Chopped liver recipes -- for Jessyf

Hi, Jessy, and anyone else who feels that their cholesterol level is too low.

(Why do people who think they are being overlooked say, "What am I, chopped liver?" Who overlooks chopped liver?! We fight over it. It should be, "What am I, cold oatmeal?" or something.)

I don't make chopped liver with chicken livers. My family always uses "baby beef" liver when we can find it; calves' liver if we can't. It seems to have a deeper flavor -- is that what they call "umami"? But I certainly don't say no thanks when my friend Cindy makes her wonderful chopped liver with chicken livers. So I asked her for her recipe for you. Here is hers, followed by mine, which I got from my mother, Bubbie Rosalie, who learned it from her mother-in-law, Grandma Frieda, who was an incredible cook. Enjoy!

Cindy's chopped liver

1# chicken liver

1 med-lg onion

3 HB eggs

Broil liver and cool

Saute onions (sliced) until somewhat caramelized

Grind each ingredient in food processor. Combine all and add salt, pepper and schmaltz until desired consistency. About 1-2 Tb fat for one pound livers.

Bubbie Rosalie's chopped liver (can double this)

1 lb. baby beef/calves/beef liver, membranes removed

1 raw onion

SALT and pepper

3 large hard boiled eggs

1/2 c chicken bouillon or broth (more to taste)

4 T schmaltz (more to taste)

Broil liver JUST until lightly done (too well done will be dry)

Grind cooked liver with onion and egg. (I use the grinder attachment on the Kitchenaid mixer, not the food processor.) Add everything else and mix. Should be mushy. Refrigerate. Will firm up.

Bring to room temperature to serve with matzoh, challah, rye rounds, or crackers.
