Great summer squash casserole recipe?

Do you have a t&t?

I need to make one for Thanksgiving. And, yes, it has to be summer squash. It's sort of the squash people eat here the most and what will be expected from me.

Gee! Don't y'all grow monster zucchinis and summer squash?
My mil must have 50 bags of yellow squash in her freezer. I really only like it raw or grilled but am willing to concoct a mayo/saltine/cheese mess for Thanksgiving. Oh well!

If you can deal with the famous green bean casserole I have had one that uses the soup and stove top. I'll dig it up or call a friend and post if your interested. Really, it's not that bad...I haven't had in years.

As simple as this seems, it is absolutely delicious!! IF there is any leftover, it freezes well. ZUCCHINI CASSEROLE 6 Cups Sliced Zucchini 1 1/2 Pounds Ground Beef 1 Onion, diced 1 3/4 Cup Instant Rice 1 Teaspoon Garlic Salt 2 Tablespoons Italian Seasoning 1 lb 8oz carton Small Curd Cottage Cheese 2 Cans Cream of Mushroom Soup 1 Cup Grated Cheddar / Mozzarella Cheese, more to taste Cook sliced Zucchini in a small amount of Water until tender. Be careful not to overcook, crisp is better. Drain and cool, set aside. Fry Ground Beef and Onion until browned. Add Garlic Salt and Italian Seasonings and Rice. Layer half the Zucchini in the bottom of a 9 x 13 pan. Spread the Meat / Rice Mixture of the top. Spread the Cottage Cheese on top of the Meat / Rice Mixture. Layer with the rest of the Zucchini. Thin the Mushroom Soup with 1 can of Milk and pour over all. Sprinkle the top with the Cheese. Bake uncovered in a preheated 350 degree oven for 1.5 Ã¯Â¿Â½ 2 hours.

Here's a recipe for squash casserole that I use. It turns a rather healthy low-calorie vegetable into something a bit more artery clogging but it is absolute heaven to eat: Squash CasseroleÃ¢ÂÂ¨Ã¢ÂÂ¨ 4 medium to large yellow summer squashÃ¢ÂÂ¨ 1 medium to large Vidalia-type onion chopped Ã¢ÂÂ¨1 sleeve Ritz crackers 1 cup shredded Cheddar cheeseÃ¢ÂÂ¨ 2 eggs, beatenÃ¢ÂÂ¨ 3/4 cup milkÃ¢ÂÂ¨ 1/2 stick of butterÃ¢ÂÂ¨ 1 tsp saltÃ¢ÂÂ¨ 1 1/2 tsp black pepper Preheat oven to 350. Put squash, onion, and about a cup and a half of water in a large skillet over medium heat. Cook until squash and onions are tender. Drain well. Add half stick of butter and let melt. In medium bowl, crush crackers and stir in cheese. Add salt and pepper, stir. Stir half of the cracker mixture into the squash. In small bowl, mix together milk and two eggs. Pour into squash mixture. Stir well. Pour into 13 x 9 casserole dish. Top with remaining crumb mixture and bake at 350 for 25-30 minutes, or until top is browned.

Best way to store/preserve summer squash?

I dehydrated three varieties of summer squash last year in thin round slices - much thinner than one inch, which I think would be too thick for dehydrating. However, the ones I have reconstitute nicely and have a good texture for all kinds of recipes. I am still using them and enjoy them greatly. Maybe you could stack thin slices on each other to get your inch thick slice? If you can find a way to freeze it that would be wonderful but I've never heard of a way that doesn't turn it into mush. Here's your Squash Casserole:

3 cups cooked squash, drained
1 egg, slightly beaten
1/2 stick butter
1/2 c. mayo
1 t. sugar
1 c. grated Cheddar cheese, divided
1 to 1 1/2 c. cracker crumbs, divided
dash cayenne pepper
salt and pepper

Combine squash with egg, mayo,butter, sugar, half of cheese and half of cracker crumbs. Season with cayenne, salt and pepper. Pour into a greased casserole dish and top with remaining cracker crumbs and cheese. Bake at 350 for about 20 minutes.

No problem... it's cool...but you did ask for a conconeted mess. LOL!! I'm one of many that have to have the GBC on the table at TG. I'll pass on those jello salad thingies though....lol!

Actually, it is pretty good and very easy. The inlaws love it and so do my sister's kids.
