Both sound great and I can understand your dilemma. I had a hard time deciding which way to go with mine, too, initially. I finally decided to go with white only (Crema Marfil), because it would never limit what kind of colors and decorations I could use in my kitchen. Three years later, I know it was the right choice for me. In the Spring, I like to use pastel dishes and different holiday decs in there. In Summer I like bold, clear red, yellow, and green. In the Autumn I love pulling out my gold, greens and rust dinnerware and decs. During the Christmas Season, red & green holiday decs sneak into my kitchen, too. I've never had to worry about things clashing with my kitchen backsplash color.
Plus, from a practical standpoint, if we ever decide to sell this place, potential buyers won't be put off by the colors I've used. The house next to ours has had four owners in 16 years and each one of them tore out the kitchen right away because they didn't like the colors used in there. The last reno is finishing up right now ;^D This may not be a reason that would work for you, but it has for me.

lynn - thank you! I agree I was thinking the same - resale, but honestly we just purchased our home a few months ago and I swore I would never move again. With that said I wanted to design the kitchen for us, but could always add color in other ways as you mentioned. Do you have a picture of your backsplash?

Yes, my pics are on the Finished Kitchens Blog. Out here in New Mexico, art is a huge thing. I actually change mine out in our kitchen with the seasons. Everything works well with my cream colored backsplash . . . including the small Christmas tree I put up on the counter behind the sink ;^P
Here's the link to my pics over on the FKB. I really think the secret to pulling off a room with no bold color in the backsplash is to add it in your accessories: framed prints, big colored pots, baskets of realistic or real greenery, statues, large platters, big chunky candles, etc., etc.

I'd go with a more neutral backsplash. Even if you don't ever move, a red backsplash is bound to get "old" to you at some point. I think a lot of those "pop" backsplashes will be ripped out within 10 years as "pop" fades to busy and annoying. A more harmonious backsplash isn't as exciting initially, but acts as a perfect backdrop to more colorful accessories like hand painted stoneware, bright tea kettles, fresh flowers, and colorful linens.
