Well then, that must have been my problem because I did double the recipe!! I didn't realize you couldn't! I know you're not supposed to fool around with amounts in recipes so you keep the acid ratio correct, but where this was just strawberries and sugar and nothing else in the recipe I figured it was ok! I guess not! And I measured out 4 quarts of whole strawberries. The recipe was 2 quarts of strawberries and 6 cups of sugar. It didn't say to cut them or mash them before measuring - in fact (I'm remembering off the top of my head here as I don't have the book with me) it said to crush the strawberries one layer at a time and then to mix with the sugar, so it sounded to me like you measured the whole strawberries, then crushed them and that's what I did. I'm not going to fuss with what I already made - as I said, it won't go to waste as hubby will use it as pancake topping - we've even been known to plop a spoonful of jam in a bowl of oatmeal, so this stuff will work for that as well. But I'm glad I spoke up because for future adventures in jam, I wouldn't have known any of this and would probably have given up on it if I kept failing! And I thought it was weird that the jam recipe that used the pectin used an extra cup of sugar from the one without pectin. I've learned so much from just this thread - thanks so much guys! I want to take my next adventure into the realm of peaches! Peach jam sounds yummy and if I fail again, hubby does like peaches, so he'll have more pancake topping than he knows what to do with lol!! I agree with Lars. Since I've made AnnT's Chicken Pot Pie I've never used any other recipe. So Good. Chicken Pot Pie With Herbed Crust ================================= Dough 1 ½ cups all purpose flour 2 Tablespoons chopped fresh thyme ½ teaspoon salt 4 Tablespoons cold butter, cut into 1 inch pieces ¼ cup cold solid vegetable shortening cut into bits ¼ cup ice water Chicken filling 4 Large chicken breasts 5 Cups chicken broth 2 Teaspoons black peppercorns 2 bay leaves 4 springs fresh thyme 3 Large garlic cloves 2 Small carrots cut into ¾ inch cubes 1 Small leek cut into ½ inch thick pieces (about 2 cups) 1 Large sweet potato 1 or 2 stalks of celery 2 or three large baking potatoes cut into 1 ½ inch pieces 1 Cup frozen peas Sauce 4 Tablespoons butter 5 Tablespoons all purpose flour 1 Cup heavy cream 2 Tablespoons chopped fresh thyme salt and pepper . Use any combination of vegetables. I have added fresh green beans cut into ½ inch pieces. Cook the chicken in a soup pot with the broth, peppercorns, bay leaves, thyme and garlic. Bring to a boil over high head. Reduce the heat to low and simmer very gently until the chicken is cooked. Remove the chicken from the pot and let cool. Remove meat from bones. Strain broth to remove peppercorns and herbs. Bring strained broth to a boil and add leeks, celery and carrot. Cook a couple of minutes and then add sweet potatoes and regular potatoes. Remove vegetables from broth to a bowl with the chicken and set aside. Make sauce, by melting butter in a saucepan over low heat. Add flour and then cooking stirring frequently with a whisk, until the mixture develops a nutty smell, about 2 minutes. Slowly add half the broth to the roux, whisking constantly until the sauce thickens. Add the rest of the broth along with the cream and chopped thyme. Increase the heat to moderate and allow the sauce to simmer, stirring occasionally, until it is well steeped with the flavour of thyme. Remove the pan from the head. Add the vegetables and chicken to the sauce. Add frozen peas. Season with salt and pepper. Spoon filling into the pan. Cover with pastry, trucking in edge to seal toside of pan. Reroll the dough trimmings and cut out several leaf shapes to decorate. Make small incisions in the crust to allow steam to escape. Bake in a 375 degree oven until crust in golden brown, for about 50 minutes. From Thibeault's Table

Thanksgiving is the only day we eat turkey. The rest of the time, give me a roast capon or a duck prepared almost any way at all. DH and I are just not turkey lovers. My niece makes a very fine brined and roasted turkey, but once a year is enough for us. We're sauce and gravy people. Stews, braises, casseroles - we love them. I do a fair amount of cooking and a lot of dining out, and we hold that a fine sauce is a work of art. Even though we eat a lot of steaks and roasts, a great sauce is always to be admired. There are too many bad ones around to not acknowledge when something is done correctly. One of our favorite restaurants does a great poached monkfish. This is the fish known as "the poor man's lobster" for both its taste and texture. It's a great little fish, with wonderful flavor. But nap it with Amoricaine sauce, and it rises to a whole 'nother level. This is a Bretonnese classic, and for good reason. Red wine and marrow Bordelaise on a rib-eye? Absolutely! Black truffle cream sauce on a filet? Yum! Mop that goodness up with a well made starch - roasted fingerling potatoes, barley risotto, fresh pasta, freshly baked bread rolls. Gravy and sauce was the way to extend meat to feed a lot of people. Most of the world still loves sauced dishes as treasured childhood memories. Like soup, they are warmth and comfort, soothing and homey. Chicken strips that are velveted and steamed with lop cheong sausage (classic Chinese technique) are stunningly tender, almost as soft as sous vide but we like the flavor and texture better. Perfect with a roasted garlic-oyster sauce gravy over lots of rice! Far better than stir-frying or roasting. As Charles Phan of The Slanted Door restaurant in SF points out in today's WSJournal, steaming is considered the ultimate test of a professional chef in Asia. Getting back to the NY Times' and Pepin's suggestions for steaming, one of the greatest dishes in Chinese cuisine is steamed sliced chicken breast with thin slices of Hunan ham. My mother introduced me to this dish (she took classes from one of the leading Chinese restaurateurs in San Francisco) and it still ranks with DH and me as one of the three finest poultry dishes we've had in our 45 yrs of dining. A glaze should always be light. Heavy-handedness is the mark of a bad cook. Peking Duck would not be the same without the glaze applied, for example.

Report: The Beijing duck was very tasty but I did too much glazing during roasting, so the skin looked and tasted good but was not crispy. My friend salvaged it with a torch. The sous vide duck was tasty but just a little not right. I think 36 hours was too much, the texture was too soft - but now I know that another 36 hours will probably produce duck pate. The dry brined, slow cooked, deep fried pork cubes with gravy were really quite good. But how can you go wrong with that. The smoked turkey that my friends brought was great. Woodstock Wine & Deli smokes about 30 turkeys for Thanksgiving and I'm told you need to be friends with the owner to get one. This couple also brought a magnum of wine and butternut squash soup. We served the soup first with each guest's initials drawn on the surface with piped-on cranberry sauce. The roast turkey that my other friend brought was good. Roasting doesn't produce as flavorful meat as smoking, I think, but he did a good job and the breast was nicely moist. The sous vide roasted garlic mashed potatoes was not great. DD says I didn't cook the potatoes long enough so they mashed poorly. I say there wasn't enough butter and cream. I do prefer French style, very soft mashed potatoes. The horseradish mashed potatoes was good. My friend with the blowtorch brought these. The creamed spinach was fine. I cheat big time here, simply melt a stick of cream cheese into a potful of spinach along with a little bit of garlic and onion. Sometimes I add cream and Amaretto, didn't this time. The sweet potato with marshmallows was, well, not how I personally would eat sweet potatoes but it is a traditional Thanksgiving meal chez SWMBO so that's that I did not try any of the pies or desserts. I'm told SWMBO pumpkin pie was a hit. There was beet argula salad, kale salad, fried rice, and a couple other dishes. I didn't try any of that. We really had too many people. It ended up being 24, because of a couple of last minute invites and one guest of a guest who I'd forgotten about. We had to pull in a third table and moving around was tricky. But people had a good time. Cleanup was a trip to the bad old years (2012-2017?) when I didn't have a working dishwasher. We used fancy china and glassware with gold accents and rims, and it all had to be washed by hand. I've gotten used to being able to wash up a big dinner party in less than an hour, with Hobart the Magic Dishwasher. No such luck, we were up until 1 am washing and then I had to finish the rest this morning, after getting up at 5 am to take Kate to the airport for her short trip to Berkeley. Actually we have just finished getting the house back together - it is dinnertime Friday now. It's been a nice day though, with napping and low key cooking interspersed with cleaning and putting away. I made stock with all the roast duck remains, and used that for a duck-mushroom-tomato-kale soup that we are having for dinner. DS has a (edit: cold, not child) and made chicken noodle soup for our lunch. It's been a liquid diet kind of day. I was going to post a picture of DD helping in the kitchen, but we were both too busy. Before she started cooking, she worked on a painting in the foyer. I took a photo of her painting. Well, actually she'd left by the time I took the picture. So just imagine DD sitting in this blanket nest, painting.
