Garlic Mashed Potatoes

How many heads of roasted garlic would you add to 5 lbs of potatoes?

I made garlic mashed potatoes last weekend. I roasted 3 heads of garlic (Yum!) and added them to 5 lbs of Yukon Gold potatoes - along will all the other mashed potato ingredients. They were really good, and I received only positive feedback, but I couldn't really taste the garlic. Should I have used more than 3 heads?

If you really used 3 whole HEADS and not just 3 cloves, I suspect the garlic was some of that tasteless garlic I have discovered lately. Don't know where it comes from....but it's lacking flavor. Normally I would add one head for 5 pounds of potatoes.....depending of course how big the heads were.
And I don't roast my garlic before making garlic mashed potatoes. I just put peeled cloves into the potatoes while they are cooking and then mash all together.

I read in Cook's Country a couple of months ago (I'll try to track it down) to use raw and roasted garlic cloves to get the best flavor. And additionally, as Linda said, clove sin the cooking water. The 3 combined give the best flavor.

This was our first year planting potatoes, and we have learned the basics and some lessons. We grew them in the ground, which was fine, but its bins or tires next year. The number one problem we had was Colorado potato beetles. We didn't know they existed before this season. Wow, did they sure home in on our plants. We eventually did get them under control, and have been geting new potatoes as we need them. Waiting for end of season harvest now. Looking forward to our sophomore season next year as potato growers.

I make this recipe every year during the holidays - I know mashed potatoes are one of the easiest things to make, but IMHO it's also one that can be successfully made ahead, so I don't bother when we have lots of other things going on. With the meal you've described, this really would feed 12 as a side dish, so you could either double it for really generous portions and seconds, or just increase by 50% for about the right amount. Cook potatoes and pressed garlic in water, drain, mash. Add butter, cheese, sour cream, salt and pepper. Beat until fluffy. Sprinkle with paprika. Bake 350 for 30 minutes. Potatoes cooked in milk/cream for mashed potatoes?

I saw the same show today where he cooked the taters in milk and heavy cream. And yes, I too wondered if the milk would burn. I've never heard of making mashed potatoes this way but I'd try it......cooking it on low enough heat that it wont' burn. I'm not adding mustard though, no thanks........I like my mashed potatoes with butter, milk, salt and pepper. That's it.

Chicken with Potatoes, Bacon and Cabbage (Real Simple) 3/4 pound new potatoes, thinly sliced 2 tablespoons olive oil kosher salt and black pepper 4 6-ounce boneless, skinless chicken breasts 3 slices bacon, chopped 1 small shallot, minced 1 tablespoon whole-grain mustard 3 tablespoons cider vinegar 1/2 small head savoy cabbage (8 ounces), cut into 1/2-inch strips Heat oven to 425F. On a rimmed baking sheet, toss the potatoes with 1 tablespoon of the oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Roast, tossing once, until golden brown and tender, 20 to 25 minutes. Meanwhile, heat the remaining tablespoon of oil in a large skillet over medium-high heat. Season the chicken with 1/2 teaspoon salt and 1/4 teaspoon pepper; cook until golden brown and cooked through, 6 to 7 minutes per side. In a second large skillet, cook the bacon over medium heat until crisp, 5 to 7 minutes; remove. Add the shallot, mustard, and vinegar to the drippings in the pan and cook, stirring frequently, until the shallot is soft, 2 minutes. Add the cabbage and cook, tossing, until wilted, 2 to 4 minutes more. Serve with the chicken and sprinkle with the bacon.

Yes - 3 whole heads. They were not very large. I wonder if adding garlic to the water maintains a stronger flavor than roasting them?

My BIL roasts one head of Elephant Garlic and adds that to his mashed potatoes. I read that Elephant Garlic is closer to an onion than garlic in flavor which is why I wanted to use garlic and why I used 3 heads.

Mustangs - I'd be very interested to read what Cook's Country has to say - I usually love their recipes.

I use 1 head of roasted garlic per pound (3-4)of potatoes.
Definitely garlicky - but not overpowering.
