Left over pizza I made from scratch yesterday.....pepperoni & sausage! Delicious!!!!

All day long, I've thought this was Wed. Was even getting ready to watch Survivor tonight. Then I went online to find the weekly ad for local DrugMart that comes out on Wed. I wondered what happened as it was still showing through the 26th. The message finally got through. lol

I made my own chili today. That, plus the salad I forgot yesterday, made up my evening meal.

I am making the bubble up enchiladas recipe I found recently. There's a few versions I am going with this one because I think additional beans and corn sounds good.

We haven't had quinoa in a while, and we both love it.
I stir-fried some carrots, onions and green peppers. I then made a little sauce with honey, olive oil, and balsamic and some spices like cumin, curry and cinnamon. I mixed it all together and threw in some ham and chopped baby spinach.

It was good and healthy.

Today was a lazy day. I had a dentist appointment after which I stopped at the golf club to finalize plans for opening day luncheon which is Thursday. Stopped in Home Goods...it just opened on Sunday. It was mobbed. Left pretty quickly and decided I'll return sometime next month after the newness wears off. I had a headache by the time I got home so sat and watched T.V. waiting for the aspirin to take hold. Then I went back to reading my book. It was a little warmer today....48. I real heat wave. I decided to put on my jammies and robe to keep warm and I'm presently heating up some chicken soup. God bless the freezer!

I'm a bit under the weather today. All I wanted is a simple soup. I made just plain rice porridge. It's just rice cooked in lots of water. There was no seasonings on mine today other than plain fish sauce. Somehow that was a satisfied meal (early dinner). I need to go back to bed...

We had barbecued chicken and coleslaw, also very bad, very mushy fried potatoes. The sun was out! Patti, I think it is a hoot that you mixed up the date with Nita and Mike!

Jasdip, I'm going to have to try quinoa again. We just didn't care that much for it. Maybe it was the recipe I used.

Georgysmom, doesn't sound like a lazy day to me. You got a lot done. I sure wish we'd get a Home Goods. They have one in G-ville so maybe next time we go over we can check it out. But ususally we do lunch and by that time I'm ready to go home. Hope your headache's disappeared.

Ntt_hous, poor baby, I sure hope you feel better tomorrow. Sleep all you need to--at least you don't feel so miserable while you're asleep.

'Taint funny, Pam! I swear I'm losing it! At least Nita didn't show up a day early--yikes! Glad you saw sunshine and just saying, I like mushy fried potatoes.

Patti, a number of recipes call for cooking the quinoa for 20 minutes. That is far too mushy! We like it with a bit of crunch, and bite. 14 minutes is perfect for us.

Raven, now how did I miss your dinner post? I'll be anxious to hear how the bubble up turns out. Sure sounds good and pretty simple, too.

Jody cooked. Pork chops. We had pork chops and that's all. I offered to make some sides.....but, he said he just wanted pork chops....so that is what we had. ;)

Patti I am reporting back on the bubble up enchiladas. I probably wouldn't make it again as the recipe is I would make changes, it was just okay, my husband ate quite a bit of it. I think the problem was I had way too much biscuits in it. I had 2 small cans of small biscuits 7oz each so I used 2 cans to equal the 16oz the recipe called for. I think that is too much. Mine did look just like the picture which shows a lot of biscuits in there. I might try it again but use much less biscuits and I would use the flakey grands type and separate layers of the biscuits. The ones cut into quarters were just too much once they puffed up. There was very little liquid left because the biscuits sucked it up. I did add black beans and corn and onion and some taco seasoning, it would have been very blan with out those additions.
The taste was good, I also added sliced black olives and I used the ground beef lean. I think if it was made using about 4 of the flakey grands biscuits we would have liked it. I also would put the biscuits in the casserole dish then add the cooked meat and stuff on top and mix. It was a bit messy trying to dump all of that into the casserole dish, glad hubby lent a hand.
