Pumpkin Cheesecake - kind of

I made DSS a pumpkin pie and was too lazy to make a crust, so I poured the filling in a pre-made frozen crust. There was too much filling to put in, but not quite enough for the second crust.

He had also mentioned pumpkin cheesecake, so I googled it to see if the pie filling was anything close to cheesecake. After looking at a couple of recipes I mixed another egg with 8 ounces of cream cheese, 1/3 cup sugar and a tablespoon of sour cream then stirred it into the pie filling. We didn't have any gram crackers or cookies for a crust so I just poured it into a greased casserole dish. Kind of a pumpkin cheesecake mousse. Then I baked it at 400 for about 40 minutes with the pie. (I misread the directions for the pie that said to turn it down after the first 15 minutes.) Normally I don't just "wing it" with deserts or baked goods, but it turned out pretty well. When I handed my husband a plate of it, he looked skeptical, but went back for a second, bigger piece.

We have two more cans of pumpkin so next week I may try the pumpkin sheet cake gldno1 posted yesterday.
