Chicken in Wine needs something more. What?

15 years ago

I made this recipe for Chicken in Red Wine Sauce. I got it from the Allrecipes site. It was very good but it needed something more in the sauce to give it a stronger flavor. I can't decide what that should be. Do you think worcestershire sauce would work? What else?

Also, next time I will add sauteed mushrooms.

* 1 tablespoon olive oil

* a small onion, sliced and separated into rings

* 1 tsp. of garlic powder

* 1.5 pounds skinless, boneless chicken breast halves

* flour for dredging

* 1 tsp. paprika

* slightly less than 1/4 cup brown sugar

* 1/2 cup red wine

* salt and pepper to taste

Directions

  1. Pound the chicken to an even thickness and dredge the chicken in flour
  2. Heat oil in a large skillet over medium high heat. Cook onions in oil until tender, and set aside. Place chicken in the skillet, and cook about 5 minutes on each side, to brown it.
  3. Drain oil from skillet. Sprinkle chicken with paprika and brown sugar. Return onions to pan and add garlic powder. Pour red wine around chicken. Cover, and simmer about 8 minutes covered and about 8 minutes uncovered; lightly baste chicken with wine sauce while cooking. Season to taste with salt and pepper.
