for those of you who MIGHT have some of the Irish Cream left from the cookie recipe that was posted today...

I saved this recipe from someone named Paulette many years ago on this site...it is for an ABSOLUTELY DELICIOUS Irish Cream Fudge recipe:

Bailey's Irish Cream Fudge

4 1/2 cups sugar

1 - 12 oz. can of evaporated mil

1/2 pound butter

2 - 12 oz pkgs. milk chocolate chips

1 - 12 oz. pkg. semisweet chocolate chips

2 - 7 oz. jars marshmallow cream

2 tsp. vanilla

2/3 cupa Bailey's Irish Cream

2 cups chopped nuts (optional)

Put chocolate chips, marshmallow cream, vanilla, Baileys, and nuts in a very large bowl. Set aside for later. Bring butter, sugar and milk to a boil and cook slowly for 11 minutes, stirring constantly. Pour milk mixture over the other ingredients and stir slowly to blend. (do not use mixer) Pour into a butterred 9x13 or 10x15 inch pan and chill very well...cut when cold. (if you can wait that long!!) Makes about 5 pounds.
