Millet Grain

I have eaten this at a restaurant served like a pilaf and in soup and a cold salad. And I have purchased ground millet flour to make Injere. There is a Russian Deli two blocks from my house. How Russian is it? Not one grocery item in the store is written in English. They also have numerous imported deli sausages and cheeses. All the of the labels are in Russian also. Anyway, I stopped in there and decided to buy some hulled millet grain.

It is really high in protein (11 gms per 1/2 cup). That part of the label was in English.....a label added upon importation. Since the gallstone in late July, I have been trying to eat alot less meat and get protein thru grains, cannelini beans, quinoa, etc.

Have any of you ever cooked this grain? Everything I've read about it makes it sound very versatile just like rice.
