Thanks Cindyb_va for your Green Goddess recipe

Well, I tried to resurrect this old thread which came up on google but had already fallen off the CF, but to no avail. Anyway, I did make the Green Goddess recipe you posted, FINALLY! It only took me nine months to get around to it!! LOL

It was delicious and definitely a keeper. I did end up substituting basil for tarragon as you suggested, and actually used two avocados because they were small.

This is a terrific dressing from Ellie Krieger

Green Goddess Dressing/Dip

1 ripe avocado, halved, pitted and peeled

2 scallions, coarsely chopped

1/4 C fresh tarragon

1/4 C fresh parsley

3 T white vinegar

3/4 C buttermilk

Salt

Just pop it all into a blender and whirl until smooth. The cookbook I have pairs this recipe with sliced heirloom tomatoes, but I have found it is pretty good on just about any type of salad greens. It is also very tasty as a dip with veggies.

Calories are 70 per 1/4C of dressing.
