Rye bread recipe

I found a really good rye bread recipe at the Hillel Utah website. It comes out with great texture - chewy inside, crusty outside. It makes one really large loaf.

I tried making it up as two but the texture comes out better if it is made as one large loaf - perhaps grainlady can explain why.

If anyone has other recipes for bread by weight, I'd be interested. I found it easier to make up the recipe by weight instead of counting out cups of flour.
