CF sighting on Rachael Ray today!

Guess what, CF, we have a celebrity among us! Alexa (Caliloo) was on the Rachael Ray show today. Not as an audience member, but as a bone fide guest cook. Alex auditioned for, and was chosen as a guest to do a satellite cook a long with Rachael. It was a thrill to see Alexa chatting away with Rachael during the show. Hopefully Alexa will post a little bit more about the experience.

I had cable for a while and now watch it when I am home. I had FN on almost constantly. I loved the cooking shows, but most of the ones I love aren't being produced anymore. I still get a lot of recipes off the FoodNetwork Web site. My all time favorite Food Network cook to watch is Michael Chiarello, for so many reasons! I have tried some of his recipes, they are mostly good, but not ones I will come back to, most are too elaborate for single me in my tiny kitchen to pull off. But I can dream . . . As for Ina, I love watching her show, she clearly loves to cook and entertain. But I have NEVER made a single recipe of hers. They all start with, "Take a 1/2 lb. of butter . . . " Nothing wrong with that as far as cooking and taste is concerned. Butter makes everything taste good and is one of the secrets of French cooking. But I simply cannot eat or cook like that. This is not a criticism of Ina or her recipes, she is what she is and makes no apologies. But if the question is what recipes do I use, it would not be hers. But she is a great cook, so if you need a "reliable" recipe that will taste great, yes, Ina can do that. Butter is a reliable friend in the kitchen, that's for sure! :) I greatly enjoy Giada and Rachel's shows too. My experience with their recipes has been mixed--some are fantastic and some are not good at all. Being vegetarian there are only certain recipes of theirs I can make. As for Rachel, as I once heard Mario Batalli say, "This is how America cooks." Since so many of us are trying to pull together a meal quickly when coming home from work exhausted, I find her approach fun and inspiring, particularly for newer cooks. Two men whose recipes I often like are Bobby Flay and Tyler Florence. Most of Bobby's stuff I do not make since it is meat, but I find that the man has a real way with other ingredients too--he's a mean vegetarian cook. Tyler just seems to cook the kinds of things I like to eat--emphasis on Mediterannean flavors. Now, that said, my favorite cooking shows are on PBS, and these are ones I use VERY often for inspiration. My ALL TIME favorite is Lidia Bastianich. Her show comes on Saturdays and I cannot tell you how many times I have been inspired to make something after watching her show. I also love Sarah Moulton's show, "Weeknight Meals." She has great guests, and lots of good vegetarian fare. And MS Everyday Foods show often has a recipe I'm inspired to try. Nothing fancy, just great versions of the classics. I love watching Jacques Pepin of course, but have not made many of his dishes, again, mostly due to the meat issue. I enjoy the "America's Test Kitchen" show, but again, mostly meat, and the recipes I have tried have been OK, but the blather about these being special secret definitive ways to do things just doesn't wash in my experience. I have one of their cookbooks and nothing in it so far has been fantastic. I did have a pumpkin cheesecake at a friend's house from their recipe and it was by far the best I have ever had, in fact the ONLY recipe for that concoction that I have liked. Alton Brown is Too Much Information for me, although this is not a criticism. Again, I just don't cook that elaborately. I've also enjoyed Steven Raichlin or some such spelling, he has a barbecue show, but I don't barbecue. I like a lot of shows I don't cook from, like Rick Bayless' show, etc. But I just don't use their recipes. I think Emeril is really a very good chef, but like most of you, I find his recipes are just too fussy. But that's the way great chef's cook--it's the little extra steps and attention to detail that make their food so great. NOT my style though. I have to stick with simple things that still taste good for recipes I will actually use.

Nina: I'll have to finish off with the Yellowjacket story. I had to redo the inside of a 1 story Kitchen, for a friend, who reminded me of Bill Cosby. This was in the Pine Barrons of New Jersey. It included redoing the roof. That had to be done first, so there would be no leaks. I put the ladder up and climbed to the top. Got on the roof about 5 feet from the side wall. It was cinder block with a Terra Cotta capping. The end was open (cement was missing ) I saw a Yellowjacket standing Guard there as others were flying in and out. NOW !!! As I moved around he followed me. SO I moved farther away! He came towards me like he was going to attack. Very slowly, I got down off the roof. I went in and told the owner about the Bee's. He said "I'll take care of them tonight , when it gets cooler out side " I guess it didn't get cool enough, because when we came back the next morning, He had about 20 bumps, all over his bald head. It looked like some took a Ball Pean hammer to his head or my Grandmother's Wooden Spoon when she was really mad. I asked what happened, in between us all laughing. He said " I went up and stuck a torch in the hole, Man they came out like Kami- Kaze's. I was down the ladder and in the house in 2 seconds. To top it off, he was re-enacting the scene and swinging wildly and hit a tree branch. GUESS WHAT !!! Bees came out of the tree, after him. We ran the other way, and jumped in the truck. We met him inside later. You guessed it ! he had more bumps on his noggin. He did get rid of them that night. Said he almost set the house on fire. Threw gasoline in the hole first. BUT! he didn't get bit ! Is this story, good as the tablecloth caught in the Zipper? Let me know if anyone wants this Post continued into another. Have the Title picked!!! LOU

I'm not staying at my house this week so I took a look at what Amazon reviewers have to say. The book does not use canned soups. Though the attached review may not sound all that positive, it does answer the question of ingredients, etc. "I usually rave about Cooks Illustrated books because they are the best all-around cookbooks out there, but I have to rant a little about this one. The idea behind Cover and Bake is to improve on classic casseroles by getting rid of sub-par ingredients like cream of mushroom soup and pre-packaged bread crumbs, and simplifying cooking procedures so as to allow as much one-pot cooking as possible. The people at Cooks Illustrated make a lot of references to "Tuesday night dishes," i.e., main courses that can be prepared, cooked and served quickly and don't result in a lot of clean-up. This, however, isn't that book. The dishes that look so quick and easy when you watch them on America's Test Kitchen aren't so quick and easy at home because they have someone else to pull the leaves off of enough fresh tarragon that they have 3 tablespoons ready and waiting when they start cooking their Chicken with Spring Vegetables. When at home you have to trim and cut the chicken, pull the leaves off of the tarragon and chop them, wash and cut leeks, carrots, and asparagus and measure out cream (rather a lot of it) and chicken broth as well as various spices, and make home-made bread crumbs in the food processor, it all adds up to several hours of preparation before the casserole even makes it into the oven, and along with the casserole dish itself, you end up with a dutch oven, food processor, cutting board, knife and several prep bowls to clean. You can make the basic dish in advance, but you still have to wait for the mixture to chill down before you can put it in the refrigerator, and you have to leave it out at room temperature for an hour before you can put it in the oven. Yes, it tastes much better than the chicken casserole you would make with precut pieces of chicken and cream of mushroom soup, but unless you make it on a weekened and have someone to take it out of the refrigerator for you before you get home from work, it's not a quick and easy weeknight dinner. As mentioned by someone else, this also isn't healthy eating. Most of the dishes have cream or cheese, and vegetarian isn't a word the folks at Cooks Illustrated seem to have learned, although the dishes seem to have a lot of mushrooms. Even the side dishes aren't truly vegetarian as a lot of the recipes in the book use one form or another of pork for seasoning, or otherwise rely on cheese or cream. For a book called Cover and Bake, I certainly expected at least some recipes which make star use of grains, rice, beans and vegetables, which are nice to have even for meat eaters. Those also aren't here. These are basic beef, pork, chicken and fish with rice and/or potatoes and they are hearty dishes. The side dishes are basically rice dishes to serve with the meat. Don't get me wrong -- the resulting food tastes good. But their "paella," for instance, bears no resemblence to paella. It's shrimp with tomatoes and rice and while it's quite tasty, for an expensive dish, it just isn't the star it ought to be. When you make a dish that calls for 1 1/2 pounds of extra large shrimp, which is going to run you at least $25, plus the costs of the other ingredients, the dish should be more than tasty -- it should be spectacular. No one is going to complain about this dish, but it's doubtful they are going to rave about it either. On the plus side, everything is extremely easy to prepare, especially if you like making food that serves 4-6 people and makes use of 9"X13" baking dishes, dutch ovens, and large skillets. There are, as always, plenty of useful illustrations, and the instructions are easy to follow. I'll use this cookbook since I still like the idea of dishes I can make over the weekend and keep in the refrigerator for several weekday uses, but it's not going to replace Cooks Illustrated's New Best Recipe or The New Basics or other recipe collections I own. This is really for people who like chicken and rice, beef and potatoes and other combinations that classically go into casserole dishes with thick and creamy sauces. If that describes you, this book is probably a 5-star book for you. Otherwise, you may search hard for recipes that sound worth the trouble." I was wondering if anyone caught this. After the show I went to the conversation side to see if Alexa had posted she was doing it.

I can't usually deal with watching Rachel Rays show, but today I was messing around getting ready to set up the new digital box on the tv and they were showing previews of the show. Kelly Rippa and Mark Consuelos were going to be on so I liked that. Then, to celebrate her new cookbook she had 100 people in her studio and 100 people out in Los Angles cooking as well as 5 people cooking in their kitchens. Alexa was one of the five. Boy was I surprised when they showed the person from Philly and it was Alexa.. lol. She looked like she was having fun when Rachel talked to her. They did all the cooking in about the last 15 minutes of the show but it was a cute concept.

Thanks everyone!

It was an enormous amount of planning, calls, skype meetings, photos, etc and a lot of fun. I guess there were a lot of people that applied from the Philly market and after many many rounds of phone interviews and photos, etc... I was selected. It has been in the works for a few weeks and they actually did the skype cookalong last Monday & Tuesday. I never realized just how much goes into coordinating something like that, it was an huge effort from producers and assistants who were (fortunately) very nice and helpful throughout the process. I actually didn;t even get to see the recipe until a couple of days before we shot the show! I was sworn to secrecy throughout the process.

Unfortunayely, there was so much going on in the final editing, I am not even cooking LOL! Just the intro made it and the portion I did for the commercial in the Philly market. Several people mentioned to me they saw the commercial so I guess it got quite a bit of air play.

It was a lot of fun and I am really glad I got the opportunity.

I forgot to post the recipe!!!! LOL! It is from Rachael's most recent cookbook.....

Honey Mustard Chicken
Ingredients:
Ã¢ÂÂ¢ 18 ounces chicken tenders, cut in half
Ã¢ÂÂ¢ Salt and pepper
Ã¢ÂÂ¢ 1 1/2 tablespoons EVOO, a couple of turns of the pan
Ã¢ÂÂ¢ 3 tablespoons butter
Ã¢ÂÂ¢ 2 carrots, peeled and thinly sliced on an angle
Ã¢ÂÂ¢ 1 large parsnip, peeled and thinly sliced on an angle
Ã¢ÂÂ¢ 1 large shallot, thinly sliced
Ã¢ÂÂ¢ 2 tablespoons flour
Ã¢ÂÂ¢ 1 3/4 cups chicken stock
Ã¢ÂÂ¢ 1 tablespoon Worcestershire sauce
Ã¢ÂÂ¢ About a 1/4 cup Dijon mustard
Ã¢ÂÂ¢ About a 1/3 cup honey
Ã¢ÂÂ¢ 2-3 tablespoons flat leaf parsley chopped, for garnish
Ã¢ÂÂ¢ (have done and on serving plate) split corn muffin, cut side spread with a little butter then griddle until golden brown and toasted
Instructions:
Season the chicken with salt and pepper. Heat EVOO, a turn and a half of the pan, in a skillet with tight fitting lid over medium high heat. When oil is hot add chicken in single layer and cook to light golden in color, remove chicken to a plate and add butter to skillet and melt, add carrots, parsnips and shallots and season with salt and pepper. Cover pan and soften vegetables 2-3 minutes, stirring occasionally. Uncover pan and sprinkle in flour, stir 1 minute or so, stir in stock and season with Worcestershire sauce, mustard and honey, add the chicken back to the skillet and thicken sauce to coat spoon. Serve with griddled buttered corn muffin toasted on griddle pan. Garnish with parsley.

But I must say that Ken kept asking "when is Alexa going to cook" LOLOL - turned out that the answer was "never" - haha. It was great fun and I congratulate you on being brave enough to do it!

Sorry I missed that, Alexa...what fun! I was home today and RR was on while I was cleaning the kitchen, but I had to go town so I missed the second half. Sheesh.

I'd like to know how the chicken was, too!

Thanks everyone - it really was a fun experience.

The recipe is good, but like any card carrying CFer, I would probably tweak it just a bit LOL! I actually think it would be even better with salmon chunks, sprinkled with fresh dill and served with plain couscous and a salad.... but I'm not sure that would appeal to the RR audience LOLOLOL!
