It's an interesting tool, but I don't think there is an English word for it. I have never seen one, even in catalogs. We just prick pastry with a fork. This does look handy!
I suggest searching the "Maid of Scandinavia" catalog for it.

Lyfia, I found it translated as a "bread pricker." See the illustration in the recipe I've linked to.

I don't know whether you can find it here in the U.S.

Seems like a pastry docker-most of which are now on a roller frame. Some folks in UK used these for pricking round shortbreads.
When I make flatbreads I use a 12" 'dimpler' rolling pin that was available in Scan stores in Chicago 45 years ago. It was sold then for making hardtack crackers. Will ask Scan friends next weekend their best sources in MN for baking tools.

Blueberrier - I remember those rolling pins. That would work great for what I needed it for this time, but not as good for other items.

I had the tool before and it broke several years ago and I never bothered getting a new one then and didn't think to ask my mom to bring one last they visited.

Annie, I'm making Polar Cakes, a sort of flat bread made with rye and wheat.

Here is a pic I found on the internet, that is a close up of a commercially made one. Couldn't find any better.

A rye flatbread, now that sounds interesting, I love rye bread.

I remember my father talking about a bread/cracker his Swedish Mother made that had a hole in the middle of the big round 'cracker' & they hung them on a long wooden rod in the attic & it kept well there.... anyone recall the name? We had been getting something similar in a local grocery called Swedish crispbread/knáckebrod by Siljans but unfortunately they no longer carry it. Any ideas as to where it might still be available? I have a krumkake iron x my grandparents but am not sure if it Swedish or Norwegian as both settlers were in that NE Iowa valley. I treasure these cooking pieces x different nationalities & was glad to see the pic of the brodnagg!

I used one in my Pizzeria. Now I just fork it.

" Fantes of Phila " has dockers in Bakery Supplies, Baking.

If you can't find one like in your Photo, I'll make you one.

lyfia, please share your recipe for polar cakes. My DH's family is Swedish and Norwegian and have never mentioned this bread.

When we are not eating homemade rye breads, we are usually eating Ryvita rye crispbread (since we have no access to the traditional Scan hardtack: aka huge flat rye crispbread with the hole in the centers.) Vieja, were you told that the circle was to slip a pole thru, as the crispbeads were stored near the ceilings in the kitchen of my FIL's youth in SE Sweden?
