I have a wonderful eggs benedict casserole. Can be made the night before. ver y very easy to put together

I've made it and it was a big hit.

Eggs Benedict Casserole

6 English muffins
10-12 ounces Canadian bacon (2 packages, or use diced ham)**I bought good ham cubes from Publix. Next time I will cut them into smaller pieces
8 large eggs
2 cups reduced-fat milk (or whole milk)
1 teaspoon onion powder
cooking spray
1/2 teaspoon paprika
easy hollandaise sauce- (I just used package)
How to make it

Cut muffins into 1/2-inch cubes. Set aside.
Cut Canadian bacon into 1/2-inch squares. Set aside.
Whisk the eggs well in a 2-quart bowl. Whisk in milk and onion powder.
Spray a 9-by-13-inch glass or ceramic baking dish with cooking oil spray. Scatter half the Canadian bacon evenly in bottom of dish. Scatter muffin cubes on top of Canadian bacon. Top with the remaining Canadian bacon, scattering it evenly over the bread. Pour egg mixture over the casserole. Cover the dish with plastic wrap and refrigerate overnight, or at least 8 hours, to let bread absorb egg mixture.
Preheat oven to 375 degrees F. Remove casserole from refrigerator and uncover it. Lightly sprinkle the paprika evenly over the top. Cover the casserole with foil and bake for 40 minutes. Remove dish from the oven, remove foil, return dish to the oven and continue to bake, uncovered, until the eggs are set and the bacon on top begins to crisp, about 20 minutes more. Remove the casserole from oven and let it stand 5 minutes before serving.
To serve, cut casserole into squares and place them on plates. Spoon about 2 tablespoons (or to taste) warm Hollandaise Sauce over each serving just before serving.
Makes 10 servings.

Quiche is easy and delicious. I usually use premade crust. Just lay out in your pie pan. Then saute whatever meat and veggies you like, pour into pie crust. Mix two or three eggs with a little milk or cream and pour over meat/veggies. Pre-heat oven to 350 and bake about 30-40 min. About 15 min into baking, sprinkle shredded cheese over the top of the quiche. I sometimes add cheese to the innards too. Season however you like...salt, pepper, garlic powder, etc.

I've made all sorts of quiches but some of my favorite "insides" are onions, bell peppers, mushrooms, spinach, asparagus, garlic. I don't eat meat but have put some faux meats in there too.

Really easy!

I have made this one as well, and it was excellent. Doesn't serve 10.

Farmers Casserole

3 cups frozen shredded hash browns
3/4 cup shredded Monterey Jack cheese
1 cup diced cooked ham
1/4 cup chopped green onions
4 eggs
1 can (12 oz) evaporated milk
1/4 tsp pepper
1/8 tsp salt

Directions
Place potatoes in an 8 in square baking dish.
Sprinkle with cheese, ham and onions.
Beat eggs, milk, pepper and salt; pour over all.
Cover and refrigerate for several hours or overnight.
Let set before baking about 30 minutes.
Bake, uncovered, at 350* for 55-60 minutes or until a knife inserted near the center comes out clean.

Holiday Breakfast Bake

INGREDIENTS:
1 package (12 oz) bulk pork sausage
1/3
cup chopped onion
1/3
cup chopped green bell pepper
1/3
cup chopped red bell pepper

eggs
1 cup shredded Cheddar cheese (4 oz)
1 can (16.3 oz) Pillsbury Grands! Flaky Layers refrigerated original biscuits

DIRECTIONS:

* Heat oven to 375F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 10-inch skillet, brown sausage, onion and bell peppers; drain well.
* In large bowl, beat eggs. Stir in cheese and sausage mixture. Separate dough into 8 biscuits. Press biscuits into bottom of baking dish. Pour sausage mixture over biscuit crust.
* Bake 25 to 30 minutes or until egg mixture is set and crust is deep golden brown. Cool 5 minutes before serving.

Triple cheese & egg casserole
12 large eggs
1 cup all purpose flour
2 tsp baking powder
1/4 tsp salt
2 cups milk
16-oz cottage cheese
8-oz cream cheese, cut into 1/2-inch cubes
1/3-1/2 lb shredded Monterey jack cheese

Preheat oven to 350F. Lightly grease a 9x13-inch baking/casserole dish.
In a large bowl beat together eggs, flour, baking powder, salt and milk. Stir in cottage cheese, cream cheese and shredded Monterey jack cheese. Pour into prepared baking dish.
Bake for about 45 minutes, until eggs are set and casserole is solid.
Cool about 10 minutes to make slicing easier.

You can substitute pepper jack cheese for the Monterey to make a spicier version and add some chopped green onions.
Optional items can be added like mushrooms, onions, bacon crumbles or pre cooked sausage crumbles or finely diced ham.

This one I have used and liked, especially because you make it ahead of time.

SAUSAGE STRATA

2 slices of bread, cubed
1 lb sausage, cooked and drained
I cup grated sharp cheddar cheese
6 eggs, beaten
2 cups milk

Put bread, sausage and cheese in a greased 9x13 baking dish. Mix eggs and milk and pour over the above. Let stand overnight in the refrigerator. Bake 45 minutes at 350°. Can be frozen before or after baked.

It will serve however many, depending on how big you want the servings to be.
