I'd like to make some doggie biscotti for a friend's dog (mine too) and am looking for a recipe. I prefer one with whole wheat or whole grains and little or no oil or shortening. Possibly parmesan cheese for flavor.
I can probably wing it and make one up but am hoping someone might have a tried and true. I have recipes for other rolled and cut treats but I really need a biscotti type recipe this time.

I just love baking Biscotti in the kitchen! As a Basset-American, I feel that we need to promote the cooking from our culture too. Although we are "opposably-gripped challenged", we can have a full cooking life too! My "thumbed" friend, Eva, has to help me open the refrigerator and turn the knobs on the stove. Anyway, I thought this recipe is really tasty and is great for a midnight snack!
What you need:
2 ½ cups whole-wheat flour 2 ½ cups unbleached all purpose flour ½ teaspoon baking soda 1 egg ¼ cup oil 1 cup crunchy peanut butter 2 teaspoons vanilla water 1 cup carob chips (optional, but I think theyÂre yummy!)
What you do:
Combine the flours and baking soda in a bowl and stir with a whisk. Add egg, oil, peanut butter, and vanilla and stir with a wooden spoon until lumpy. (Yum!) Add carob chips. Slowly add cold water 1 teaspoon at a time until a stiff dough forms. Do not over mix. After that, lick the wooden spoon clean! Form dough into logs 2 inches in diameter. Place on lightly greased baking sheets and flatten logs to 1 inch high and about 6 to 7 inches long. (Have a human help you with the measurements) Bake at 325º Fahrenheit for 30 minutes. Remove from oven and cool for 20 minutes. Always be careful with heat! You can burn your paws. So always have a friend handy!( Preferably a human because they have thumbs!) With a serrated knife, cut logs into ½- inch slices. (Have a human do that part.) Return slices to cookie sheet and bake at 325º Fahrenheit for 20 minutes, or until golden. Cool and store in airtight tins or plastic bags ( If I donÂt eat them all first!)
How about Snickerpoodles? Not particularly healthful, but then neither are snickerdoodles for people. And the name si so cute! Snickerpoodles Dog Treats 1/2 cup canola oil 1/2 cup shortening 1 cup honey 2 eggs 3 3/4 cups white flour 2 teaspoons cream of tartar 1 teaspoon baking soda 1/2 cup cornmeal 2 teaspoons cinnamon Mix vegetable oil, shortening and honey together until smooth. Add eggs and beat well. Blend in flour, baking soda and cream of tartar. Knead dough until mixed well. Shape dough by rounded teaspoons into balls. Mix the cornmeal and cinnamon together in a bowl and roll balls in mixture. Place 2 inches apart on a cookie sheet that has been sprayed with a nonstick spray. Press the balls down with a fork twice going in 2 different directions or press with your favorite stamp. Bake 8 minutes at 400. Remove from baking sheet and cool on a rack.
Love those recipes! Even though I lost my two "babies" this past year, I want to make some Christmas gifts for my sister's two boxers and my niece's boxer. These will be perfect.

I've been making a batch of the Molasses Onasis Biscuits for Jillian every few weeks. I don't use garlic and I usually add in some fresh herbs from the yard. Rosemary and Oregano are still growing. When I had some parsley for a few dishes during the week I added that too.. Parm would be a good addition.
These are all delightful! They are going into my files. I can see that my offering will include other dog treats. I found this whole wheat people biscotti recipe that I'm going to tinker with. I'm going to omit the sugar, the salt, the flavorings, and add 1/2 cup grated Parmesan and a teaspoon or 2 of low sodium beef base, and some dried parsley. I will probably also use my baking times/temps from my almond biscotti recipe. 300 degrees at 50 minutes, with a second bake of 30 minutes.
Do you think the addition of the cheese will require more leaving?
Ingredients
2 cups whole wheat flour 1 teaspoon baking soda 1/2 teaspoon salt 3/4 cup sugar 3 eggs 1 teaspoon vanilla extract 1/4 teaspoon almond extract
Directions
1. Add remaining ingredients and mix well. 3. Divide dough in half. On greased baking sheet, form 2 logs about 2 inches wide and 13 inches long. 4. Bake 25 minutes at 350 degrees, then cool on rack for 5-10 minutes. 5. Slice with serrated knife at ½ inch intervals. 6. Return to oven for 10-15 minutes more, turning once. 7. Cool completely and store in airtight container. 8. If you have trouble handling the dough because of stickiness, add a little more flour, but not more than ¼ cup. Try oiling your hands or using a rubber spatula and wax paper.
I think I would research the nutritional needs of dogs before making something that is really people food. For instance, I don't give my dogs sugar, corn, wheat or soy and no artificial flavors (extracts) and definitely no crisco. They do get carrots, meat, bones and fruit along with their dogfood. I would look for a dog biscuit that is appropriate for a dog's needs.
It's a treat not a diet. It's for a big mixed breed dog that gets table scraps on a regular basis. It is a gift. The recipient can toss it if deemed inappropriate and I will never know. If you read my notation, I said I'd be omitting both the sugar and the extracts. The recipe I found has no shortening.
Eileen, Lee (LSR80308) posted these a while back, I saved the recipes but haven't made them. She posted her Brockley loves them! Maybe you could make them into a biscotti shape. and sub parm for the cheddar?

Put first seven ingredients into food processor, pulse until mixture looks like cornmeal. Add egg and water, process until dough forms a ball (you may need a little more water).
Roll to 1/3 Â 1/2 inch thick on floured board, cut to desired shapes, gather together and re-roll scraps. Place on cookie sheet with non stick foil on it or spray sheet with Pam.
Bake at 350º for 30-35 minutes until firm and dried out. For biscuits to keep well they must be baked until dry and hard. You can also leave them overnight in the oven with door ajar to dry out further.
BACON CHEDDAR BISCUITS
2 c Whole wheat flour 3 cloves garlic, finely chopped 1/2 c bacon fat 2 c shredded cheddar cheese 4 strips cooked bacon cut in small pieces 1 egg 1/2-1 c milk
Put first three ingredients into food processor, pulse until mixture looks like cornmeal. Add remaining ingredients and process until dough forms a ball. You made need less milk depending on how "dry" your flour is, (IÂm in a very dry area) start with ½ c and add from there until you have a stiff dough.
Roll to 1/3 Â 1/2 inch thick on floured board, cut to desired shapes, gather together and re-roll scraps. Place on cookie sheet with non stick foil on it or spray sheet with Pam.

I know, barnmom, I did read your post but I was commenting on recipes in general and food for dogs in general (for archived reference). I should have been more specific. My dogs have problems with small amounts of the wrong food so I am careful about what they eat. They never get any milk products for instance.
