Nuts, dried fruits, homemade granola (and granola bars), fresh fruit, and just a few truffles or "special" cookie or candy.

If you want to get away from sweets, how about salsa and baked tortilla chips, lean jerky and just a few cheeses, etc.

Meringue cookies are very tasty and "healthy" in my book.
at least they are lower in fat.
also what about chocolate dipped dried fruits. Chocolate is full of good stuff for you if you use dark chocolate. same with fruit.
You could do a really nice trail mix that is low in fat/sugar from scratch-- granola is great. Spiced nuts--
cajun style or with an asian type flavor would be good.
also a nice oatmeal cookie would make many people happy.
Airpopped popcorn as a base for a snack mix with pretzles and nuts would be tasty-- maybe italian herbs and parm

a great recipe that i use a lot is for sesame wafers made from wonton skins:

Preheat oven about 350 degrees
line baking sheet with parchment paper and spray with cooking spray (pam)
Pastry brush
1 pkg wonton skins (cut the whole pack in half)
sesame seeds
1/2 cup soy sauce
2 tablespoons sesame oil
1 tablespoon sugar

mix the soy sauce, sesame oil and sugar-- until sugar dissolves. brush one side on the wonton skins with soy mixture. while wet sprinkle with sesame seeds. bake until crisp and dry.

if this is too salty for you add some water to the mix
i some times add garlic and ginger to the mix. wasabi might be interesting

these make extremely low fat crackers as the soy mix will easily do at least 2 pkgs of wontons.

you might come up with enough stuff that the same basket for everyone would work.

hopefully your client isn't part of the food police and realizes that in moderation bit on the unhealthy stuff is alright

To our healthy friends we send out gift baskets of fruit, nuts and homemade granola.

To our unhealthy friends ;-) we send out cheeses, wine and homemade candy!

I have a friend that is very artsy and takes my items and packages them beautifully.

I would probably still keep all the delicious cookies- what an oxymoron: healthy cookies! (although shortbread is necessary for my mental health)- but add some healthy foods in with the cookies like nice raw fruit and raw nuts. Or dried, unsulphered fruit. What's healthy to one person is different from another so I wouldn't concern yourself about it too much.
Or how about good teas, or specialty fruit juices, like pomegranate. The employees after all liked last years cookies!

I agree with Bumblebeez. Unless, of course, the client has hinted to you that the baskets were too "unhealthy".

If you want to change some of the cookies, there's always pumpkin cookies or biscotti or various snaps (Annie has a great recipe for cinnamon snaps).

Here's a good one that I've made from the healthy GI diet cookbook:

Cranberry-Almond Biscotti
*************************

Makes about 20.

Ingredients:

Juice and zest of 1 orange - (my orange yielded 1/2 cup of juice)
1 TBSP Amaretto liqueur - ( I used 1 teasp almond extract)
1/2 cup (1 x 75 gram pack) dried cranberries
1 3/4 cups (250 grams) (9oz) wholewheat flour
1/2 cup (8 TBSP) sugar substitute (I use granulated fructose)
1 teasp cinnamon
1/2 teasp baking powder
1/2 teasp bicarbonate of soda (baking soda)
1/4 teasp ground nutmeg
1 large egg
1 egg white
1/3 cup (50 grams) (2 oz) toasted almonds, chopped

1. Heat the orange juice, Amaretto and cranberries in a small saucepan just until hot.
Remove from heat and let stand for 10 minutes.
Drain and reserve the juice.

2. Preheat the oven to 350F (177C) (Gas 4) and line a baking sheet with baking parchment.

3. Mix together in a large bowl the flour, sugar substitute, cinnamon, baking powder, baking soda and nutmeg.

4. In a separate bowl, whisk together the egg, egg white, orange zest and 2 TBSP of the reserved juice.
Stir this into the dry mixture until combined, adding more juice if necessary to make the dough moist.
Stir in the almonds and cranberries.

5. With lightly floured hands, shape into a 16 inch (40 cm) log, then flatten slightly. Bake for 20 minutes or until firm.
Slide log onto a cooling rack and cool for 10 minutes while you reduce the oven to 320F (160C).

6. Cut the log diagonally into 1/2 inch (1 cm) thick slices.
Place on the baking sheet, leaving a 1 inch (2 - 3 cm) space between each slice. (I didn't have room to do that...mine were touching.)
Bake until golden brown and crunchy, about 25 minutes.
Allow to cool on the rack.

The Biscotti can be stored in an airtight container for up to 1 week or wrapped and frozen for up to 3 months.
