I love bean and bacon soup!
Snow showers tomorrow, and I have a burrito soup to make, just in case, with tortilla dumplings.

Went Mexican today, to a restaurant I haven't been to in a long time.

ala carte beef and cheese quesadilla ** not ground beef, but shredded and excellent. One large tortilla folded in half.

I'm not quite sure about dinner. Yesterday and today were pretty busy. Yesterday I got up at 7:00, steamed the laundry room floor once again since it was already clean I thought I would do that and the kitchen floor again before putting away the steamer. Then I dusted and vacuumed the kitchen and family room. Then I gussied up and went to lunch with my lunch group after which I met my movie ladies group and went to the movies. got home at 5:00 and at 5:30 went to dinner with DH. At 7:00 I went to Mexican train. Today I did several loads of laundry, stripped and remade two beds, ironing the top sheets and pillow cases. One King and one queen., started going through my clothes to pack for vacation and to see what I want to buy in addition to what I have. We'll either have left over chicken Moran or I'll defrost some pea soup. Either way I'll have to make a salad.

We just finished pasta puttanesca. I toasted some focaccia and rubbed a garlic clove over top and then some parmesan cheese.
Our mouths are still dancing! (o:

I am using the last of our fish and making fish tacos with avocado slices, baby spinach and diced tomato and onion, oven roasted corn on the cob to go with it and for hubby some of his favorite Borracho beans.
Did you know that means drunk beans or drunken beans? YEP they are cooked in beer.
Borracho Beans are a tasty way to cook pinto beans in beer with the crock pot or on the stove

I have never actually made them so no idea if that is a good recipe or not but it was informative.
I buy them at the grocery store in the refrigerated section they come in a heat and serve tray, I can not remember the brand but he loves them.

Glenda, your quesadilla sounds so good. Harry just loves them. Been thinking about buying a quesadilla maker. If anyone has one, is it worth it? I have a hard time turning them over without one. I like those tortilla dumplings. Sure can fool you, can't they?

Georgysmom, I need your vitamins!! Girl, you have the most energy!! Where are you going on vacation? Hope it's someplace with plenty of sunshine and drinks with umbrellas in them ;-) You deserve some time out!

Woo hoo, Jas! Got any leftovers? That sounds delish! No such thing as too much garlic.

I made a piece of toast and put my pulled chicken on it. Rest of meal was various leftovers......a spoonful of this, a qtr cup of that. Best of all was little prep time, and not much to clean up.

Wouldn't it be nice if I could just go to various KTers refrigerators and take a little of this and a little of that of their leftovers. lol

raven your beans sound like the recipe I have for refried beans without the refry except for the beer and the cilantro. Fish tacos sound yummy. I think I will try them some time in the near future.

Patti, I didn't sayI wasn't tired after the last two days. LOL
I wish I could say I was going to take it easy tomorrow but I have some friends picking me up at 9:30 tomorrow morning for a little excursion after which I will do some running around on my own. We wound up having split pea soup tonight. I did forgo the salad and pulled some light wheat rolls I had made out of the freezer because when I went to the kitchen to prepare dinner, there sat my 9 x 13 container I put fresh fruit salad in reminding me I had to make some. That alone takes about an hour. It's half done and I will finish it up after Jeopardy. We have fresh fruit (grapefruit, oranges, tangerines, apples, grapes and bananas) every day. I must admit sometimes I let it run out on purpose so DH will appreciate my efforts instead of taking me for granted. LOL

Made a big pot of vegetable beef soup and crusty rolls to take to a neighbor today. So, of course, that was what we had for dinner, too.

Hard cooked eggs in the fridge, so made creamed eggs, with bacon bits, over leftover biscuits from last night, and peach yoghurt for dessert. Now I'm having a tiny glass of reisling.

Raven, your fish tacos with avocado sound so good. Did fry the fish or ??? I've never made them but I always look at the recipe when I see them on Pinterest.

Shirley, good way to clean out the frig. Don't come to my house for leftovers--I cleaned out the refrigerator today so it's slim pickings. :-) But I'd be willing to go with you to OP's homes--haha!

We have fruit every day, too, Georgysmom. But lately not so much for dinner because Harry has it for breakfast AND lunch. I told him one day that there was Greek yogurt in the frig if he wanted it with his fruit--and he loved it. So now, it's a banana and strawberries in his cereal for breakfast and more fruit for lunch with yogurt. He doesn't need anymore--has to watch his potassium, too. We watch Jeopardy every night while we eat dinner. It's a habit that started back when we were first married and we've done it since then.

Clubm, I make stuffed portabellos sometimes in the summer. I fill them with a mixture of finely chopped fresh tomato, mozzarella and other things I forget right now :-) They sure are good on the grill. Don't think I've seen them in the groceries around here already stuffed.

My dh bought them in Costco. They were very good! Stuffed with
crab meat and shrimp . Your mushrooms sound yummy also

We had errands to run, so ate early....went to a barbecue place and had ribs.

Had a very healthy dinner tonight - tossed salad with all sorts of veggies, chopped boiled eggs and cheddar cheese. Then went to DQ for a caramel sundae to balance out all that healthy food!

Azzalea, we're supposed to get down into the 30's tonight and high 20's tomorrow night. High today 57! Vegetable beef soup is always my favorite thing on cold nights like these. I'm sure your neighbor is very appreciative.

Phyllis, my grandmother used to make creamed eggs for breakfast sometimes. She wasn't a great cook, but she always made a fine breakfast.

Clubm, no Costco here, but we do have Sam's. I'll have to look next time we're in there.

Marilyn, how I wish we had a good BBQ place around here. All we have is Sonny's (to my knowledge) and it's not all that great.

Stacey, I just buy a 1 lb. bag of beans and soak them overnight. I cooked 7 slices of bacon and drained them on paper towel. Added about 2 Tbsp. of the bacon grease to the beans and later added the chopped, cooked bacon. A little salt and pepper and cook for about 2 hours on low heat. You can use salt pork, too, but this way I can control the fat a little.

I've been baking my bacon and I'll never fry it again. Just preheat the oven to 375, line a cookie sheet with sides with foil or parchment, lay the bacon on without the pieces touching and bake 15-20 minutes. Mine is usually done in 18. Don't cook too long or it gets hard as a rock :-) There is no splattering and very little mess to clean up. Plus you can do a whole lot at one time.

The dumpling recipe is on the Bisquick box and since my beans were soupy I just plopped them in with them. Usually I cooked them in boiling water and put them in the bowl and pour beans over the top.
