Found a Waffle Baker & Revised the Recipe

I have been trying to find a Waffle Baker to match my old one.

I think it was born after WW2 but it bakes good and the right thickness ( about 9/16 inch )

My wife threw the spare away, she thought it didn't work.

I was at Macy's looking around and spotted a Cusinart on sale.

It is a Model = WMR- CA (TK) and matches my old one perfectly.

Now I can bake Waffles in Stereo.

I like this thickness, because of the amount of Waffle to butter and Pancake Syrup .

Here is the Old and the New:

HERE ARE THE GOODIES :

RECIPE:

LOUÂS

Pancakes and Waffles Recipe

2 Â½ cups milk

2 eggs (separated ) .

1/3 cup of veg. Oil

2 tablespoon of vanilla

Pinch of salt

Â½ cup Sugar

1 cup of Wheat Flour

4 teaspoons Baking Powder

All Purpose flour

---------------------------------------------------------------------

Mix Pancake Batter:

Put the first 6 ingredients ( except egg whites ) in a mixing bowl and beat until smooth.

Put in the Wheat flour, Baking pwd. and some All Purpose flour.

Beat until smooth. Add enough flour to thicken slightly,

(were it leaves ripples while mixing) not thin and loose.

Beat the egg whites with a teaspoon of sugar, until peaked.

Add Â½ the egg whites to the batter and fold in easy.

Beat the other Â½ of the whites until very stiff and fold these in also.

I put plastic in between pancakes for freezing.

For Waffles:

Thicken a little more, to where you have to move it around with a spoon,

when it is put on the waffle iron . Then do the egg white thing as in the pancake batter.

When baked I cool them fast on a rack and put them in a plastic bag,

and right in the freezer.

If you overcook a little, dampen slightly with water,

before you put them in the toaster oven.

As for the waffle iron , I have a very old round one with adjustable heat Range.

It makes a waffle about Â½ inch + thickness. For me this is just right,

for the amount of butter and syrup that you can put on top.

I donÂt use the Belgium Waffle Maker ; except when IÂm adding

Ice cream and fruit topping , because itÂs too much waffle for the

amount of syrup and butter. But may be good for you.!

If I want a Belgium Waffle, I just make a double decker and

put fruit or whatever filling in between.

Then you have more cooked surface area , on the Waffles.

Luigi, my friend gave me her extra Pizzelle maker. This Irish girl does not like the ones with anisette. Any good recipes to share?

AH, I had one just like your old one, picked it up at a yard sale years ago. It lasted til 3 years ago & stopped working. My new one makes thinner waffles, I really liked the thickness of my old one.

Sorry your new iron has disappointed you, Lpink. I know how frustrating it can be to find what you think is a great product and have it let you down. I'd recommend the one I have (T-fal Avante waffe iron and sandwich maker), but it's not heavy duty and doesn't have a temperature control or done light or beep. Lots of guess work and it takes about 5 minutes for 2 waffles. Your story is why I always try to buy at bricks and mortar and not online... if the product really doesn't live up to my expectations or its claims, it's easier to take back. Of course I always procrastinate until 2 days before the receipt expires and then can't find the receipt, which is why I now have a 75 dollar Rowenta iron sitting here that leaks all over my clothes and I have to throw it away instead of return it. Anyway, I do hope you find one that works for you, please let us know!

Thank you Claire! I made the Raised Yeasted Waffles that you posted and they are wonderful. They are what I remember as good restaurant waffles as a treat after church. I haven't had them in decades. My mother didn't make waffles and Max' Mom made a recipe from a waffle house restaurant recipe. A relative owned the restaurant and his recipe was one that used breadcrumbs, also very good, but very different. I liked that you do most of the work the night before (and it was quick and easy). My batter was very thin and I think that was due to sifting the flour before measuring and trying to guess when two cups of flour was really level in an 8 cup glass measure. I'll measure then sift next time and I may decrease the butter a little. Because the batter was so thin it took a long time to bake in my VillaWare waffle iron, but they were worth the wait. They certainly made Father's Day breakfast special. Lee

There are different ways to check for different kinds of bread. I do a no knead whole grain bread when I want to limit my clean up water. It is wet, starts with a soaker and a preferment, and after mixing it rises for at least twelve hours. It's a long process without kneading. The volume only increases by about a third. There are a lot of seeds and other things mixed in which also help impede the rise, though the biggest culprit is the bran. I get my best rise by putting the mixed dough right into a terracotta banneton I can bake it in. It's not pretty but it is delicious. One checks by volume. On the other end of the spectrum, my very yeasty, sticky but not wet, double rise challah dough is guaranteed to double in volume in a short time. Usually about 80 minutes. The challah could do the windowpane test, but the whole grain won't stretch that much without breaking. I use the spring back test for whether cakes are fully baked, but not breads. Both of the above would fail. The challah would deflate. The whole grain would look insouciant and say, "Huh?" Linda is right, btw, about the gluten developing over time. Working the glop and stretching and folding is done to develop the gluten, according to the bakers who started this trend, and the sciency ones as well, but if you leave it to ferment long enough, it'll happen without. That's the point of "no knead bread". But it also takes days to make. Re the whole wheat love of your starter, that's some magic flour! Generally, they like white because it's a sugar high. Don't be scared of a happy starter! Next time you decide to change the feed, give it some of each and put it in a bigger bowl so if it grows that fast, it's contained.

Now that's efficient! We prefer our waffles made ahead, frozen, and dropped into the toaster to eat. I use recipe close to Lou's and add chopped up semi-sweet chocolate to the batter.

I know what you mean about the thinner ones.

Lucy : Breakfast is served here 24 hours a day.
By the way MT. Airy Casino opened.
It's only about 20 minutes from me. It is a lot closer than AC, for you.
I have a lot of room here , if you and your DH want to stay overnight.
I already have the Waffles for breakfast.

Eileen: You gave me the tip on the egg whites.
I keep changing my recipes but now I'm leaving it to rest.
Semi - Sweet Chocolate ??? Hymmmmm !!!

Oh Lou, your waffles are gorgeous! I like waffles but never thought to freeze them before....what a great idea.

Have you tried a waffle with fresh fruit and ice cream....ahhhh heaven on earth!

And pancakes you can freeze too? They don't get heavy and tough when reheated?

Lou, I bought a waffle maker about a year ago just to make waffles to freeze for easy breakfasts. But I've only used it a few times. The waffles stuck & seemed too thin as both you & ngraham have mentioned. Are you satisfied with your new Cuisinart? I'd really like to make a pile of waffles to keep in the freezer for quick breakfasts.

Michelle: I haven't talked to you much, lately.
I do Waffles, double decker, with fruit in the middle and Whipped Cream.
Ice cream on top, covered with Strawberry Preserves.
That's my Belgium Waffle.
Don't do that too often. I'm down to 200 and want to go more.
I have more luck freezing the Waffles ,than Pancakes.
Maybe because I like them better.
I hate Waffles that become soggy, when you pour the syrup on them.

Shambo: I love the Cusinart. I don't know if Macy's still has the Sale.
Maybe someone else might know. Or you could try Amazon.

Thanks Lou, I may check the Cusinart out for Christmas. I like my waffle recipe, but I think I am going to give your recipe a try. I also whip my egg whites, but not in 2 parts. This may be breakfast, my taste buds are thinking waffles now.

lou, that's what i have, a cuisinart. i got it at one of the auctions we attended in hazelton. i love it. i used to have an old one that belonged to my dad, but the plug wasn't up to snuff and i got rid of it...sorry that i did.

i too make them and put a few away to pop in the toaster later on. i also use them under creamed chicken, like how they do in the amish diner.

my dogs love waffles!

Oh Lou! I'm drooling! I loooove waffles but don't have a waffle maker... Not to mention that I fear if I had one I'd just gorge myself on them... But look at how perfectly browned and crispy yours are... Sigh...

Lou... Hope your birthday was nice, forgot to say hi on the birthday thread.

I have a question for you. I was given a waffle maker just like the one you have on the right. Mine only came with two legs though! The third one in the back was broken off. No wonder why it was given to me! They are rivetted on. I tried to glue craft spools on the bottom of it, but the glue melts every time I use it... and the waffle batter runs everywhere. Waffles are an all day affair in my kitchen. I know how handy you are.... do you have any suggestions on what I could do to the bottom of the appliance so that it sits level and doesn't tip over? I can take a picture if you want. Thanks for any advice you can give!

We just got a new Belgian Waffle maker and we also got two bags of Kind Arthur's Belgian Waffle mix. It is yeasty but you also beat your egg whites and fold them in at the end. I must say the waffles are heavenly!

Bobbie : If you can take a picture, it would help. Top and bottom.
Or check the Model # I'll take a look at mine,
to see if it comes apart easily.
If it is the same as mine ( Toastmaster Model 252A ),
Don't throw it away. Mine looks like it should go in the trash,
but it bakes better that any other I had before.
You might be able to use an angle bracket and put a screw into the rivet hole ,
But not too far in, to where you would hit any wires.
Cut the metal bracket leg off to the same height,
as the other legs and put a rubber boot on the bottom.
You could also use a piece of 3/4 IN. copper tubing.
Flatten one end and bend it 90 deg.
Drill a hole to put a screw thru,into the bottom of the waffle iron.
Cut the copper to the same height as the other legs.
Put a rubber boot on it, or stuff a cork in it, so it won't scratch.
It should only take 5 minutes to make the leg.
Let me know how it turns out.

Lou, have to say I made your waffles this morning. Got the first one out & couldn't wait to take a bite, so I poured some syrup over it & got busy. First bite, I thought-this has a really good flavor, a little tougher than mine. Probably mixed to heavily or something. As I was sitting there chewing, it hit me...I don't remember adding any baking powder. Checked the recipe, yep, I was supposed to add that :) So, I added the baking power & that made a difference. Actually, I'm amazed that they were as light as they were without the baking powder, probably due to whipping the egg whites. My wheat flour is a bit old too-I keep it in the freezer, but I'm not sure how much that will extend the life of wheat flour. I noticed the date said August... My son heartily approved of them at any rate.

VacuumF that waffle maker sounds like the one I got rid of. I found that I could turn the other two legs to the side and it helped balance the maker, hehe. Maybe there's a cement that can withstand heat so you can glue on a third leg, like a tall bottle lid, piece of block, etc. Lou, I may try your recipe in my Belgium WM next time we make them. Your waffles look yummy.

Ngraham: It's hard to blend the Baking Powder in, if the batter is thick.
That's why I put it in when there is still flour to add.
They should be light and crispy but tender, like me.
Sounds like they were good. Maybe the next batch will be great!!!

Terror pots: My Daughter uses it in her Belgium Wafflemaker.
She said they are better than mine. Guess I taught her right.
But she is wrong, because mine are the Best in the World.

Like I mentioned before, I don't use the Belguim Wafflemaker any more.

I think, more crust area on Baked goods,the better tasting
it will be. Like French and Italian Bread.
That's why I prefer the thinner Waffles. More cooked area.

I just stack them 2 high for a Belgium Waffle.
Everybody to their own tastes.
I think I'll taste some right now.

Lou... here's a picture or two. It works great, but I can't stand the legs melting off. I tried to glue the craft spools all around just... they are longer than the other two legs that are still on the machine so I wanted it to be even. I even tried JB Weld... it melted just as fast as the super glue. What was I thinking?

Of course the leg that is missing is the one in the back by the cord.

Bobbie: I can see that you are not mechanically inclined.
Can you have someone drill a hole for you.
If you take the Wafflemaker to a hardware store ,
Lowes or a Home Depot, ask if there is anything metal or a
Porcelin knob with a hole thru, that is the same height as
the other legs, that you can attach, with
a screw.
The screw can go into the rivet hole where the leg broke off.

Just make sure it doesn't go in too far.
Ask for a screw the right diameter that will tighten.
A 3/4 inch copper tubing, cap would work good but
you would have to drill a hole in it to put a screw thru.
Then you could put a cork in the bottom so it won't scratch
the work top.
Don't, use anything that would burn, for a leg.

INDEED! What an accurate observation! At least I gave you a chuckle :o) When I take vacuum cleaners apart, sometimes I have to throw them away because I can't get them back together.

Thanks for your expertise. I knew you would have some kind of suggestion... I don't own a drill... are power tools as fun as kitchen appliances? Maybe I'll find a man and bake him some cookies if he fixes it for me

Seriously, I'll try to follow your suggestion... maybe it will give me confidence if I'm able to do it!
