hand held shower kit recommendations?

1951 Master bathroom is gutted and renovations have begun. We are not going over the top, just nice, conservative, traditional. Shower preference is to have one shower head only: a handheld on a slide bar that will deliver the strong, hard spray we like. We also want to stop water flow while we soap up, then resume at the same volume and temperature to rinse. We have excellent water pressure. Two parents and one teenager.

I think, but am not sure, that to meet our desires, we need the following:

hand held shower kit (includes shower head, hose, and slide bar), a thermostatic trim kit (two control levers, right?), and the valve guts for each control and the shower head. Am I right?

Now, please recommend brands (be as specific as you can, even product numbers.) We will live here forever, and want stuff that will last as long as the 1951 stuff did. But we definitely are not going top of the line price-wise. Thanks.

Is the following a good one, although it does not have the tub spout? It comes with pressure balance and thermostatic models. I saw a complaint to Grohe's thermostatic model before (temperature changed when some people flushed the toilet), so this pressure balance model might be fine. It does not have the rainhead, which some people complained of low pressure. Can the fixed shower and handheld one run simultaneously? Most important question, do I need to order additional parts if I want to buy this kit? Thank you very much. Nancy, I have the Grohe Atrio trim, too, with a handheld, although not on a bar. It's a different configuration than your's, but I'm posting a picture for you because I think you can center both. In my picture, the part on the 7.5" plate is the temp. control, that would be your pressure balance valve. You could easily put a 24" bar above that (the tiles you see are 13 x 13). Hope this helps. (P.S. We're using a Waterpik shower head from Costco which is fabulous -- took off the Grohe Movario).

Another Hansgrohe Raindance AIR handshower here. I like it very much. The "air assist" gives the flow plenty of power for hair rinsing. It only has three settings, though--fine for me, but you may be looking for more.

Although, we are re-doing a bathtub/shower, and I am replacing it with showerhead, handshower and tub spout, and had to get all the pieces separately (didn't care for the Symmons styles). We are going to use a delta pressure balanced valve (but it has separate handles on one valve, one for water volume and one for temperature), and then a diverter (to go to either tub, shower, or handheld). The rest of the parts are going to be Grohe, but they are all from different style lines (yeah, it sounds like Frankenstein but I don't think it will look that bad).
