I store it all in the freezer now. When I need some, I take it out of its Ziploc and run it over the microplane. I no longer need to store it fresh in the fridge. I wasn't aware that it would keep for long without refrigeration.

Like compumom - in a ziploc in the freezer. I microplane what I need - skin and all. It will dry out and grow yucky stuff without refrigeration.

Ok I just tossed the pantry root in the freezer. Where might you have acquired a microplane?

You can get one at Bed Bath and Beyond for about 12.95 or I've seen them at Wms Sonoma, Bloomingdales and HSN!
My first one (the finer/zester grater that's perfect for ginger)was a gift from my first swap here at the CF. Later I saw a link for a deal from HSN that included 3 types. I bought that too and gave the duplicate away. I use the fine and the ribbon graters all the time!

I couldn't find the HSN deal any longer but Googled and found lots of resources for you!

Freezer and microplane here, too.

I don't freeze it. I peel the root and store it in a jar of sherry in the fridge. When needed I cut off and grate or chop the amount required. It keeps indefinitely and the sherry is a great addition to stir-fry, etc.

I used to tdo the jar of sherry bit, now I freeze and microplane too.

BTW - if it sprouts, it makes a very attractive house plant! I had one for a couple of years until I forgot it outside and it froze.
