pot roast advice

Hi - I don't post often here but I usually surface in the fall or around Thanksgiving. I work a lot and in the summer we're busy at our weekend lake place where I cook and entertain - but like to keep it pretty simple. Then in the fall we no longer go there every weekend and then I'm in the mood to cook and try new things. Anyway, I want to make a pot roast in the dutch oven - since we're not big red meat eaters I've never made one. I've looked at some recipes - have the meat and root vegies I want to use - but now have a question.

I realized the one recipe I was looking at has A LOT of liquid - four cups of broth for a 2.5 lb roast. It's a brown the meat then cook in the oven - not stove top recipe. The recipe calls for a lot of vegies but still - that seems like a lot of liquid - especially for someone not fond of the idea of boiled meat.

What do you all do in terms of liquid in a pot roast?
