The town definitely is called Stab. It was named Lincoln but the mail got mixed up with another Lincoln town in Kentucky. Sometime around the Civil War an ancestor changed the name to Stab. I'm guessing everybody there is related. The name of Stab is a puzzler, alright. I've looked in vain for a picture of the town. Pictures of caves turn up, and lists of every stabbing that ever occurred in Kentucky going back a long time. I could imagine somebody saying "This is just a little bitty stab of a place," or I could imagine something worse. My great great grandfather built a church there in 1868 and his house is still there, so they tell me. Pleasant Run Baptist Church. I think they were originally Quakers or Dutch Mennonites, though. They are serious about the Lord in that area. The roads are called Mize Cemetery Road and Miller Mize Road. The same year Silas and Mariah Mize built the church, his brother Freeman came to Montana. His granddaughter's house is a state park now down by Three Forks. Everywhere in history you can find these people, 30 miles down river from Daniel Boone in North Carolina and oddly following Merriwether Lewis to the Three Forks of the Missouri 50 years after he came. Unremarkable and unsung, they were there. All of Silas and Mariah's children followed Uncle Freeman to Montana, another oddity, but about that time they put in a grain mill in Somserset run by power. I'm guessing the family trade was over. Silas and Mariah came here but Mariah got sick and died. Silas went back to Kentucky where he lived up into his 90's. Somewhere in my Mom's photos there is a picture of a creek, which looks nothing like anything around here. I finally recognize it now, as someplace in the Sinking Valley. I learned what little I know by genealogy research and a little e-mail with a family member there. I don't know if I'm ever getting there but wouldn't mind a picture. My friend brought 4 bushels of wheat back from "Out West". The deal is I get 3 bushels free but I mill the fourth bushel for him. This is the first wheat I have milled with the second hand Retsel Mil-Master I had bought. It does an excellent job of milling the wheat. It comes out just as fine as store bought. The flour is slightly warm but not even close to being hot. It is really quiet too. I am making bread using half bread flour and half whole wheat. I want to make it with 100% whole wheat flour without adding vital glutton. Does anyone have a recipe like that for bread, pizza dough, pasta and others?

I have a Golden Grain Grinder that is 30+ years old...my dad gave it to me about 15 years ago. I really like it. It has 2 stones that grind the grains and you can adjust it from coarse to cake-flour fine. All of you that are grinding wheat, can you tell me what is the whitest wheat? We have several Amish and Mennonite communities near us and I have bought several wheat and flours from them, but they all have their own name for them. Some call it "naturally" white wheat...is that whole wheat, or just unbleached? Last week I bought 3 lbs of "hard spring white wheat" to grind, and it does seem to be whiter than a lot of wheats.

Thank-you, Momj41, for posting. It's interesting. But I think the classification she used was more ad hoc than demonstrative. It might have been better if she had reframed her experiment once she learned that "processed" was meaningless. It would be pretty easy to make a small amount of sugar. Press the cane juice and let it crystallize. I make maple sugar inadvertently all the time. :) And her inability to separate the wheat is just a matter of not having the right sieve. Mine mostly separates right in the mill and I stir it back together again. Old timey millers used to make white flour while oxen (or wind or water) turned the stones. Not wanting sugar and white flour is a choice. We all know the good reasons. But saying that it can't be done at home is putting blinders on.
