A Food Processor to Puree Raw Sweet Potato?

Good Evening All. I joined just so I could ask this question but I put in a good sized garden each summer so I'm sure there's lots I can benefit by here. I hope this is in the right spot, sorry if I goofed.

I need to puree raw sweet potato, no added liquid. Is there a food processor that will do this? My food processor and blender are both over 30 years old and neither will do it. Plus the blender needs liquid added and I don't want any extra liquid. I will be doing other very, very hard vegetables like beets, squash and turnip too. They all have to be raw and cannot have liquid added. Grating does not get the material fine enough, it must be pureed. Is there a food processor that will do this, have you done it? TIA

The only machine I can think of, BUT I have no prior experience, is a Vita-Mix. A very high-powered food processor/blender.

Some members here own a Vita-Mix so hopefully they will chime in, with yay or nay.

Without testing it in my Vita-Mix, I would think the blender would liquefy rather than puree the sweet potato. If you did try it in a Vita-Mix, I would cut the sweet potato into small cubes first. Generally speaking, in order to puree you would need to cook it -- steam, bake, or boil -- to get the smooth creamy texture associated with a puree.

Other options would be to grate the sweet potato on a box grater or run it through an old-fashioned Meat/Food Grinder.

Hubby loves potato pancakes and also cole slaw & carrot salad. I used my Cuisinart for 25 years, nearly every night, for shredding and it was great. After it broke, I ended up replacing it with a KitchenAid FP, which I also love. It is an 11-cup model AND features a mini-processor inside of the regular one. So, unlike Cuisinart, which would require that you purchase a separate machine for mini-size work, such as chopping garlic and the like, mine was an all-in-one deal. It is hard to describe, so you should do a Google search and take a look at some pics. We have been very happy with it and like the others, I use it and then throw it in the DW. L

Another stand mixer owner here. Like meskauskas, I have a Viking stand mixer. Santa (er, Mr. Marv) bought it for me for Christmas. It was a replacement for an old KA that went to mixer heaven. I researched many brands and models and decided that the Viking would fit my needs. I have the 5 qt/800 watt model, which is perfect for me. I decided that the 7qt. model would be overkill, since I usually bake quite frequently as opposed to large quantities (I find it very therapeutic) and there are only two of us at home. I bake alot of bread and do desserts at least twice a week, as well. It can handle a double batch of bread dough with ease, and makes quick work of cake batter, cookie dough, etc. King Arthur Flour/Baker's Catalogue is a good place to start if you have questions. They are very knowledgeable and use many products in their test kitchens. They will give you alot of feedback, answer questions and ask you questions (like how many times a week do you bake, what do you bake, how many people are in your household). I would suggest calling their toll-free number and ask to speak to one of their bakers. It might be a good place to start. One of the criteria for a replacement mixer was how much room it would take up, and how easy it would be to move. The Viking has wheels on the back, so it's very easy to maneuver around the countertop. I'm extremely happy with my choice. I also have a food processor, which I use for shredding veggies, pureeing soups, etc. I very rarely use it for baking ingredients, except for the occasional pie crust, where you need speed and little kneading. Here is a link that might be useful: Viking mixer

Last week while shredding yellow squash for kugel, my 1980's Cuisinart that I got second hand from my mom, kinda broke. The shaft cracked and now the shredding disk tube cracked too. I don't think I can replace the shaft, I can't see any way to detach it. I really hate the idea of replacing this thing. Newer appliances are even shoddier, IMHO, if that is possible. My newer Cuisinart blender/small food processor is almost completely broken up, the plastic on the bottom of the bowl broke so it doesn't lock in place, and the feeding tube is cracked. It's a different kind of plastic from the older Cuisinart one, more brittle. I use the Cuisinart basically to do things that calls for large batches--like shredding cheese, chopping nuts, making bread crumbs, pie crust, chopping up parsley to freeze, pesto and other herb pastes, hummus. I have never been able to finagle coleslaw.

To dehydrate kale: Wash thoroughly. Remove stems (save to use in another dish, stir-fry, or soup). Cut the kale leaves (kitchen scissors work well for removing the stem and cutting the large leaves into smaller portions) or tear the kale into manageable-sized pieces. (After you've made dried kale once, you will decide what size/s of pieces work best for you and fit in your dehydrator.) Dip the cut pieces in an acidic water bath (1 t. citric acid powder, OR vitamin C powder,OR Fruit Fresh per quart of water). This aids in preventing bacteria growth, helps maintain color, and adds a little vitamin C. Drain (I give the cut pieces a gentle spin in my salad spinner). Place same-sized pieces together in a single layer on a dehydrator tray - or on one side of a tray if you mix sizes on a single tray. Equal-sized pieces will dry in approximately the same amount of time. If you put a combination of large, medium, and small pieces together on the same tray, the small pieces will finish drying first, and you will need to remove them so they don't over-dry - so keep the same sizes together as much as possible. Dry between 105-120-degrees F. until crispy dry (or about 4-6 hours). When crispy, allow the kale to cool to room temperature while on the trays (20-30 minutes). Don't let the dried kale sit in high humidity or it can rehydrate, and if enough moisture is absorbed, it can mold in storage. As soon as it is cool, store in an air-tight container and keep in a dark, cool place. This is a great way to "save" some less-than-perfect kale you forgot in the crisper drawer. -Grainlady

I have a new vita mix. I'd try the wet-grating technique as for hash browns or slaw, drain, and then while still quite damp run it through again on "Variable 3" pulsing 3-4 times. Maybe, "Variable 5?" (the same speed used for grinding meat, say, for meatballs/meatloaf.) I do not have a sweet potato right now or I would give it a try. Might get one today and give it a try...

I spoke to two VitaMix distributors and both say I'd have to add water.

To re-emphasize; NO cooking first and NO water added. No joy for me?

I wonder if a sausage maker would work? I have never tried this, but you could email a manufacturer or two. Waring makes one. I have made sweet potato purees in my Magimix with the "Mash and Puree" attachment, but I have done that with cooked sweet potato only.

I'm curious as to why you are making raw sweet potato puree? I'm guessing you have a reason for making this, and it cannot be cooked or liquid added.

Our Cuisinart food processor does a very good job grating beets and potatoes. I just tried taking a grated potato and using the blade to puree it. The result was certainly ground up finely, but it was pretty thick: like bread dough. If this is the consistency you want, then this method might work for you. Note that I did a white potato; I suspect a sweet potato would be easier to work with.

BeesNeeds, good question. It's for my dog who was very sick earlier this year and we thought he would die from Inflammatory Bowel Disease. Thanks to his new, Holistic Vet he is alive and well and she endorses the BARF diet, Biologically Appropriate Raw Food. I did bake the sweet potato but she prefers absolutely raw. Apparently dogs can digest hard vegetable matter if it is very finely ground or crushed. A couple of nights ago I shredded some beets. They were about the size you'd use on carrots if you were making a carrot cake. And they exited the dog in the same state, in other words he did not digest them. Liquified sweet potato would be as good as pureed, as long as there is no water added.

Awwww poor pup.... I was wondering if you could grate in the FP and then chop with a blender or the FP? I just got a vitamix - it obliterates stuff. It does say to add water but maybe pre-grated would work. Good luck to you and your dog. I have experience with a dog with digestive issues. No fun for both of you.

I have not done this, but I think it is possible, if you must puree without adding water.

Get a juicer to extract juicy first then add the juicy to the pulp in a blender.

Until you get something that works, add water, blend or process and let the water drain, or press it out.

Just an update to let you know, a dog forum friend has a Vitamix and she generously put a sweet potato in hers and sent me a video of the output. It's good, better than my +30 year old 4.2 amp GE can do. But not around $500 worth better. It's not completely mushed up either, certainly not what you'd called pureed. I tested mine again, food processor and then on the dog and got acceptable output so I'm saving my money till mine breaks and I have to get a new one.

Oh, I did buy a juicer to try as well, on Halloween. A Salton VitaPro. Same output on the sweet potato as the very, very much more expensive Vitamix. However the juice pulp is very wet so it's ok for the dog but not a good juicer. It's going back.

Thanks everyone for all your help and suggestions.
