scraping paint from cedar shakes

The paint on the south side of my house which is sided in cedar shakes is peeling and cracking terribly. A lot of it is peeling down to the bare wood. I have two questions--

1. What should I use to scrape the cedar that won't destroy the texture on the shakes?--I am aware of the possibility of lead as the house was built in 1958.

2. If I am able to scrape the entire side of the house, could I stain it instead of painting it?

Or--as I am putting an addition on the house and will be siding in new cedar shakes on the addition, should I just remove the old siding and redo with new as long as I'm at it on the new addition?
