Oh, I only cook them in the pressure cooker, too.
But I think about 40 minutes in acidulated water would be about right. I have used the steamer function of my rice cooker with good results.

I cook mine in a big pot! Super easy. Cut the bottom off, make an X in the bottom- add a bit of lemon juice. Just a few drops will work. then fill the pan with water about 1/3 up the artichoke. Cooking with lid on, med heat, for anywhere from 20 to 40 minutes. Depends on the size. When a leaf peels away without tugging, it is done!

I DON'T cook/eat artichokes, lol.

I use either a pressure cooker or steamer. Cook em a long time-maybe an hour.

Cut off the tough bottom part; place in micro-proof bowl; add a couple tbsp. water; cover; 10 minutes in the microwave on "high". Mmmmmmm

Cut off the stem and the very bottom next to the stem. Remove and throw out the last row of tough leaves along the stem area. Cut off tops of leaves with knife or scissors to get rid of the thorns. Rinse well.

Simmer in a large covered pot in salted water deep enough to cover about 1/3 to half way up the artichoke for about 50 minutes to an hour, depending on size. They are done when a slender, sharp knife inserted from the top through the center of the bottom finds the flesh yields, much like testing a baked potato. Drain. Serve with melted butter into which I squeeze some lemon and add salt and pepper. Yum.

Here, pick and choose...easy and soooo delish...

artichokes are one of my fav veggies and we eat them atleast once a week. we try to get ones w/ longer stems, put them in salted water w/ fresh lemon juice squeezed in, about 1/3 up the stem, simmer for 40-60 min depending on size. they are perfect because once you get them simmering you don't need to do anything else.

our local produce market often has premium ones w/ thick (yummy) 6" long stalks and HUGE heads that are very heavy. i want them sooo often that i compromise and do not dip them in butter lol w/ all the benefits of artichokes i don't want to negate that w/ liquid fat lol. ~ liz

I must've done something wrong because I cooked them once and they seem like way too much work to eat and didn't seem to have any flavor of their own. I amde some kind of fancy-dancy sauce, but it isn't a requested vegetable around here.

Did I get an old one maybe? How can you tell? I cooked like above--remember it seemed to take a long time. Everyone seems to like them so much and I'd be willing to try again, if they didn't turn out so blah!

I love artichokes!!!!
I cook mine in the pressure cooker also, I think it takes about 20 min. I haven't got the time down yet. I just have to keep checking. I just sprinkle them with garlic powder & salt when cooking. My grandmother used to do the bread crumbs, not me. They are so expensive I haven't bought them in over a month now.

I love artichokes soooo much. Sometimes I stuff them...witha breadcrumb(fresh), garlic ,olive oil stuffing and more often than not I just dip them in a mixture of olive oil , parmesan ,salt and pepper ...OHHH so yummy.

thanks everyone.
I found this on you tube & thought it was a great tip!

I almost burned the house down one night steaming artichokes and falling asleep on the couch while waiting. I was waitressing and got home after 11:00pm.....scared me. My brother told me that I could microwave them and that's how I cook them now. I prepare them by timming the lower leaf tops and taking off the stem and flower tops. I open them up and wash with running water. I fill them with water and put them in a covered microwave dish (with seasonings of your choice and lemon juice) then microwave about 7 minutes (for two) Then I test them to see if an inner leaf will come off easily. If not another minute or so. Easy, quick and just as good.

I do mine in the microwave and they come out perfect. I wrap them in waxed paper or a damp paper towel and nuke them until tender. I do soak them in lemon water first.
