Are You Baking Today?

I have four fruit pies baked and two more in the oven. Two will be kept out to have for the family to eat on and the other four will be frozen when they cool. There are apple, peach, apricot and cherry. I also rolled out six pie shells and six tops and have them in the freezer. I will use four of them for the fire department's fish fry that is coming up next week. They asked for black raspberry pies.

No baking in this house today unless some genie would pop up and do it.

No, not today. I'm thinking about easter. I'll be busy enough next week.

Tricia, I'm excited for you. I think you thought it through and made the right decision. Femmelady, your Yorkies are incredible and I loved looking at your other breads. WOW just WOW! Here is the bread in the clay baker. In general this batch of AB in 5 did not rise as much as the previous batch. I think it is because I could only buy AP flour at the store I was at and my earlier batch was made with bread flour. Femmelady, if you bake today, please share a photo. Lee

Although it seems like a forgiving dough - I can taste that I cheated on the overnight ferment. Sorry your casserole dishes aren't big enough. I bake in a toaster oven so when my bread rises it burns on top. Another reason P a L'A is good - it spreads out more than up. I brush the bread with some slightly salty water right before it goes in the oven. But I lose that lovely floury rustic surface. Do you have a pizza stone? That helped me get a better crust back when I last had an oven - now I use it in my grill to make pitas. Also I read somewhere or another about using a SS restaurant dish lid as a cloche though I've never seen one large enough. I am currently jealously watching a neighbor build a stone wood-fired bread oven by his pond - the ultimate bread oven. He says he will advise me when I am ready to build one - and I definitely do not lack for rocks. However right now my 'yard' is festooned with logs, brush and firewood piles. Hopefully in the near future the logs will become a woodshed and I can move the firewood inside. Then maybe a bread oven - which will entail moving rocks. I'm tired just thinking about it all. Making some tea and toast and taking a nap.

so funny I opened this as baking was finishing on the biggest, prettiest zucchini/ricotta pie I had ever baked, Took it out of the oven and as I was placing it on the cooling rack, it slid right off the island with a big splat, all over the family room floor, and the dog, she's in heaven now as she licks it and hubby is running around the house trying so hard to help clean, but he has no idea what to do next. and I'm stuck thinking of what else to make without going to the store again, I hate when stuff like this happens,which luckily is rarely.. well onto the other baking, cinnamon rolls, and the crepe_cake, The crepes turned out great, and the filling is made, just have to stack and glaze. I hope I only have one baking accident today. Happy Baking everyone!!

I've saved this so I'll post it just in case Linda gets busy. STRAWBERRY-PEACH COBBLER For fruit 1 1/4 pounds firm but ripe peaches (about 5), peeled, pitted, cut into 1-inch-thick wedges 12 ounces strawberries (about 3 cups), hulled 1/3 cup sugar 1 tablespoon cornstarch For topping 1/2 cup all purpose flour 1/4 teaspoon baking powder Pinch of salt 1/2 cup unsalted butter, room temperature 1/2 cup sugar 1 large egg yolk 1 teaspoon grated lemon peel 1/2 teaspoon vanilla extract Make fruit: Preheat oven to 375Â°F. Butter 8-inch square baking dish. Mix all ingredients in large bowl. Let stand until sugar dissolves, stirring occasionally, about 5 minutes. Transfer to prepared dish. NOTE: I'm assuming you also add the cornstarch. Make topping: Mix flour, baking powder and salt in small bowl. Using electric mixer, beat butter and sugar in large bowl until smooth. Beat in egg yolk, lemon peel and vanilla. Add flour mixture; mix just until moist dough forms. Spoon dough atop fruit, spacing evenly. Bake until juices bubble thickly and topping is golden, about 55 minutes. Cool slightly and serve with ice cream.

I baked cookies yesterday, just finished decorating them awhile ago while watching the local high school basketball team lose the championship in Columbus - by three points only! Good game.

I would love to bake a cake in the shape of a lamb and pile on the coconut, but I don't have a cake pan.

Not sure about today, because yesterday I baked...

2 batches of Scones (1 blueberry with brown sugar and the other Raspberry with White Chocolate)..

1 batch of Brown Sugar Chocolate Chip Cookies

1 recipe of Honey Wheat Rolls

1 batch of Cream Cheese Shortbread Cookies

I still would like to get a few more things done this weekend..but it's not raining so the yard work is on tap today.

I have that lamb pan too..I've only used it once. Maybe this year, I'll attempt using at as a gelatin mold??

I'm not baking today. I did my baking yesterday
for the high school where my niece is cheer coach.
Two huge batches of popped corn, one caramel, one
Red Hot. Chocolate chip cookies and Oatmeal Cherry
cookies.
It's her cheerleaders turn to work the concession
stand.

Brown Sugar Chocolate Chip Cookies are from Sol at the CF.
I only use 1.5 cups of sugar though.

Brown Sugar Chocolate Chip Cookies - Sol

2Â½ cups AP flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) unsalted butter, room temperature
2 cups light brown sugar, packed
2 large eggs
1 tablespoon vanilla extract
2 cups semisweet chocolate chips
Â½ cup chopped walnuts, optional

Whisk together the flour, baking soda and salt. In a mixer, cream the butter and sugar until light. Add the eggs, one at a time, beating well after each addition. Add vanilla. On low speed, add the flour mixture, and mix until barely blended. Add chocolate chips and nuts. Drop by tablespoons onto sheet pan and bake in a 350Â°F oven, for 12-15 minutes.

I make these into to logs, chill and slice to bake.

and these I used to make in the bread machine..But it broke so I make the dough in my Kitchen Aid...it needs more flour when done in the mixer so you can handle it.

Didn't do any baking but I will be making tons of candy for Easter. Peanut butter cups, Toasted coconut cluster cups, malted milk crunch cups, butter creme & coconut cups. chocolate covered pretzels & some solid easter bunnies... Oh I forgot - I will be trying some baking - Macaroon Bars that I want to dip in chocolate :-)
