khandi, almost 'Never fail 7-minute icing' question

Hi khandi,

I've been experimenting with the Never fail 7-minute icing recipe and I've mostly gotten good results. When it works it spreads onto the cake very nicely. But the chocolate variation gave me trouble - have you ever tried it?

It says to add two squares melted chocolate. I assume they mean baking chocolate because that is what usually comes in squares. When I added it, the frosting collapsed. I used the beater, maybe I should have just folded or gently stirred it in.

By the way, I notice that the caramel version is just the same as the Sea Foam recipe except the sea foam uses almond extract instead of vanilla. I made it with almond and felt it came out a little too strong. Other than that, I liked the caramel best so far - next time I'll use vanilla or maybe a half tsp of each. I might try the orange which sounds good and should go with chocolate cake.

Do you ever put color in it? When do you add it? It lost a little stiffness when I added color to part. Maybe I'll just do a tone on tone decoration. Or sprinkle with colored sugar - that turned out nice.
