 teaspoon vanilla extract
Directions
1Measure flour, salt, baking powder, and soda into a sifter.
2Cream butter or margarine with sugar until well blended in a large bowl: beat in eggs and vanilla.
3Sift in flour mixture, adding alternately with sour cream to make a thick batter.
4Drop by by rounded Tablespoonfuls, 4 inches apart, on greased cookie sheets; spread into 2 inch rounds; sprinkle with cinnamon-sugar.
5Bake in hot oven (400°F) 12 minutes, or until lightly golden around the edges.
6Remove from cookie sheets; cool completely on wire racks.

We buy the huge containers of sour cream at Sam's Club and vacuum pack them in pint wide-mouth jars. I refrigerate them and they stay fresh tasting for months.

We do the same with Hellman's Mayonnaise and it stays even longer.

I have a spoon, let's eat!

Mix sour cream, a bit of honey to taste and pour over fresh fruit.

Oh David....is that the way you make party potatoes? LOL! I hate them....but perhaps that's because the recipe I have had calls for frozen hashbrowns a can of cream of something or other, a package of liptons onion soup mix and of course, bagged pregrated cheese!
Salty! I can scarcely put my shoes on just thinking about it!
If I had sour cream I would be making some tonight!...if I had any sour cream....
