As they say, everything sounds better in French, even leftovers. :-)

Let me share with you some leftover ideas.

1. I sometimes buy those Pillsbury dough-in-a-tube thing for the convenience, like flaky biscuits. But what do you do if you cannot use up the whole tube?

Here is what I do. Before you open the tube, tightly wrap some packing tape around the tube, then you just cut a section off how much you need, you can then freeze the unused part for the next time. You will not have to deal with having to use up the whole tube and end up eating leftovers.

2. I had some leftover frozen previously sous vided scallops. I reheat those scallops in the sous vide cooker at the same temperature. They came out just as nice (medium rare) and no overcooking. I made mini-scallop sousvidewiches with flaky biscuits.

3. I had some leftover from (Rosh Hashanah) previously sous vided brisket in the freezer. Re-cooked it at the same temperature in the sous vide cooker. It came out nice juicy and hot (medium, notice, I did not have to cut across the grain), of course no overcooking, and made brisket sousvidewiches with leftover Challah.

Nothing more leftover for me to say other than that the sousvidewiches were tres merveilleusement delicieux!
