Dehydrated Goodness - To Jerky And Beyond

I just switched off the dehydrator and am about to start on a beef jerky binge. Perhaps we could share some favorite jerky recipes? Or, more broadly, different things to do with a dehydrator?

To start us off, this is my beef jerky recipe. My only beef jerky recipe, but I'm hoping that this thread will yield many more.

- trim fat and slice flank steak thinly with the grain. Marinate overnight in a tangy-sweet-smoky brew of hoisin sauce, soy sauce, BBQ sauce, brown sugar, pepper, crushed garlic and ginger, and liquid smoke. Dehydrate for 16 hours or so. I leave the jerky still with a bare touch of softness - shelf life is months not years, but it never hangs around that long.

What are some other approaches that you like? How about dehydrating other meats, or maybe fish? Any dried fruit lovers? Make your own boullion? I'm looking for new things to do.
