The trick to most Indian cooking is to have the masalas (spices) on hand. They can last a long time if kept in airtight containers, and only need a minute or 2 dry-fried in a pan before using. After that, it really is a quite simple cuisine to prepare. And you can mix and match various masalas, rather than follow exact recipes. Experiment! Lentils and beans, too, are generally interchangeable. No 2 Indian cooks prepare the same dish in the same way... And it is a surpisingly quick way to prepare delicious meals once you've tried it once or twice! Just took a pic of my masala shelf... This post was edited by shaxhome on Wed, Apr 3, 13 at 8:38

Liz GA - Seal point mitted Ragdoll? How pretty! We have a blue point mitted Raggy. He is getting old and has beginning feline Alzheimer's - don't laugh -it's real!

Wow, a long way to go in that dust! but backroads are so much more interesting! I figure if you have gas in the tank 'There's no such thing as becoming lost' or in your case 'planned'....TFS! juanital

Thanks Gmom and Konrad. I took that picture last August in Southwest New Mexico in the Gila National Forest. We visited several Indian Ruins there and also the City Of Rocks before traveling through the forest. It looks very similar to disappointment canyon just outside of Dove Creek, CO, which is why I took the photo. I work seven days a week, and only get off once a year, so I am looking forward to late July and early August again!! I will be taking many many pictures from out of state and hopefully have some to post here. Kt
