What is this baking tool called in English?

See the tool with the with the white handle in

It is called a "BrÃÂ¶dnagg" in Swedish. I'm trying to find one to buy in the US, but don't know what to ask or search for.

It's an interesting tool, but I don't think there is an English word for it. I have never seen one, even in catalogs. We just prick pastry with a fork. This does look handy!
I suggest searching the "Maid of Scandinavia" catalog for it.

Lyfia, I found it translated as a "bread pricker." See the illustration in the recipe I've linked to.

I don't know whether you can find it here in the U.S.

Teresa's Struan recipe is a favorite in our house. Oatmeal bread you say? On my! Annie's Maple oatmeal bread is to die for. makes the best peanut butter sandwiches in the world! Struan Soaker 3 Tbs. polenta (corn meal) 3 Tbs. rolled oats 2 Tbs wheat bran 1/4 cup water Dough 3 cups unbleached bread flour 3 Tbs brown sugar 1-1/2 tsp salt 1 Tbs. instant yeast 4 Tbs cooked brown rice 1-1/2 Tbs honey 1/2 cup buttermilk (I make my own by putting 1 Tbs vinegar in milk) 3/4 cup water Topping 1 Tbs poppy seeds Mix together the ingredients for the soaker. Cover and allow to soak for at least half an hour or as long as overnight. In a larger bowl, combine the dry ingredients, then stir in wet ingredients and soaker. Add more flour or water until the dough can be formed into a ball that is tacky but not sticky. Place the ball of dough on a clean work surface and knead it for 10-12 minutes, then return it to the bowl. Cover the bowl with plastic wrap and allow the dough to ferment until doubled in size, appr. 90 minutes. Remove the dough from the bowl, de-gas it gently, and split it for two loaves or shape it as is for one large. Place the loaves in greased bread pan(s), spritz or sprinkle water on top, and sprinkle a handful of poppy seeds on top. Cover the pans loosely with plastic and allow the loaves to rise until doubled in size again, appr. 90 minutes. Bake the leaves at 350 for 40-55 minutes, until the internal temp is around 190 degrees. When ready the loaves wil be quite brown on top and will make a hollow thud when tapped on the bottom. (Note, this takes 45 minutes in my oven, and I tent the top with foil at about 35 minutes or it gets darker than we like) Maple Oatmeal Bread 3-3-1/4 cups flour 1 pkg dry yeast 3/4 cup prepared coffee 1/2 cup quick cooking rolled oats 1/2 (scant) cup real syrup 2 Tbs. butter 1 tsp salt 1 egg Combine a cup of flour and the yeast. Heat coffee, oats, syrup, butter, and salt until just warm and butter is almost melted. Add to flour mixture along with egg. Beat with mixer on low for 30 seconds. Beat on high for 3 minutes. Using a wooden spoon, stir as uch of the remaining flour as you can. Turn dough out onto a lightly floured surface, knead in enough remainng flour to make a moderately soft doug that is smooth and elastic (3-5 minutes kneading) Shape dough into a ball, place in lightly greased bowl, and turn over once to grease surface of dough. Cover and let rise in a warm place until double in size, about an hour. Punch down dough, cover and let rest 10 minutes. Meanwhile, lightly grease a loaf pan. Shape dough and place nto prepared pan, cover and let rise in a warm place until nearly double in size (30-45 minutes). Bake at 350 about 30 minutes or until bread sounds hollow when tapped. Remove from pan immediately and cool on a wire rack. Note* This bread takes closer to 45 minutes to bake in my oven. Tent if gets too dark) Note* I just throw all the wet stuff into a breadmaker, then then dry stuff on top and make dough that way. Then I remove the loaf, shape and rise again, then bake.

When I was a teenager, I made a "Spanische Windtorte." The picture of it was so pretty, and it sounded wonderful. It is an Austrian dessert composed of meringue filled with cream. You pipe meringue in a close spiral and bake it for the bottom, easy enough. Then you have to pipe and bake many rings, which you layer up from the bottom and glue with unbaked meringue to form a round box. Then you do another close spiral for a lid. The inside is filled with whipped cream flavored with cognac and fresh strawberries. After carefully placing the "lid" on top, the outside is decorated with piped whipped cream and candied violets. It wasn't that it was difficult, exactly, it's just that it was seriously time consuming, handling the brittle meringue rings was troublesome, and decorating had to be very quick so that one could serve the dessert before the inside cream began to melt. I had to make my own candied violets as well, which didn't help. It was very pretty, but when it came to eating it you might do just as well with a bowl of strawberries & whipped cream by crumbling a few meringue cookies on top. All that work and so little gustatory umph.

Pammy; you should get something in writing; especially with all of these wacky storms we're having. The neighbor could easily go to a storage unit. You can bet most people would put a claim into your home owners. Raising my hand! Had a neighbor that baby sat my daughter; she liked a few things I had; kind of talked me into letting her use /borrow toys; table; sewing machine.. She turned around & sold it at a yard sale a few months later & denied table & sewing machine were on loan. We had a neighbor at our old house that we did a lot with. The tools they didn't have we did; what we didn't; they did. It was a great relationship too; my hub helped them & their hub helped us. When the neighbor helped my hub; I cooked dinner for both families & would bathe the kids so the mom could relax because I was appreciative of the help. To this day; I can't believe what happened over an iron. I do not iron much; but I'm pretty sure I'd recently used it with no issues. I normally wash the fabric; then iron & cut the pattern out. The iron at this point was probably close to 10 years old; but even the box was in great shape. I take care of my stuff & it lasts. Neighbor borrowed my iron & when I went to use it next; it didn't work. I was making bibs for the neighbor. I wasn't able to just jump in my car & replace it. I was still recovering from my huge back surgery; was down close to 8 months. I saw her come home from Walmart with a new iron. Here I'm not driving; making bibs for 2 of the kids; I would have gladly given her a $20 to pick up a similar iron to what I had but she never offered anything. I didn't expect her to replace the iron; I was more hurt that she didn't ask if I wanted her to pick up a new one while she was out. The story was that my iron didn't work when she used it. What I did not understand is why no one bothered to tell me it wasn't working. Wish I remember how I got to the store to buy a new one. It bites but if you break something (anything) you borrowed don't you replace it? The solution should be discussed. Mine has the bulk of my staples on two shelves on the uppers - Sugars, flours, oil and small stuff like salt, soda, cornstarch. upper left drawer had spatualas and mixing spoons, upper right has measureing cups and spoons (both drawers have dividers so things aren't all in a jumble). Middle left drawer has hand mixer, cookie press and some other less used items - middle right has makers, kitchen sissors, paper baking cups (cupcake type) and some other assorted stuff. lower left has larger glass mixing bowls, lower right has some small appliances but they will be moved with other cabinets get done and I'm not sure what I'll put there yet. The tall cabinet to the left has my KA mixer at counter height - there are shelves behind it where all the attachemnest reside. The upper shelf now holds my Magic Mill Assistent (Bread mixer) with the stuff that came with it on the uppper shelf. Right now I have my biggest stockpots stored below that - they may get moved too. So far- I love this set up. I'm putting bifold doors on the uppers so I can open and fold them back and have everything easily accessable when I bake. There is plenty of room to pull down a container, measure and add to bowl, and put container away. My spices are in a drawer that is right behind me at the baking center. They are also next to the cooktop. I plan on putting a small shelf on the backsplash of the baking center and putting small containers of the spices I use most often for baking on there. I only keep "on hand" quantities of things in my baking center. The speciatly flours I don't use that often and my bulk stuff is stored in the freezer. I'm also going to make some sort of recipe clip on the upper cabinet so I can have them right at eye level - I'm getting old and those bifocals make it hard to read a recipe on the counter. This picture was taken before the shelves and backsplash were finished and installed - every week my kitchen looks different!

Seems like a pastry docker-most of which are now on a roller frame. Some folks in UK used these for pricking round shortbreads.
When I make flatbreads I use a 12" 'dimpler' rolling pin that was available in Scan stores in Chicago 45 years ago. It was sold then for making hardtack crackers. Will ask Scan friends next weekend their best sources in MN for baking tools.

Thanks everybody!! Annie I think you found me the right one.

Seems docker is the word I needed.

Blueberrier - I remember those rolling pins. That would work great for what I needed it for this time, but not as good for other items.

I had the tool before and it broke several years ago and I never bothered getting a new one then and didn't think to ask my mom to bring one last they visited.

Annie, I'm making Polar Cakes, a sort of flat bread made with rye and wheat.

Here is a pic I found on the internet, that is a close up of a commercially made one. Couldn't find any better.

A rye flatbread, now that sounds interesting, I love rye bread.

I do hope you find what you are looking for and it works like a charm!

I remember my father talking about a bread/cracker his Swedish Mother made that had a hole in the middle of the big round 'cracker' & they hung them on a long wooden rod in the attic & it kept well there.... anyone recall the name? We had been getting something similar in a local grocery called Swedish crispbread/knÃÂ¡ckebrod by Siljans but unfortunately they no longer carry it. Any ideas as to where it might still be available? I have a krumkake iron x my grandparents but am not sure if it Swedish or Norwegian as both settlers were in that NE Iowa valley. I treasure these cooking pieces x different nationalities & was glad to see the pic of the brodnagg!

That was supposed to be a photo of a Dough Docker in my post but I couldn't correct it at that time.

I used one in my Pizzeria. Now I just fork it.

" Fantes of Phila " has dockers in Bakery Supplies, Baking.

If you can't find one like in your Photo, I'll make you one.

lyfia, please share your recipe for polar cakes. My DH's family is Swedish and Norwegian and have never mentioned this bread.

When we are not eating homemade rye breads, we are usually eating Ryvita rye crispbread (since we have no access to the traditional Scan hardtack: aka huge flat rye crispbread with the hole in the centers.) Vieja, were you told that the circle was to slip a pole thru, as the crispbeads were stored near the ceilings in the kitchen of my FIL's youth in SE Sweden?
