Swedish Cabbage Recipe?

I haven't had this in years.

My grandmother used to make it and she's gone now.

Does anyone have a recipe?

From what I remember, it has cabbage, mustard seed, probably a little onion (?), and a sweet/sour dressing, I'm guessing vinegar, sugar, salt, pepper.

It marinates at least overnight and just gets better the longer it sits.

Does it sound familiar to anyone? Do you have a recipe to share?

Is this it? You could substitute mustard seed for the mustard.
Fred Harvey Cole Slaw:
Shred one medium head of cabbage and one small onion, cover with 1/2 cup of sugar.
Bring to a boil 1 tsp sugar
1/2 Tablespoon salt
1/2 tsp dry mustard
1/2 tsp celery seed
1/2 c peanut oil
1/2 c cider vinegar.
Pour over the cabbage and set stand at least 4 hours before eating.
Keeps well.

The Penzey's spice catalog had a recipe this month for Danish red cabbage, which is a traditional Christmas dish.

I don't have the recipe with me, but this one, from Recipezaar, is very similar.

1 medium red cabbage, shredded (about 1 1/2 lbs)
1 large granny smith apples, shredded (or any Tart apple)
1 medium russet potato, grated
1 cup apple cider
1/2 cup white wine vinegar (or cider vinegar)
1 tablespoon granulated sugar
1 teaspoon caraway seeds
salt and pepper

In a large saucepan, combine all the ingredients. Mix well.
Bring mixture to a boil over medium high heat.

Reduce heat to low, simmer, stirring occasionally, until the potato and cabbage are tender and cooked (about 40 minutes).

Serve hot or cold. Improves overnight!

I've had this recipe for many years. It is from a family friend and is a treasured recipe in her Swedish family. Pepparkokor Makes 6 dozen cookies 1 cup butter 1 1/2 cup white sugar 1 Tblsp molasses 2 tsp. baking soda 1 egg 3 1/4 cups white flour 1 Tblsp ground Cinnamon 1 Tblsp ground Ginger 1 Tblsp ground Cloves All the juice and grated rind of one large orange (4 oz.) Mix flour, baking soda, and spices; cream butter with sugar; add molasses and egg; add dry ingredients; mix until well blended. Add Orange Juice and grated Orange Rind; mix well. Roll out dough on floured surface to 1/8 inch; cut into shapes with cookie cutters. Move to greased cookie sheets and bake at 350ÃÂº F for 8 minutes or until brown. Cool and store. Notes: The spice amounts are correct as written. They keep for a long time if tightly stored. The flavor improves with age.

This one is almost identical, except for the dressing. Theirs was more of a mayo dressing, not sweet with honey, or sweet pickles. To me their cole slaw was one of the best I have had. Here is another low fat one. Sunset magazine first suggested making these to take camping, so the instructions are geared to travel. I just make 'em and eat 'em. I use very little oil because I hate frying... Thai Turkey Sausage From Sunset magazine Perfect for campouts, you can cook up a big batch of patties at home and freeze. Heat them in camp for a great breakfast with eggs or hash-browns (Wilderness Cuisine author Carole Latimer uses sweet potatoes), tangerine juice, and papaya wedges. Notes: It's easiest to mince lemon grass in a food processor or minichopper. For best texture, mince the remaining ingredients with a knife. 1 pound ground turkey 1/4 pound green beans, ends and strings removed, minced 8 green onions, ends trimmed, minced 1 stalk (5 to 8 in.) fresh lemon grass, tough outer layers, stem end, and coarse leaves removed, minced 3 tablespoons minced fresh cilantro 2 to 3 teaspoons fresh serrano chilies (2 or 3), stemmed, seeded, and finely minced 2 tablespoons Asian fish sauce (nuoc mam or nam pla) 1 large egg 2 tablespoons cornstarch 1/4 teaspoon sugar About 2 tablespoons olive oil 1. I'm not Ruthanna....but I sure have a recipe for ya. Sautee 1/2 cup onions in 2 T butter....or oil if you choose....or bacon fat if you want to live large. When the onions are soft, add about 4 cups coarsly chopped cabbage,,,,toss to coat with remaining fat, and add 6 cups chicken broth ( or if you cheat...6 cups water and 2 tablespoons of wylers chicken broth powder) and the juice of half a lemon.....as it's coming to a simmer peel 2 or 3 large red skinned potatoes and cut into small chunks and add to pot....add about 3/4 tsp dry marjoram leaves ( more if you choose, I find marjoram goes a long way). Simmer uncovered about 30 minutes, until the potatoes are beginning to break down, and add ( slowly) 1 cup milk whisked with 3 tablespoons of flour....simmer until thickened and no longer tastes raw....then add about 2 T cream cheese....cut into very small pieces and stirred into the simmering soup. Add pepper to taste...I like a lot....and a grating of nutmeg on each serving.... I am making myself hungry! This should serve 8....or 6 with seconds! I use one "box" of broth and t cups of water with Wyler's added....and I freeze my cream cheese and use a potato peeler to shave small pieces into the bubbling broth.

Linda: Maybe, but a couple of things don't quite fit. I'm sure my grandmother never heard of Peanut oil - LOL! And I don't think anything was boiled. I could be wrong.

Alison: I know there weren't any apples or potatoes in this one. Yours sounds good though!

I ate this in the 70's, if that helps at all. I was a kid and we always went to one grandparent's or the other for holidays.

Deanna, it sounds a lot like my favorite "cole slaw" recipe, which is a boiled dressing with no oil, but it does have sugar and vinegar.

Celery Seed Slaw

INGREDIENTS

3 pounds medium head cabbage, coarsely shredded
1/2 cup finely shredded carrot
1/2 cup chopped green pepper
1 cup sugar
1 cup white vinegar
3 teaspoons salt
1 teaspoon celery seed

SERVINGS 12-16

DIRECTIONS

In a large bowl, combine the cabbage, carrot and green pepper;set aside. In a small saucepan, combine the sugar, vinegar, salt and celery seed; bring to a boil. Pour over cabbage mixture; toss to coat. Cover and refrigerate for 4 hours or overnight. Serve with a slotted spoon. Yield: 12-16 servings.

I just use vegetable oil....
But heating the dressing to pour over a salad was a very common thing....and I have made this recipe for easily 40 years.
The red cabbage I will vouch for....it's wonderful! But I use a bit more sugar than a tablespoonful.

I'm going to spend some time searching to see if I may have it tucked away in some recipes from my mom.

A traditional scandanavian quick pickle is equal amount s of sugar, water, and vinegar brought to a boil and poured
over vegetables. usually its seasoned with salt, pepper and dill.
I usually use 1 cup white vinegar, 1 cup sugar, 1 tablepoon salt, 1 teaspoon whole pepper corns, 2 tablespoons dill leaf and 1 tablespoon of celery seeds all boiled together and pour it over 3 sliced cucumbers and 1 large onion sliced. (no water becausew cukes are so watery), but the same dressing would be good on cabbage-- but i'd like a bit of oil in it.
