Comments (3)I like the one for choc chip out of Mrs Field's cookbook. If you'd like the full recipe, let me know. But I think it's 16 oz cream cheese, 2 c sour cream, 3 eggs, vanilla, etc....Uses about 1.5 C of choc chips (1 cup mixed in the batter 1/2 c sprinkled of over top before baking). Made one for a party this week using the Ande Dinner Mint chips in place of the choc chips. It was very good. Comments (5)I don't know what your cheesecake recipe is, but I can make a "small" cheesecake in a regular cake tin. It's not as tall as the 2 1/2 pounds of cream cheese cake I make in a 9 inch pan (I never use the 10 inch pan) but it's a cheese cake and tastes like one. I have a nest of spring form pans...a 10 inch a 9 inch and an 8 inch....mostly I use the 8 inch pan....because it fits nicely on my favorite tall cake server. Also Cheese cake freezes very well....and a couple of slices of cheese cake in the freezer is like money in the bank. Cheese cake in a cake pan....works best on a pan with a removable bottom. Crust...I butter the pan very very well...soft butter spread on thickly. Then I place 1/4 cup of ground nuts...I like almonds or pecans, mixed with 1/4 tsp cinnamon....and sprinkle in the pan, tilting the pan so the nuts stick to the butter. Cake 2 8 oz packages of cream cheese at room temp. 2/3 cup sugar 2 eggs 2 tsps flour 1 tsp vanilla pour the cake into the "crust" and bake at 375 until the center jiggles only very slightly, about 45 to 50 minutes. Comments (9)I made a smoked salmon and herb savory cheesecake once. Cooking it gave me a reaction to the fish, so I can't say how successful it was, objectively. I think the guests liked it. I tried to use my spidey skills to find your recipe, but no luck. Are you sure it was Cook Eat Share? My best luck came from googling "recipe cheesecake filled with fresh herbs". Still didn't find it, though. I did find the one with a parm crust and cream cheese filling at What's Cooking America. Did you see this one at heirloom gardener? It's more like a cream cheese tart than the kind of ricotta based cheesecake I was thinking of, and I'm not sure I like the sound of Worcestershire sauce in it, but it has some merits....See MoreHow to check a cheesecake for doneness?
Comments (5)I like that link, Chloebud! I knew, of course, to use room temperature, but I didn't know (though it makes a lot of science sense) that it would prevent clumping. I assume due to the solidifying of cold fat. I also didn't know the loosen the sides thing, and I realized that I use 2 piece cheesecake pans. I actually have them for other baking, since I rarely make cheesecakes. I didn't see them mentioned in the tips, but might have missed it. They're like regular rounds but the center of the bottom is open and there's a flat disk that fits over it. Not good for a runny butter cake, but the best for cheesecake. Re doneness, as I said, I don't do a lot of them, but I just look at the center both appearance and jiggle, as described in the link.
