Pressure cooker too big!

My own fault, but I wasn't paying too much attention. I thought from the picture that it was a four quart size, but really even that is too big. I think if there is something like a pressure pan that it would be big enough for me. I like to be able to use this because you can cook the cheaper cuts of meat along with veggies. I don't want an electric one though. I could use the slow cooker for that. Maybe they don' make such a thing. Thanks. Barb

Don't forget it's "bigger than it looks" because you can only fill it a certain amount. What did you buy? (And what's your question?)

I have a small (4 qt) electric PC--it was a gift. I never use it. I GREATLY prefer the stovetop models. I have a 6 qt Kuhn Rikon and a Fagor 'Splendid' set with an 8 and a 4 qt pot with a lid that fits them both (about $99 on Amazon, $90 this week on Overstock). They work fine on induction (I have an induction hot plate and I've tested them) as well as gas. You can get a Fagor 10 qt 'Splendid' PC for $80 at Amazon or their 'Elite' for about $90...yes, that's not cheap but IMHO it's a quality item and worth the $$$. I doubt that you'll find an electric PC with that capacity for that price. I do a lot of pressure cooking, and I think Fagor is a very good value--and the models I've used work fine on either gas, electric or induction. Here is a link that might be useful: Fagor PC

Thanks for all of your responses! The gasket appears to be in good shape, it has no cracks or bends and feels as pliable as ever. And the leak was coming from the top of the lid, not the edges where the gasket is sealing. I appreciate your comments that the pot is old - I don't use it very often (maybe 10 times per year?), but it probably does need some attention due to age. The manufacturer is Kuhn/Rikon, and the name of the pot is Duromatic.

I have all three as well. PC's are excellent timesavers--steamed artichokes in 12-14 minutes instead of 45. Excellent for quickly tenderizing cuts of meat. (Great curry dishes in 20 minutes.) And sometime this week I'm gonna make corned beef & cabbage in just a little more than an hour. And I find that I prefer osso buco made in the PC to the non-PC way. Also, with a PC I can make foolproof risotto with hardly any effort and very little time, so I end up making risotto more often. (Indeed, Kuhn Rikon markets a small PC as a 'risotto maker'.) Dutch ovens are great for unfussy cooking; starting something on the stovetop and then finishing them in a slow oven is their forte. If you like this technique, take a look at Molly Stevens' All About Braising. Great resource. I have found that since I got into PC cooking I don't use my slow cooker as much. Slow cookers are great for stews, chili, beans and other things where the timing isn't critical--but the pressure cooker is very good on beans and grains as well, in about a third the time. If you want to work more grains and beans into your menus, a pressure cooker really is worthwhile. Lorna Sass, the pressure cooker expert, has written a pressure cooker cookbook precisely aimed at vegetarians. (See the link.) If I had to give up any one of those gadgets, it would be the slow cooker. I definitely wouldn't give up my PC, and I really like the enameled cast iron Dutch ovens as well. <Can I process them in my pressure cooker?> No the processing times would be invalid as small pressure cookers heat up and cool down too fast. Plus half pints would still have to be processed for the pint time which would make them even mushier. But tomatoes do not have to be canned in a pressure canner. They can be done in a boiling water bath so why do you want to pressure can them? <Also, why do my tomatoes seem to turn into tomato water. I would like whole tomatoes.> I can't say because I don't know which canning process you are using but there is no reason I know of that would turn whole tomatoes, properly canned, into "tomato water" unless they are being way over-processed or were exceptionally over-ripe to begin with. What variety are you using and how do you prepare them? Do you use Hor pack or Raw Pack methods? So what set of instructions are you using to can your tomatoes? NCHFP instructions for canning whole tomatoes offer the options for canning them in water, in tomato juice, or with no added liquid. http://nchfp.uga.edu/how/can3_tomato.html Dave PS: - yes many freeze their tomatoes whole to wait on canning them until cooler weather or until they have enough to do a big batch at one time. What is the problem with a large pressure cooker? They only take slightly longer to bring up to pressure. You can put a smaller container inside. Large ones are able to do things like make a couple gallons of stock in half an hour, which is really convenient. The ideal is to have small and large pressure cookers, but if I could only have one, I'd get a fairly large one (8 quarts).

I bought a 2x1 Fagor set for cheap a year or so ago, and I only use the 4 quart pan. The problem with larger pans is that you must fill them to a certain line in order for them to create the correct pressure, and so using a pan that is too large is inefficient. I use mine on an induction burner that I bought to see if I would like it, but I only like it for the pressure cooker, and I only use the pressure cooker on the induction burner - mainly because it has a timer and shuts off automatically, but it will work on a gas burner just as well.

Since I got my pressure cooker, I use it for cooking potatoes, beans, and rice primarily, and in fact I do not boil any of those in a regular pan anymore. I especially like it for beans, I cook those frequently.

Thanks so much for all the replies. I wanted the smaller one because I am now alone and fix a lot of veggies and meat at the same time. I have to be careful of the sodium and I use herbs and with the meat, it just has a better flavor. I ordered the Prestige and will see how it works.
