Another food safety question - leftoever stew beef.

I defrosted a Costco-sized container of stew beef on Sunday and used half in a traditional stew. Put the other half of the raw meat back in the fridge thinking I'd do something with it yesterday.

Instead, I got home very late from school and had nothing in the pantry except one rotten onion! So, I browned all the meat and stored it back in the fridge.

Is is okay to use tonight? If so, any suggestions for something easy to do that's different from traditional stew? I have to leave for school and won't be back until late but can send DH to the grocery store to pick up anything I need.
